GRANDMA'S YEAST ROLLS
I have adapted these yeast rolls from my grandmother's yeast bread recipe. I have increased the sugar to create a little sweeter roll than Grandma used to make and replaced her refrigerated cake yeast with dried (easier availability). They are delicious served with Danish Lurpak® butter (it's a little tangy, just like Grandma's)! Rolls can be made the night before and reheated, covered in foil, at 300 degrees F for about ten minutes.

Steps:
- Dissolve 1 tablespoon of sugar into the water in a small bowl. Sprinkle the yeast over the water; let stand 5 minutes until the yeast softens and begins to form a creamy foam. Meanwhile, whisk the flour, the remaining sugar, and salt together in a bowl. Once the yeast has foamed, stir the melted lard into the yeast, then stir the yeast mixture into the flour until a sticky dough forms.
- Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 10 minutes. You may need to add additional flour to keep the dough from sticking. Once elastic, cover the dough with the mixing bowl, and allow to rest for 15 minutes. Grease a 9x13-inch baking dish with lard.
- Cut the dough into three equal sections, then cut each section into 8 pieces. Form into balls and place into the prepared baking dish in 6 rows of 4. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.
- Preheat an oven to 325 degrees F (165 degrees C).
- Bake in the preheated oven until the tops of the rolls are golden brown and the bottoms sound hollow when tapped, about 1 hour. Allow to cool at least 10 minutes before eating.

GRANDMA'S DINNER ROLLS RECIPE
My Grandma's Dinner Rolls Recipe is practically fool-proof. It is the perfect dinner roll recipe for all your holiday meals.

- Place milk in a microwave-safe glass measuring cup. Microwave for 4 minutes. Place in refrigerator and allow to cool to between 105 - 110 degrees F.
- Melt butter and set aside to cool.
- In the bowl of a stand mixer fitted with the dough hook, combine the 6 cups of flour and salt.
- Remove the milk from the refrigerator and whisk in the yeast and sugar. Allow to rest for 5 minutes.
- Beat the 2 eggs into the melted butter. Add the yeast, sugar and milk mixture to the flour and salt and knead on low speed until dough begins to come together. Stop mixer and add the eggs and melted butter. Knead the dough, scraping down the sides of the bowl if necessary, for 6 minutes.
- Remove the dough hook and bowl from the stand mixer. Cover the dough ball in the bowl loosely with a towel.
- Place the dough bowl in a warm spot and allow to rise for about 60 minutes or until dough is doubled in size.
- Gently push down on the dough to deflate. Place on clean counter and evenly divide dough into 8 log-shaped pieces, using a bench scraper or sharp knife.
- Cut each of the eight dough logs into four equal pieces, giving you 32 rolls. Gently cup each roll in your hand to "plump" them up a bit in the center.
- Place the rolls in well-greased baking dishes, spaced about 1/2-inch apart. Place dishes in a warm spot and cover loosely with a towel. Allow rolls to rise in baking dishes for 60 minutes more.
- Bake at 375 degrees for 14 - 18 minutes. Watch closely in the last few minutes to make sure tops don't over brown.
- Brush the tops of the rolls with melted butter when they come out of the oven. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.

GREAT GRANDMA'S APPLE ROLLS
This is an old time favorite. Grandma made them in the fall and they are so good on a crisp cold autumn morning. Since they are a type of biscuit dough they can be made fairly quickly and they are orth the effort.

- 1. Mix flour, baking powder and salt. Cut in butter to flour mixture. Add milk and stir until moist. On a lightly floured surface, roll dough until 1/4 inch think and about and 18" by 12" rectangle. Spread with 2 T. soft butter. Mix sugar and apples and spread on top of the buttered dough. Roll up as a you would a jelly roll and cut into 9 pieces (use a sharp wet knife). Place in a baking dish and freeze. Mix the sauce ingredients and bring to boil. Boil 1 minute.
- 2. Bake rolls at 350 degrees for 35-45 minutes. When rolls start to brown, remove from oven and pour syrup over the rolls, return to over to finish baking.
GRANDMA'S CINNAMON ROLLS
These rolls stay very moist due to the sour cream. It is also a good way to use up that last cup of sour cream.

- Mix sugar and water together.
- Sprinkle with yeast.
- Let stand 10-15 minutes or until dissolved.
- Add flour, salt, sour cream, vanilla, and 3 tablespoons sugar.
- Make into soft dough.
- Roll out on floured surface, to within 3/8 to 1/2 inch thick.
- Brush dough with melted butter.
- Sprinkle with cinnamon and sugar (that has been stirred together).

