Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

7 cups sliced cucumbers
salt as needed
1 cup sliced onions
1 cup sliced green bell pepper
2 cups white sugar
1 cup white vinegar
1 tablespoon celery seed
2 teaspoons salt, or to taste

Steps:

  • Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
  • Mix cucumbers, onions, and green bell pepper together in a bowl.
  • Whisk sugar, vinegar, celery seed, and 2 teaspoons salt together in a bowl until dressing is smooth; pour over cucumber mixture and stir until evenly coated.

This is the best cucumber salad I have ever had. This is my grandmothers recipe, (she was from Nagyszentmiklos) and this is a perfect companion dish for chicken paprikas, although I could make a meal out of it. This will quickly become your favorite way to eat cucumbers!

8 medium cucumbers or 15 kirby cucumbers, peeled
1/4 cup finely chopped fresh dill
1/4 cup kosher salt
1/2 pint sour cream
2 tablespoons white vinegar
2 garlic cloves, minced
1 teaspoon Hungarian paprika

Steps:

  • Slice cucumbers very thinly, preferably using a mandolin.
  • Take a colander, put in a small layer of cucumbers, then sprinkle with a small amount of the salt.
  • Continue this method until all the salt and cucumbers are used up.
  • Cover the cucumbers with a plate inside the colander, and put a very heavy weight on top.
  • Make sure the colander is in a large bowl, because the cucumbers will lose alot of water.
  • Let them sit for 1 hour.
  • In the meantime, chop the dill and finely mince the garlic, put aside.
  • After 1 hour, take a handful of cucumbers, and squeeze out as much juice as you can, and continue until they are all done.
  • Rinse thoroughly with water, drain well.
  • After the cucumbers are done, return to the colander, and weight down one more time for about 15 minutes.
  • You do not have to squeeze out the juice again with your hands Combine all ingredients in a large bowl, except the paprika.
  • After mixing thoroughly, put in a nice serving dish, and sprinkle with the paprika.
  • Chill for at least 2 hours.
  • Enjoy.
  • Nutritional information shows a high amount of sodium, but the vast majority is pressed out by your hands. The main function of the kosher salt is to purge the moisture out of the cucumbers.

1 cucumber
½ onion
⅔ cup cream ((⅔ cup = 100 ml))
2 tbsp white wine vinegar
½ tsp salt
½ tsp sugar
2 tbsp dill, fresh ((or frozen))

Steps:

  • Finely slice the cucumber and finely dice the onion. All really, really fine :-)
  • Add to a bowl and mix in the cream.
  • Finish off the salad with the vinegar, sugar and salt.
  • Mix well and let the salad rest for at least 2 hours for maximum taste.
  • Enjoy!

⅓ cup peanuts (crushed, roasted)
¼ cup fresh cilantro (chopped)
1-2 Thai chilies (sliced thin, optional)
2 teaspoon sesame oil (toasted or regular)
2 tablespoon lime juice
1 tablespoon fish sauce
1 clove garlic (minced)
1 ½ tablespoon sugar (granulated)
¼ teaspoon salt (or to taste)

Steps:

  • Combine Ingredients: Add the salad ingredients to a large salad bowl, reserving 1 tbsp of the crushed peanuts.
  • Make Dressing: Whisk the dressing ingredients together until the sugar dissolves. Pour the dressing into the salad bowl and toss well to coat.
  • Garnish & Serve: Garnish with the reserved peanuts and serve immediately.

1 to 2 English cucumbers (thinly sliced, approximately 1/8 inch thick)
½ cup sour cream (or plain Greek yogurt)
2 tablespoon chopped fresh dill
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon vinegar
½ red onion (thinly sliced)

Steps:

  • In a small bowl, whisk together sour cream, dill, salt, pepper, and vinegar.
  • Thinly slice the cucumber and red onion. Use a mandoline if you have one to make quick work of this step.
  • Place the sliced cucumber and red onion in a medium serving bowl and toss with the dressing. Check for seasoning and add additional salt and/or pepper if needed.

1 cucumber, peeled and thinly sliced (read *NOTE)
3 lemon cucumbers, thinly sliced
1 cup green grape, cut in half
1 cup red seedless grapes, cut in half
2 stalks organic celery & leaves, chopped
1/4 cup sour cream (optional) or 1/4 cup plain yogurt (optional)
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar or 2 tablespoons white wine vinegar
1 teaspoon dried dill or 1 tablespoon fresh dill
2 teaspoons fresh chives, minced
1 teaspoon Dijon mustard
1 teaspoon honey, softened or 1 teaspoon raw sugar
fresh ground black pepper

Steps:

  • *NOTE: If using cucumbers from the garden, and/or organic cucumbers, it is not necessary to peel them unless you wish. Store bought cucumbers (especially conventional produce) need to be peeled to remove the wax.
  • In a large salad bowl, combine the cucumbers, grapes and celery.
  • In a small non-reactive bowl combine the dressing. Pour over the cucumber mixture and toss gently.
  • Season with freshly ground black pepper.
  • Cover and chill until ready to serve.

1 medium cucumber
1 package (3 ounces) lime gelatin
1 teaspoon salt
1/2 cup boiling water
1 cup mayonnaise
1 cup 4% cottage cheese
1 small onion, grated
Optional: Sliced cucumbers and fresh parsley

Steps:

  • Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.

3 cucumbers
1 onion, cut into very thin slices
salt and pepper to taste
2 cups fat free sour cream

Steps:

  • Peel cucumbers, but leave a little on for color and slice by hand as thin as possible. Dry slices with paper towels.
  • Place dried cucumber slices in a large bowl with onion slices. Generously season with salt and pepper. Toss well and let sit 10 minuets, drain any excess liquids.
  • Toss cucumbers and onions in with enough sour cream to coat. Refrigerate until well chilled. Stir, and season with salt and pepper to taste if needed.

In a large bowl, add the tomatoes, cucumber, onion, cheese, and olives. Toss gently to mix the ingredients. In a separate bowl, combine the olive oil, vinegar, oregano, salt, and pepper. Whisk vigorously. Then taste, and adjust the seasonings if necessary. Just before serving, pour the dressing over the salad.
