DUTCH APPLE PIE
This pie is baked in a brown grocery sack. It is so delicious.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Combine 1/2 cup sugar, 2 tablespoons flour, and cinnamon. Pour over apples in crust. Sprinkle lemon juice on top.
- Cut 1/2 cup sugar, 1/2 cup flour, and 1/2 cup butter or margarine together, and top pie with the mixture.
- Take two 15 inch pieces of parchment paper and enclose pie; fold edges up 3 times. Place on a baking sheet.
- Bake in preheated oven for 1 hour. Remove from oven, split parchment open and cool pie on wire rack. DO NOT open parchment covering while baking! Serve warm, or at room temperature.

GRANDMA MARGE'S DUTCH APPLE PIE
This is the only fruit filled pie that I will eat. I always request it when going home for the holidays. Good when it is still warm from the oven. And still yummy the next day. Just place a strip of waxed paper over the cut edge of your pie, if you cover the whole thing the topping will get soggy. My mother enjoys her pie with real whipped cream, my husband like his with a scoop of vanilla ice cream, but I love mine just the way it is! Yum

Steps:
- Preheat oven to 400 degrees. Have your pastry crust in a 9 inch pie plate chilling in the fridge.
- To make the topping mix flour and brown sugar, cut in butter with a pastry cutter (I believe that is what it is called) or using 2 knives in a criss-cross motion until crumbly. Place in fridge until ready to use.
- Peel, core and slice the apples. Sprinkle apples with lemon juice. Mix flour, sugar, salt and cinnamon and stir into apples. Pour apple mixture into chilled pie crust and top with crumb topping.
- Bake for 40-45 minutes or until apples are done. Keep an eye on it while baking as you may have to cover pie crust edges with foil to prevent them from getting too brown. I also place an empty pizza pan on the rack just below my pie to catch any juice dripping.
- Prep time will vary depending on the way you peel, core & slice the apples, by hand, food processor or machine.

DUTCH APPLE PIE
My Dutch apple pie recipe has the perfect, crumbly streusel topping over tender apples in a buttery crust. There's nothing as good a warm slice with a scoop of vanilla ice cream melting on top!

Steps:
- Heat oven to 400°F.
- On a floured surface roll dough into a circle roughly 2 inches bigger than a 9-inch pie plate.
- Place the pastry in the pie plate, pressing down slightly.
- Put the pastry lined pie plate in the freezer while preparing apples.
- Peel and core apples. Cut into 1/2-inch thick slices.
- In a large bowl toss the apples and everything else that remains except the topping ingredients.
- Remove the pie plate from the freezer. Spoon apple mixture into the pastry lined pie plate, mounding the apples up in the center.
- Use your fingers to mix the butter, flour, brown sugar, and salt until it is a mass that holds together then crumbles when you squeeze it.
- Sprinkle it on top of the filled pie.
- Sprinkle with the 2 tablespoons of sugar.
- Bake 40 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble.
- Transfer to cooling rack to cool before serving.

this was adapted from Cook's Illustrated...It is wonderful...the recipe calls for a mixture of granny smith and mcintosh apples. this is the first apple pie I have ever made without a long cooking period for apples..this is an awesome pie..honestly!!

- Have ready one 9" pie shell, baked.
- Increase oven heat to 425*.
- to prepare APPLE FILLING:.
- Peel, quarter, and core apples, slice into pieces.
- Toss apples, sugar, cinnamon and salt in a large bowl.
- Heat the butter in pan, till foaming subsides, add apples, reducing heat to medium low.and cook, covered, stirring occasionally till apples are softened -- approximately 5 minutes.
- Stir in raisins, cook covered, till apples are softened and mcintosh apples are beginning to break down.about 5 minutes longer.
- Transfer apples to large colander, over a bowl.shake and toss apples to drain off as much juice as possible,.
- Bring drained juice and cream to a boil -- cook 5 minutes --
- Transfer apples to baked shell, pour in reduced juce and smooth with spatula --
- to prepare STREUSEL TOPPING:.
- Combine all ingredients and toss with a fork.bake 5 minutes in 425* oven.
- Cool 5 minutes and crumble and sprinkle on pie -- and bake 10 minutes more.

- Preheat oven to 425 degrees F (220 degrees C).
- Peel, core, and halve apples. Cut into 1/2-inch slices, then slice into 1/2-inch cubes. Combine sugar, butter, cinnamon, nutmeg, and salt together in a large bowl; add apples and toss to coat evenly. Add flour and toss again to distribute.
- Pour apple mixture into 1 pie crust. Roll out 2nd pie crust, top pie, and pinch crust edges together.
- Place pie on baking sheet and bake in the preheated oven until golden brown, about 45 minutes.

GRANDMA'S APPLE PIE

- Line a 9-in. pie plate with bottom crust; trim crust even with edge of plate. Set aside. , In a large bowl, toss apples with lemon juice. Combine the sugar, flour, cinnamon and nutmeg. Arrange half of the apples in pastry shell; sprinkle with half of the sugar mixture. Repeat layers. Dot with butter. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush with milk and sprinkle with additional sugar. , Cover edges loosely with foil. Bake at 425° for 20 minutes. Remove foil; bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Serve warm if desired or cool on a wire rack.

- In a food processor, pulse 1 1/4 cups of the flour and 1/4 teaspoon of the salt. Add 1 stick of the butter and pulse until it is the size of peas. Drizzle on the ice water and pulse until evenly moistened crumbs form; turn out onto a surface and form into a ball. Flatten into a disk, wrap in plastic and refrigerate until firm.
- Preheat the oven to 375°. Set a baking sheet on the bottom rack. In a bowl, toss the apples, lemon juice, sugar, 1/4 cup of the flour and the cinnamon.
- On a floured surface, roll a disk of the dough to a 13-inch round; fit it into a deep 10-inch glass pie plate and brush the overhang with water. Crimp the overhang. Spoon in the apples.
- In a bowl, whisk the remaining 1 cup of flour, the light brown sugar, the baking soda and the remaining 1/4 teaspoon of salt. Add the 6 tablespoons of softened butter and rub the mixture until sandy. Add the walnuts. Press the mixture into clumps and sprinkle over the pie.
