2 cups firmly packed brown sugar
1 cup butter, softened
1/4 cup water
2 eggs
3 cups all-purpose flour
1 teaspoon baking soda
2 cups chopped dates
1 cup chopped nuts

Steps:

  • Preheat oven to 350 F.
  • In large bowl, combine first 4 ingredients; beat well.
  • (Lightly spoon flour into measuring cup; level off.) Add flour and soda; mix well.
  • Stir in dates and nuts.
  • Drop by teaspoonfuls, 2 inches apart, onto ungreased cookie sheets.
  • Bake 10 to 15 minutes until golden brown.

My granny always made these around Christmas. They are the easiest, best tasting cookies around. Be warned, they are addictive.

3 cups all-purpose flour
1 (8 ounce) package cream cheese, softened
1 cup butter, softened
12 ounces any flavor fruit jam

Steps:

  • Mix cream cheese and butter well in large bowl until well blended and creamy.
  • Add in flour slowly, beating well after each addition. Roll dough into 1-inch balls and wrap well in cellophane. Store in fridge overnight.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Roll out dough balls flat and place a 1/2 teaspoon full of the jam in the center. Fold sides over and place on ungreased cookie sheet.
  • Bake for 13-15 minutes until brown and the jam starts to bubble hard. Cool for 3 minutes and place on cooling rack. Sprinkle with powdered sugar if desired.

1 cup shortening
1 cup white sugar
1 cup brown sugar
¼ cup milk
1 teaspoon vinegar
2 eggs
1 teaspoon vanilla extract
3 ½ cups all-purpose flour

1 teaspoon salt
1 teaspoon ground nutmeg
6 tablespoons strawberry preserves, or as needed

Steps:

  • Beat shortening, white sugar, and brown sugar in a bowl using an electric mixer until creamy and smooth.
  • Mix milk and vinegar together and let stand 5 minutes to make 'sour milk'. Stir sour milk, eggs, and vanilla extract into shortening mixture.
  • Sift flour, baking powder, baking soda, salt, and nutmeg together in a large bowl. Mix flour mixture into shortening mixture until incorporated. Refrigerate until fully chilled, 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll dough to a 1/8-inch thickness on a floured surface; cut into 2-inch rounds using a cookie cutter. Spoon 1 teaspoon preserves into the center of half the cookies; cover with remaining cookies. Lightly press edges of cookies together using a fork. Cut criss-cross slits into the top of each cookie using a knife. Arrange cookies on an ungreased baking sheet.
  • Bake in the preheated oven until cookies are golden, 13 to 15 minutes.

½ cup white sugar
¾ cup water
½ cup butter, softened
½ cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
  • Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.

1/2 cup butter
1 cup sugar
2 large eggs
1 tablespoon milk
2 teaspoons baking powder
2 cups flour
1 pinch salt
1 cup chopped dates

1/2 cup sugar
chopped nuts, to taste

Steps:

  • Cream butter and 1 cup sugar; add eggs and beat well.
  • Add milk.
  • Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
  • Refrigerate.
  • While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.

  • Mix shortening, sugar, and eggs thoroughly.

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

These soft brown sugar drop cookies are topped with a lovely sweet and sticky date filling. Everyone loves these! They are beautiful with a cold glass of milk.

4 ounces dried pitted dates, chopped
3 fluid ounces water
1/8 cup sugar
1/4 cup (60g) butter, at room temperature
1/2 cup (100g) soft light brown sugar, packed
1 large free range egg yolk, freeze the white for another use
2 TBS warm water
1/2 tsp vanilla
1 cup (140g) plain all purpose flour
1/3 tsp baking soda
pinch salt

Steps:

  • First make the filling. Put all of the ingredients into a sauce pan over medium heat. Bring to the boil. Reduce the heat to low and simmer, stirring often, until the mixture is fairly smooth and thick. Set aside to cool.
  • Preheat the oven to 350*F/180*C/ gas mark 4. Line a large baking sheet with some baking paper and set aside.
  • Cream together the butter and sugar until light and fluffy, using an electric hand mixer. Beat in the water, egg yolk and vanilla. Whisk together the flour, salt and soda. Beat this into the creamed mixture until thoroughly combined.
  • Scoop the mixture into 12 equal portions on the baking sheet, leaving at least two inches in between each.
  • Using the back of a wet teaspoon, make a small hollow in the center of each cookie. Spoon 1 teaspoon of the date filling into each hollow.
  • Bake in the preheated oven for 10 to 12 minutes until golden brown. Remove to a wire rack to cool completely before eating.

I never truly appreciated them tho, until I finally was given the recipe and realized the TIME that went into them. I recommend making the filling one day and the cookies the next.. just saves you that much time. I also like to just underbake a hair... I'll probably be strung and hung for sharing her recipe..:)

1 1/2 lbs raisins
2 cups sugar
1/2 teaspoon salt
1 1/2 cups water
1/2 cup flour
6 cups flour

1 cup milk

  • Raisin Mixture: Soak raisins in hot water.
  • When plumb and soft, drain water and grind.

  • Mix the flour with just enough water to make smooth paste, then add to raisin mixture.
