GRAPE AND CANDIED WALNUT SALAD
Sweet grapes, candied walnuts, crisp greens, and nutty cheese are combined to make one of our favorite salads.

- TO MAKE THE SALAD:
- Combine the greens, grapes, walnuts, and cheese in a large bowl. Drizzle lightly with dressing, and toss to combine. Serve immediately.
- TO MAKE CANDIED WALNUTS:
- In a heavy bottomed saucepan (not a non-stick variety), heat the water and sugar to boiling. When the sugar dissolves and the syrup reaches a boil, add the walnuts. Stir to coat and continue cooking over high heat until syrup is dissolved into a light brown liquid and coats the walnuts.
- Once the syrup is dissolved, pour out the candied nuts onto a silicone mat or parchment lined baking sheet. Work quickly to separate the nuts, using a couple of forks. They will be VERY hot. (Try not to burn your fingertips!) Let them cool completely before storing. Enjoy!

Perfect for special occasions, but simple enough to make every night. Has a lovely citrus basil vinaigrette that goes well with this salad as well as others. Taste's just like the salad they serve at Dewey's Pizza in Cincinnati, Ohio.

- Place baby romaine leaves in a salad bowl and top with sliced grapes, candied nuts and crumbled gorgonzola (if making your own candied nuts do this step first so they have a moment to cool).
- Whisk together orange juice, lemon juice, olive oil, balsamic vinegar, brown sugar, garlic, basil, dijon mustard, salt and pepper in a small bowl.
- Serve dressing with salad.

- 1. To prepare walnuts: Line a small baking pan with parchment paper or foil; coat with cooking spray. Preheat oven to 400 degrees.
- 2. Toss walnuts in a bowl with water. Sprinkle with brown sugar and salt; toss to coat well. Transfer to the prepared pan. Bake until the sugar is melted and the nuts are barely starting to brown, 6 to 8 minutes. Cool in the pan until the sugar hardens, about 6 minutes.
- 3. To prepare salad: Combine the sour cream, cream cheese, honey and vanilla in a food processor and puree until smooth and creamy. Transfer to a large bowl. Add grapes and stir gently to combine.
- 4. Transfer to a serving dish and crumble the candied walnuts on top just before serving.
- 5. NOTE: You may store the candied walnuts at room temperature for up to 8 hours. You may store the salad in the refrigerator, covered, for up to 8 hours. Top with the walnuts just before serving.
RED LEAF SALAD WITH CANDIED WALNUTS AND GRAPES
There is something about the combination of candied walnuts with fresh grapes that I find addictive. The most unusual aspect of this salad? The dressing. I take some walnut oil and combine it with olive oil, lemon juice and crushed walnuts for a dressing rich in flavors and texture. This is a flavorful, but light side dish that brings the richness of nuts together with sweet and citrusy flavors in the dressing.

- Candy the walnuts: Line a cookie sheet with parchment paper; set aside. In a medium skillet, simmer the sugar, cayenne pepper and 6 tablespoons of water over medium high heat until it turns a golden brown color, about 15-20 minutes. Stir 1/2 cup walnuts into the caramel using a wooden spoon. Be careful, the sugar is hot! Spoon the nuts onto the parchment after they have been glazed and season with salt. Cool and then pull the nuts apart into smaller pieces.
- Prepare the dressing: Place 1/2 cup walnuts in the bowl of a small food processor and pulse a few times. Add the lemon juice, walnut oil, olive oil, a pinch of salt and some black pepper. "Pulse" a couple of times to blend. The walnuts really amplify the flavors in this dressing and give it added body. Taste for seasoning.
- Toss the salad: Toss the dressing with the grapes and lettuces. Top with the candied walnuts and Parmesan cheese.
- * Note: Drying lettuce is important otherwise salad tastes watery.

WHIPPED BRIE SALAD WITH DATES & CANDIED WALNUTS

- Heat oven to 190C/170C fan/gas 5. To make the candied walnuts, shake the walnut halves in 2 tbsp water, then toss in the sugar. Scatter over a baking sheet and bake in the oven for 6-8 mins until golden brown. Remove from the oven and allow to cool.
- Carefully peel the rind off the brie and discard. Put the gooey inside in a medium-sized bowl. Using a spoon or small whisk, whip the brie until pale and spoonable. To make the dressing, whisk the oil and vinegar together, then season.
- In a large bowl, combine the walnuts, dates and rocket, then mix with some of the dressing. Place a spoonful of whipped brie in the middle of each serving plate and arrange the salad around it. Scatter over the croutons, drizzle with a little extra dressing and serve.

- For best results, use a mixer to mix cream cheese, sour cream, vanilla extract, and sugar. You can mix by hand, too, but it won't be as smooth.
- Fold grapes into creamy mixture.
- In medium saucepan, melt butter. Add walnuts to lightly brown to taste.
- Remove from heat and stir in brown sugar. Sprinkle topping over grapes.
