This is the best pork chop marinade I've ever tasted. I starting throwing things together in a bowl and I'm so glad I wrote it down...try this! Flavor is best when pork is grilled.

2 large pork chops
¼ cup extra-virgin olive oil
3 tablespoons dark brown sugar
2 tablespoons lemon juice
2 tablespoons spicy brown mustard
4 cloves garlic, chopped
2 teaspoons dried thyme
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
1 teaspoon white wine vinegar
1 teaspoon mesquite-flavored seasoning
½ teaspoon dried parsley flakes
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book.
  • Whisk olive oil, brown sugar, lemon juice, mustard, garlic, thyme, onion powder, Worcestershire sauce, vinegar, mesquite seasoning, parsley, salt, and pepper together in a bowl and pour into a large resealable plastic bag. Add pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 6 to 8 hours.

Soy sauce ⅓ cup
Brown sugar 2 tbsp
Worcestershire sauce 2 tsp
Dijon mustard 1 tsp
Garlic 2 cloves
Black pepper ¼ tsp
Pork chops 4
Vegetable oil 1 tbsp

Steps:

  • In a ziplock bag, combine ⅓ cup light soy sauce, 2 tablespoons brown sugar, 2 teaspoons Worcestershire sauce, 1 teaspoon Dijon mustard, 2 minced garlic cloves, and ¼ teaspoon black pepper. Seal the bag and massage to combine.
  • Add in 4 pork chops and massage to coat well. Place in the fridge to marinate for 1 to 24 hours.
  • Remove the pork chops from the fridge 20 minutes before cooking.
  • Preheat a grill pan over medium-high heat. Lightly brush the pan with some olive oil. Add the pork chops and cook for 4 minutes or until caramelized and the pork releases from the pan easily, then turn the chops and cook for another 3 minutes.
  • Brush both sides with the remaining marinade and cook for 30 seconds more per side.
  • Transfer the grilled pork chops to a platter and cover them loosely with foil. Let rest for 3 minutes before serving.
  • Serve with a side of choice and enjoy!

2 pounds boneless pork chops
¼ cup balsamic vinegar
¼ cup low-sodium soy sauce
¼ cup olive oil
1 tablespoon worcestershire sauce
1 tablespoon dijon mustard
1 tablespoon honey
1 teaspoon Italian seasoning
¼ teaspoon black pepper

Steps:

  • In a small bowl, whisk together balsamic vinegar, low-sodium soy sauce, olive oil, Worcestershire sauce, dijon mustard, honey, Italian seasoning and black pepper.
  • Place the pork chops in a large zipper bag and pour the marinade over the pork chops.
  • Marinate for at least 1 hour, or up to 8 hours.
  • Remove the bag of marinating pork chops from the refrigerator. Let them come up to room temperature for 30 minutes before cooking the pork chops.
  • Preheat a grill over medium-high heat.
  • Use tongs to remove the pork chops from the marinade and place them on the grill.
  • Grill the pork chops for 5 minutes per side, per inch of thickness. For example, the two inch thick pork chops that you see pictured in this post were grilled for 10 minutes per side.
  • Remove the pork chops from the grill when the internal temperature reaches 140°F on an instant-read thermometer. The internal temperature will rise at least 5 degrees as the pork chops rest.
  • Rest the pork chops for 5-10 minutes before serving.
