GREAT GRANDMA NORTHRUP'S BROWN BREAD OR GRAHAM GEMS
from my great grandmother on my mother's side. I have tried this and found it very good. You can substitute whole wheat flour for the graham flour if you can't find it. The texture will be a little different but it should still be good.

GRANDMA'S BROWN BREAD (GRAHAM BREAD)
A very old-fashioned basic quick bread using graham (or whole wheat) flour. My Grandma made it at all holidays... hence the name. She was born in the mid 1880's and probably learned the recipe from her own mother. I had to write it down by standing at her elbow as she made it! Since there is no shortening in this recipe... I recommend whole milk... but skim also works. Make sure to use baking soda... NOT baking powder. Bread is moist, dense, and flavorful.

Steps:
- Preheat oven to 300 degrees F.
- Grease medium sized loaf pan.
- Mix dry ingredients together.
- Add wet ingredients to dry.
- Fold in nuts if desired.
- Batter will be thick.
- Bake in very slow 300 degree oven for about 55-60 minutes. Test near center with wooden skewer.
- Serve warm or room temperature with butter or your favorite spread. Or alone with a cuppa tea!

GRANDMA RUSSELL'S BREAD

- In a large bowl, combine yeast, warm water and 1 teaspoon sugar. In a saucepan, heat milk, butter, salt and remaining sugar until butter is melted. Remove from heat; stir in potatoes until smooth. Cool to lukewarm; add eggs and mix well., Beat potato mixture and 5 cups flour into yeast mixture until smooth. Stir in enough remaining flour to make a soft dough. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch down dough and divide in half. On a lightly floured surface, roll each half into a 16x8-in. rectangle. Brush with melted butter. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 8x4-in. loaf pans. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°. Bake loaves until golden brown, about 20 minutes. Cover loosely with foil if tops brown too quickly. Remove from pans to wire racks; serve warm.

GREAT-GRANDMA'S HEALTH BREAD
This is a recipe from my great-grandma with simple ingredients. This bread is moist, healthy, and delicious. You can easily cut back on the sugar and switch out ingredients depending on taste or dietary restrictions. I love to use dried cranberries instead of raisins, reducing the sugar by several tablespoons when I do.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch loaf pan.
- Bring raisins and water to a boil in a small saucepan, reduce heat to medium, and boil 5 minutes; set aside to cool.
- Mix rolled oats, bran cereal, whole wheat flour, sugar, and salt in a bowl. Mix milk with lemon juice in a small bowl and let stand 1 or 2 minutes to sour. Stir baking soda into sour milk until dissolved. Pour milk mixture into dry ingredients; beat egg into the mixture. Stir raisins and their liquid into the batter. Pour batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted into the middle comes out clean, about 1 hour. Cool in pan for 15 minutes before removing to finish cooling on a wire rack.

GRAHAM CRACKER BROWN BREAD
A delicious way to use up leftover graham cracker crumbs. I like cooking this bread in a round loaf pan or coffee can similar to old-fashioned brown bread, but it can also be cooked in a small loaf pan (8x4-inch). This is a dense, not too-sweet bread that is great served with hot dogs and beans. Recipe adapted from Cooking Light (March 2003).

- Preheat oven to 350°F.
- Coat a round loaf pan or coffee can with cooking spray and dust with 4 teaspoons graham cracker crumbs.
- Alternately use 8x4-inch loaf pan.
- Combine dry ingredients (flour-salt) in large bowl.
- Cream butter or margarine in large bowl at medium speed until smooth.
- Gradually add 1 cup graham cracker crumbs, beat until combined (2 minutes).
- Add egg and beat 1 more minute.
- Add molasses and beat until combined.
- Beating at low speed, add flour mixture and buttermilk alternately to batter, beginning and ending with flour until blended.
- Stir in raisins.
- Pour into prepared pan.
- Bake for one hour or until toothpick comes out clean.

GRANDMA'S BROWN NUT BREAD
This is an old wartime recipe given to me by my husband's grandmother over 30 years ago. Notice that it uses no eggs or added fat. It is a family favorite on holidays and for a healthy breakfast spread with low-fat cream cheese. I use a variety of pan sizes, varying the baking times and testing with an instant read thermometer for doneness (190-205 degrees).

Steps:
- Sift together the white flour, baking powder, salt, and baking soda.
- Into a mixing bowl put the whole wheat flour, raisins, nuts and the white flour mixture.
- Mix well.
- In a separate container, add milk to molasses and stir.
- Add to dry ingredients and stir until smooth.
- Pour into greased bread pans, about 9 x 5 inches.
- Bake in a preheated 350 degree oven for 45 to 50 minutes.

GRANDMA'S AMISH BREAD
This bread is from my Amish Grandma's recipe collection. My favorite times with Grandma were always centered around the kitchen and this was one of my favorites to make with her. I've updated it slightly, since Grandma didn't have electricity to work with, but it still tastes (almost) the same. This is still a family favorite at holiday gatherings and with Easter coming up it'll be a hit!

Steps:
- In a large bowl combine 2 cups of the flour with the yeast.
- In a small sauce pan heat milk, sugar, butter and salt to 120-130 degrees F.
- Slowly add the milk mixture to the flour mixture beating well.
- Add the eggs and beat well.
- Slowly add the remaining flour 1/2 cup at a time until dough is moderately stiff.
- Knead dough until smooth and elastic using stand mixer with dough hook at medium speed for 2 to 3 minutes or 6 to 8 minutes by hand on a lightly floured board.
- Place dough into a lightly oiled bowl, turning once to coat.
- Cover bowl with a warm cloth that is slightly damp.
- Let rise 30 to 45 minutes or until double in size.
- Punch down and divide in half.
- Cover portions with the cloth and let rest 10 minutes.
- Shape dough into 2 loaves and put into greased loaf pans.
- Let rise again until double.
- Bake in a pre-heated oven at 375 degrees F 25 to 30 minutes.
- Remove from pans and cool completely on a wire rack.
- When completely cool wrap and store in a cool, dry place.
