Gravy-stuffed Duchesse Potatoes Recipe by Tasty image

Here's what you need: gravy, russet potato, butter, sour cream, egg yolks, salt, pepper, nutmeg, egg wash

Provided by Matthew Johnson

Categories     Sides

Yield 10 servings

Number Of Ingredients 9

2 cups gravy
3 lb russet potato, cubed
½ cup butter, soft
½ cup sour cream
4 egg yolks, beaten
salt, to taste
pepper, to taste
½ teaspoon nutmeg
egg wash

Steps:

  • Pour gravy into an ice cube tray and freeze until the cubes are solid and can be removed easily.
  • Place the potatoes into a pot with cold, salted water and bring to a boil and cook until the potatoes are fork-tender.
  • Drain the potatoes until completely dry.
  • While still hot, mash the potatoes with a potato masher, fork, potato ricer, or food mill. If the potatoes get too cold, reheat them in the oven or microwave until hot and dry again.
  • To the mashed potatoes, add the sour cream, butter, egg yolks, salt, pepper, and nutmeg. Fold the mixture together with a spatula until just incorporated, making sure not to overmix.
  • Transfer the mixture to a piping bag or a zip-top bag with a star tip.
  • Pipe a disc of the mashed potatoes on a parchment paper-lined sheet tray.
  • Place an ice cube of frozen gravy in the center, and pipe more mashed potatoes around the gravy cube,
  • Freeze until the potatoes are firm.
  • Preheat oven to 425°F (220°C).
  • Brush with egg wash until completely coated.
  • Bake for 30 minutes, or until the potatoes are heated all the way through and golden brown.
  • Serve while still hot.
  • Enjoy!

Loaded Turkey and Gravy Stuffed Potatoes image

Another creative way to use up leftovers! All the flavors of America's favorite eating holiday in a twice-baked potato. Serve with a green salad and you have a meal!

Provided by Julie Hubert

Categories     Meat and Poultry Recipes     Turkey

Time 1h35m

Yield 4

Number Of Ingredients 11

4 large baking potatoes
1 tablespoon canola oil
½ cup butter, melted
½ cup leftover gravy
½ cup cream cheese
½ teaspoon sea salt
½ teaspoon ground black pepper
1 cup chopped cooked turkey
1 cup chopped leftover stuffing
2 green onions, thinly sliced
1 ¼ cups shredded Cheddar cheese, divided

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place potatoes on a baking sheet; rub with canola oil.
  • Bake in the preheated oven until easily pierced with a knife, about 1 hour. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Cut potatoes in half lengthwise. Scrape flesh into the bowl of a stand mixer, being careful not to tear the skin. Leave a small rim of flesh in the skin intact. Place hollowed-out potato skins back on the baking sheet.
  • Beat butter, gravy, cream cheese, salt, and pepper into the potato flesh on low speed. Add 1 cup Cheddar cheese; mix for a few seconds. Remove bowl from the stand mixer; fold in turkey, stuffing, and green onions using a spatula.
  • Fill potato skins with the mixture. Sprinkle remaining 1/4 cup Cheddar cheese on top.
  • Return to the oven; bake until warmed through, about 15 minutes.

DUCHESS POTATOES

Duchess potatoes image

Impress dinner guests with a serving of Duchess potatoes. Made with eggs, butter and cheese and piped into swirls, they make an indulgent side dish

Provided by Katie Hiscock

Categories     Side dish

Time 1h

Yield Makes 20 (serves 4-5)

Number Of Ingredients 6

500g floury potatoes, chopped
1 large egg, separated
30g soft butter
30g parmesan ,finely grated
grating of nutmeg
vegetable oil, for the tray

Steps:

  • Cook the potatoes in a pan of boiling salted water for 15 mins until really tender when pressed into the side of the pan. Drain well and leave to steam-dry in the pan for 2 mins. Mash the potatoes until very smooth - use a ricer if you have one, or use a masher, then press the potatoes through a metal sieve to ensure they're completely lump-free.
  • Mix the egg yolk, butter and cheese in a large bowl, then add the mash, nutmeg and some seasoning. Mix well with a spatula until the butter has melted and is well incorporated. It will come away from the sides of the bowl, similar to choux pastry.
  • Heat the oven to 220C/200C fan/gas 7. Spoon the mash into a piping bag with a wide star nozzle. Line a baking sheet with baking parchment and brush over a little vegetable oil. Pipe 20 walnut-sized peaked mounds onto the prepared tray, as if you were icing a cupcake. Beat the egg white with a pinch of salt and brush the potato mounds gently, to keep the fluting.
  • Bake the potatoes for 15-20 mins until golden-brown and crisp.
