HEALTHY GREEK CHICKEN PASTA SALAD

Greek chicken pasta salad has fresh vegetables, chicken and pasta marinated in a Greek red wine vinaigrette with dill and feta cheese. Tangy, crunchy, cool and refreshing, it's perfect for a picnic, potluck or for meal prep.

2 lbs boneless skinless chicken breasts (roughly 4)
2 tablespoons olive oil
salt & pepper
8 oz penne (uncooked )
2 carrots (peeled and chopped)
2 bell peppers (chopped)
2 cups broccoli (cut into small florets)
2 cups cauliflower (cut into small florets)
1/2 red onion (chopped)
1 cup feta cheese (crumbled)
6 tablespoons olive oil
6 tablespoons red wine vinegar
3 tablespoons honey (or maple syrup)
1/2 teaspoon dijon mustard
2 teaspoons dill ((dry))
1 clove garlic (minced (optional))
salt & pepper (to taste)

Steps:

  • Heat oven to 425°F.
  • Toss chicken with olive oil and sprinkle with salt and pepper. Arrange on a baking sheet and bake for 10 minutes. Flip and bake for 10-15 more minutes, or until cooked through.
  • Allow chicken to cool before cutting into cubes.
  • Cook pasta according to package directions, then drain and rinse under cold water. Allow to cool.
  • Combine all salad ingredients in a large bowl.
  • Shake together the vinaigrette and toss everything to coat.
  • Allow to marinate for several hours before enjoying. Serve cold.
  • Portion out into 2 compartment containers and store in the fridge for up to 4 days.
  • Serve cold.

1 ½ cups uncooked orzo pasta
2 (6 ounce) cans marinated artichoke hearts
1 tomato, seeded and chopped
1 cucumber, seeded and chopped
1 red onion, chopped
1 cup crumbled feta cheese
1 (2 ounce) can black olives, drained
¼ cup chopped fresh parsley
1 tablespoon lemon juice
½ teaspoon dried oregano
½ teaspoon lemon pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Drain artichoke hearts, reserving liquid.
  • In large bowl combine pasta, artichoke hearts, tomato, cucumber, onion, feta, olives, parsley, lemon juice, oregano and lemon pepper. Toss and chill for 1 hour in refrigerator.
  • Just before serving, drizzle reserved artichoke marinade over salad.

1 lb. of uncooked chicken breasts
1 tablespoon olive oil
2 tablespoons red wine vinegar
1/2 teaspoon EACH: Italian seasoning, red pepper flakes, smoked sweet paprika, sea salt AND garlic powder
2 cups uncooked orzo pasta
2 persian cucumbers, quartered then thinly chopped
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1/4 cup kalamata olives, halved
1/2 cup crumbled feta (such as Nikos Mediterranean Feta)
1/2 cup olive oil
2 cloves garlic, minced
2 tablespoon lemon juice
2 tablespoon honey
2 teaspoon country dijon (coarse grain)
1/2 teaspoon dried oregano
5 basil leaves, chopped
sea salt + pepper

Steps:

  • to make the chicken: Combine all ingredients in a medium bowl or a ziplock. Toss to coat the chicken evenly. Let sit for 15 minutes while you prepare the pasta.Grill the chicken on an outdoor grill, George Foreman, or in a skillet. Let rest for 5 minutes before dicing.
  • To make the dressing: In a mason jar or 2 cup measuring cup, combine all ingredients. Use a whisk or cap the mason jar and give it a good shake until all ingredients are completely combined.
  • To make the salad: Prepare the pasta according to package directions. In a large bowl, combine all salad ingredients and using a rubber spatula, mix all ingredients together. Add the grilled chicken to the salad. When ready to serve, toss the salad with the dressing. Serve immediately.

3 tablespoons melted butter
2 teaspoons kosher salt
1 teaspoon cornstarch
2 sprigs fresh dill, chopped
2 lemons, zested and juiced
1 clove garlic, minced
2 cups orzo
2 teaspoons ground coriander
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
4 small to medium boneless, skinless chicken breasts
1 lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • For the orzo: Whisk together the stock, butter, salt, cornstarch, dill, lemon zest and juice and garlic in a bowl. Mix in the orzo.
  • For the chicken: In a separate bowl, mix together the coriander, salt and pepper. Coat the chicken all over with the seasoning.
  • Pour the stock/orzo mixture into a glass 9-by-13-inch baking dish. Add the chicken breasts, laying them at an angle so all but the tops of the breasts are submerged. Shingle the lemon slices in between the chicken breasts.
  • Bake, uncovered, until the chicken registers an internal temperature of 165 degrees F, 35 to 40 minutes. Let rest for 5 minutes. Top with the chopped parsley before serving.

2 cups orzo pasta, uncooked
1 chicken bouillon cube
water, to cook orzo pasta
2 tablespoons chopped cilantro
1/2 cup roasted red pepper, chopped
2 -3 ounces feta cheese
10 kalamata olives, pitted and chopped
1 dash kalamata brine (if you have it) (optional)
1/2 small red onion, finely sliced to create slivers
2 cups fresh spinach, loosely chopped
1/4 cup toasted pignoli nut
1 tablespoon fresh lemon juice
3 tablespoons light caesar salad dressing (such as Ken's)
1 chopped garlic clove
salt and pepper

Steps:

  • Add chicken bouillon to pasta water and bring to a boil.
  • Add orzo and cook for 7 minutes.
  • Strain and rinse with cold water to stop cooking and cool the pasta. Set aside.
  • In a medium/large bowl add the balance of the ingredients and stir well.
  • Add the strained orzo and stir again.
  • Chill in the refrigerator for at least 1 hour and serve. This helps the flavors meld together.

1 (16 ounce) box orzo pasta
1 lb boneless skinless chicken breast
2 large tomatoes, chunky dice
1 small red onion, small dice
1 (4 ounce) container crumbled feta cheese
2 -3 tablespoons red wine vinegar
2 -3 tablespoons olive oil
1 -2 garlic clove, minced super fine
salt and pepper
1/2 cup Italian parsley, chopped

Steps:

  • Cook chicken, I season with salt, pepper, and garlic powder. Let cool and dice into bite size chunks.
  • While chicken is cooking bring water to a boil and cook orzo. When time is up drain and rinse with cool water to cool it down. Let drain again, you don't want it to have too much water on it when you add it to the salad.
  • In a bowl add chopped tomatoes, diced onion, feta, garlic, vinegar, oil, parsley, salt and pepper, orzo, and chicken. Mix to combine.
  • Taste for seasoning.
  • When I make this I generally don't measure my ingredients, so it may need more vinegar and oil, I like mine tart and you don't want it dry and the pasta will soak up a lot of this! After you taste for seasoning refrigerate for at least an hour to let all the flavors come together.
  • Serve!

Steps:

  • For the chicken: In a medium bowl, whisk together the olive oil, salt, oregano, garlic powder, pepper and lemon juice. Add the chicken and toss to coat. Refrigerate for at least 30 minutes and up to 4 hours.
  • Preheat a grill or grill pan to medium high.

  • 1. In a large skillet, toss together the olive oil, chicken, oregano, paprika, and a pinch each of salt and pepper. Remove the chicken from the skillet. 2. To the skillet, add the bell peppers. Cook until soft, 2-3 minutes. Add the orzo and 2 1/2 cups water. Season with salt and pepper. You might still have some liquid by the end of the cooking time but it will get absorbed by the orzo in 10 minutes or so. Serve topped with feta cheese.
