HONEY COOKIES FROM THE OLD COUNTRY- GRANDMA'S



Honey Cookies From The Old Country- Grandma's image

Originally from Ireland and Wales where Grandma's old country relatives lived. This recipe is for some simple but good cookies that Grandma could make without a written recipe. Mom translated the recipe into a written form and I am so grateful for this old wonderful treasure. If making these for company Grandma would drizzle a little powdered sugar icing on these. it makes them pretty but the cookies are good either way. When I was growing up we just called these Honey Cookies. But knowing where they came from and how many of our ancestors enjoyed them just makes them so much better.

1 cup(s) sugar
1 cup(s) shortening (original recipe used lard)
1 cup(s) honey
2 large eggs
1 teaspoon(s) vanilla extract
1 teaspoon(s) baking soda
1 teaspoon(s) ground ginger
1/2 teaspoon(s) cinnamon, ground
4 cup(s) all purpose flour

Steps:

  • Preheat oven to 350 degrees. In a saucepan over low heat, melt together sugar, shortening and honey. Let cool. Mix together eggs, vanilla, baking soda, ginger, and cinnamon. Gradually add to cooled honey mixture.
  • Slowly stir 4 cups of flour into mixture. Stir until well blended. Drop by teaspoonfuls onto greased cookie sheets about 2 inches apart. Bake at 350 degrees until golden brown. his takes about 12-15 minutes.
  • NOTE: Sometimes Grandma woukld drizzle a little thinned powdered sugar icing on these, especially if they were for company. It makes them pretty but they are good either way, plain or iced.

This recipe was on a card tucked into my mom's recipe box; it's pretty similar to a number of variations that seem to be from the 1930s. A note said "flavor with whatever you like" and of all the flavors I played around with, I thought lemon zest balanced the sweet dough the best. These bake up into tender little cakes that make a great base for whoopie pies. Once baked, they freeze well (thaw for an hour or so on the counter to eat), but start losing their tenderness after more than one day at room temperature.

1 ⅓ cups white sugar
¼ cup shortening
¼ cup unsalted butter, at room temperature
1 cup full-fat sour cream
1 large lemon, zested
2 large eggs
3 ¼ cups all-purpose flour
¾ teaspoon salt
½ teaspoon baking soda
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line two rimmed baking sheets with parchment paper.
  • Cream sugar, shortening, and butter together in the bowl of a stand mixer on medium-high speed until light and fluffy, about 1 minute.
  • Mix in sour cream and lemon zest on low speed until no streaks of sour cream remain. Add eggs, one at a time, mixing on medium-low just until there are no streaks of yolk, and scraping down the sides of the bowl between additions. Add flour, salt, baking soda, and baking powder all at once and mix just to combine.
  • Drop by heaping tablespoons on the prepared baking sheets, about 2 inches apart.
  • Bake in the preheated oven until the tops are puffy and spring back when lightly touched with a finger, about 10 minutes. They should be light golden, with occasional spots of pale golden brown.

Number Of Ingredients 8

1 cup shortening
2 eggs
2 1/4 cups flour
1 teaspoon almond extract (your choice) or 1 teaspoon vanilla extract (your choice)
1/2 cup honey
1/2 cup sugar
1/2 cup nuts (optional)
1/2 teaspoon baking soda

Steps:

  • Cream shortening, sugar, and eggs.
  • Add honey and extract, mix well.
  • Add baking soda and one third of the flour.
  • Mix well then add another third of flour and mix well.
  • Add last third of flour and mix well.
  • Add the nuts and mix.
  • Grease cookie sheet and bake for 8-10 minutes in a preheated 350 degree oven.
  • Cool slightly before removing cookies from cookie sheet. ENJOY!

2 cups white sugar
2 cups butter, softened
3 cups all-purpose flour
1 cup coconut flakes
1 teaspoon vanilla extract
1 teaspoon salt
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy. Mix flour, coconut flakes, vanilla extract, salt, and baking soda into creamed butter mixture until dough is smooth. Spoon dough onto a baking sheet.
  • Bake in the preheated oven until edges of cookies are lightly browned, about 10 minutes.

These cookies are the best cookies I have ever made. (That is saying a lot because I bake all the time!) Everyone we serve these to loves them and requests the recipe. My mother created this recipe using the orginal Nieman Marcus cookie recipe. We have added tons of different ingredients but here are the ones we use the most.

1 1/2 cups honey
2 cups brown sugar
1 cup butter (for the lower fat version) or 1 1/2 cups applesauce (for the lower fat version)
1 cup shortening
1 cup peanut butter
4 large eggs
2 teaspoons vanilla
1 cup whole wheat flour
3 cups flour
1 tablespoon baking soda
1 tablespoon baking powder
24 ounces chocolate chips (optional)
2 cups of chopped nuts (optional)
1 cup raisins (optional)
1/2 cup of dried unsweetened coconut (you can add whatever you want) (optional)
6 -10 cups oatmeal (depends on how much you like oatmeal)

Steps:

  • Drop spoonfulls onto a greased cookie sheet then flatten with back of spoon or hand.
  • These cookies do not spread much during baking.
  • Bake in oven at 350° for 10-15 minutes depending on the size of the cookie. (I usually bake 12 minutes).
  • Let the cookies cool before moving off cookie sheet.

1/2 cup shortening
1 1/4 cups sugar
2 large eggs
6 tablespoons molasses
1 3/4 cups flour, sifted
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon salt
2 cups rolled oats
1 cup raisins

Steps:

  • Preheat the oven to 400°F.
  • First, mix the following together thoroughly in a blender: shortening, eggs, sugar and molasses.
  • ** I find its easier to measure the molasses when hot, so I stick the bottle in the microwave for a few seconds, and heat up my metal measuring spoon on the stove (careful).
  • Second, in a separate bowl, sift together the following: flour, soda, salt and cinnammon.
  • After these are sifted, slowly add them to the mixer with the ingredients from the first step.
  • Mix until fairly smooth, no lumps.
  • Fold in the oats and raisins.
  • This is pretty tough on the mixer, so unless you have a good one, you may want to do this by hand.
  • To bake, drop rounded teaspoonfuls (or whatever size cookies you want) on a lightly greased baking sheet, approx 2" apart.
  • I like to press the center of the cookie down a bit, so it cooks evenly.
  • Cook for approximately 8 minutes.
  • Notes: The cookies should be very soft, and even look un-cooked when you take them out of the oven.
  • -Don't worry, let them cool, and you'll be rewarded with an amazing, chewy, tasty cookie.
  • -Of course, if you prefer hard cookies, cook approx 2 minutes longer, but I recommend the chewy version.
