MAKE AHEAD EASY VEGETABLE EGG BAKE BREAKFAST CASSEROLE
An easy make-ahead breakfast casserole perfect for entertaining, serving groups, on holiday mornings, or for brunch. Packed with vegetables, this is always a favorite every time I serve it. Filled with favorite seasonal vegetables, high protein eggs, and a punch of savory bacon.

Steps:
- In a large bowl, whisk together eggs and milk; stir in garlic, basil, salt, pepper (1/2 tsp each). crushed red pepper flakes, shredded cheese and 1/4 cup Parmesan.
- Spray the bottom of a 13 x 9 inch baking pan with cooking spray. Add the spinach, zucchini, cherry tomatoes, bell pepper, and bacon to the baking pan; spread evenly. Pour egg mixture on top, gently stirring mixture to distribute. Cover and refrigerate about 8 hours or overnight.
- Preheat oven to 350 degrees.
- Uncover the refrigerated casserole and sprinkle remaining 1/4 cup Parmesan cheese over the top. Bake 35 to 40 minutes or until just set and a knife inserted near center comes out clean. Let stand 10 minutes before serving. Sprinkle with fresh parsley.
- This breakfast casserole can be assembled and baked the same day. Adjust the bake time to 30 to 35 minutes and check for doneness.

HASH BROWN AND EGG CASSEROLE
This is my family's recipe that has been handed down through the years. We've always used the maple flavored pork sausage but any kind is good. This casserole is a nice and cozy breakfast or brunch meal that everyone will enjoy. It's got the perfect taste with lots of cheese. Yum! Be sure to use a baking dish that is deep enough to cover with aluminum foil.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.
- Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil.
- Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

- Grease a 13x9-inch baking pan; place bread in the bottom and sprinkle with sausage and cheese.

- Prepare 9" quiche dish or pie plate by spraying with non-stick cooking spray.
- Layer the onions, ham, and tomatoes into pie pan.
- Mix together the eggs, milk, oregano, and Bisquick.

- May be refrigerated overnight at this point.
- Bake at 350F degrees for 45 minutes.

- Break buttered bread into pieces and put in the bottom of a greased 9- by 13-inch pan.
- Spread grated cheese over bread.
- Add any extra goodies you choose and sprinkle over the cheese.
- Pour combined milk, beaten eggs, salt and dry mustard over all.
- Refrigerate AT LEAST over night; longer is okay.
- Bake at 350 degrees for 1 hour. I usually leave the casserole covered with aluminum foil for the first 30 minutes and then remove the foil for the last 30 minutes of baking. The casserole is done when it is bubbling and lightly browned.
