1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

4 slices bacon
2 pounds fresh green beans, trimmed
½ cup finely chopped onion
½ cup brown sugar
¼ cup white vinegar
½ teaspoon salt
½ teaspoon dry mustard
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
  • Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.
  • Add green beans to the skillet with the sauce; toss to coat well. Chop cooked bacon and stir into the beans. Serve hot.

INGREDIENTS
1 1/2 tbls butter
3 tbls flour
1 1/2 cups milk
3-4 tsp dry ranch seasoning
1/4 to 1/2 tsp white pepper
1 cup chopped onion
2 cloves garlic, minced
1 1/2 cups sliced fresh mushrooms
1 1/4 lbs fresh green beans, cooked until crisp-tender
1-2 cup french's french fried onions

Steps:

  • 1 To make sauce, melt butter in small saucepan over low heat. Stir in flour, cook 1-2 minutes, stirring constantly. Using a wire whisk, stir in milk a little bit at a time. Bring to a boil. Cook, whisking constanly, 1-2 minutes until thickened. Stir in ranch and white pepper; set aside. 2 Preheat oven to 350 degrees. Grease a skillet and heat over medium high heat. Add onion and garlic, cook and stir until tender, about 3 minutes. Remove half and set aside. 3 Add mushrooms to skillet with onions and cook about 5 minutes. Combine mushroom mixture, green beans, and sauce in a casserole dish. Combine fried onions with reserved onion mixture and sprinkle over casserole dish. Bake uncovered 20-30 minutes.

1/2 cup yellow onion (chopped)
4 (14 1/2 ounce) cans green beans (any brand)
1/2 chicken bouillon cube
1/2 cup water

Steps:

  • Fry bacon til' it's crisp, on the stovetop. Add onion, cook until tender.
  • Drain "all" liquid off of canned green beans.
  • Add beans to bacon and onion mixture.
  • Add bullion cube and water.
  • Cook very slowly until beans "shrivel".
  • Sometimes, ok well maybe always I have this compulsive need to add things to whatever I am cooking, and 98% of the time you can beat it's gonna be GARLIC or SPICES. Soo- there ya' go. Add in some garlic if you dare, or maybe some seasoning salt? :) But whatever you do- ENJOY!

No oven needed here; a big plus. Using an electric skillet frees up your stove top as well. Fresh is always best, but beans of quality may be hard to find this time of year. Canned or frozen instead will make a good dish. The optional use of yellow wax beans is an eye-pleaser and provides an interesting taste variation. Bump up a like amount of green beans if yellow beans are not used.