- Let rise until doubled.
- Bake 350 degrees until lightly browned.
- Ice while warm with 3 tablespoons evaporated milk, 1/4 tsp vanilla, 1 c icing sugar, that has been stirred together well.

DEEP DISH APPLE PIE
It is hard to beat a good apple pie. There is something so simple but so good about a great pie. That apple cinnamon filling is a classic for good reason. Now you can bake right from my great-grandmother's recipe to make the best possible pie.

- Preheat oven to 400°F and fit a pie crust into a 9" deep dish pie plate. Chill crust until ready to fill.
- In small bowl, mix together sugar, cinnamon, flour and salt. Set aside.
- Toss apple slices in orange juice.
- Add dry ingredients and stir to coat.
- Spoon into bottom pie crust. Top with top crust, crimping the edges to seal. Cut vent holes.
- Cover crimped edges of pie crust with a pie shield or aluminum foil. Place on a sheet pan to catch any drips.
- Bake for 30 minutes, then remove pie shield. Bake for an additional 20-25 minutes. The crust should be golden and the filling should be bubbling.
- Cool completely before slicing and serving.

GRANDMA'S SECRET APPLE PIE (FRUIT PIE ROUND)
Steps:
- Crust Preparation: Preheat oven to 400 degrees F.
- Combine all the dry ingredients in a large mixing bowl. Add shortening and butter. Using a pastry blender, cut in the shortening and butter until the mixture resembles course meal. Drop by drop, add the cold water. Mix in with the fingertips, not hands, as the palms will warm the dough. Continue mixing water in until the dough begins to hold together without being sticky but not crumbly. Divide dough into 2 pieces and place 1 piece of dough in plastic warp. Press down to form a disk. This will make rolling out easier after chilling. Lightly spray a deep 9-inch pie pan with cooking spray. Roll out second piece of dough and place in pie plate, allowing the excess pastry to hang over the edge. Lightly brush sides and bottom of crust with egg wash. Chill in refrigerator for 10 minutes before filling. Makes pastry for 9-inch double-crust pie.
- Preheat oven to 425 degrees F.
- Filling Preparation: Peel, quarter, and core apples; cut into 1/4-inch slices (should have 6 cups). Toss with the lemon juice in a bowl. In a separate bowl combine sugars, flour, cinnamon, nutmeg, and allspice, pour over the apples and toss to coat. Whisk together egg and bourbon. Fold into apple mixture. Spoon apple filling into the chilled pastry shell; cut butter into very small pieces and sprinkle over the apples. Roll out remaining pastry. Cut slits in pastry to allow steam to escape. Lightly brush egg wash around edge of pie. Cover pie and trim overhang. Turn edges under flush with the rim; crimp all around to make a stand-up edge. Bake pie at 425 degrees F for 40 minutes, or until top is golden brown and juices are bubbling up. Remove from oven and sprinkle with vanilla sugar, if desired. Cool on wire rack.
GRANDMA'S APPLE DUMPLINGS
My grandmother is famous for this recipe which has been a family favorite for generations. She will only make it during the fall, but I have a hard time sticking to the seasonal stipulation because they are so darn good! Grandma swears that Jonathan apples are the only decent apples to use in this recipe, but any other tart apple would work just as well. Enjoy!

- Creating the pie dough:.
- Blend flour, salt, and shortening together using a pastry cutter until the mixture is about the texture of corn meal.
- Add 1/2 cup of ice cold water and mix the dough (I find using my hands for this is easiest). If dough is too dry, add a bit more water but sparingly.
- Roll dough out on a lightly floured surface to 1/8 inch thickness. Cut into eight squares.
- Filling the dumplings:.
- Place one apple on a square of pie dough. Fill the apple with sugar, sprinkle with cinnamon, and dot with butter.
- Bring corners of pie dough to top of apple and pinch shut.
- Place finished dumplings in a 9x13 greased pan.
- Syrup:.
- Bring to boil sugar, water, and butter in a sauce pan. Boil for two minutes.
- Pour syrup mixture around the dumplings.
- Bake at 400 degrees for 40 minutes or until golden brown. Baste the dumplings with the syrup from the pan every 5 to 7 minutes.

- Put the apple in a food processor and process until chopped into tiny bits.
- In a mixing bowl, stir together almond flour, coconut sugar, cinnamon, nutmeg, and sea salt.
- Add apple bits, coconut oil, and vanilla extract. Stir until a dough forms. Add a bit more almond flour if the dough is too wet.
- Use your hands to roll the dough into about 10 balls.
