This cheesy chicken casserole is full of cauliflower rice, broccoli, and shredded chicken. Such a simple weeknight meal.

Number Of Ingredients 10

16 ounces riced cauliflower
12 ounces broccoli florets
2 cups cooked, shredded chicken
4 slices bacon
3 cups grated cheddar, divided
2 large eggs
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon mustard powder
1/2 teaspoon cracked pepper

Steps:

  • Preheat oven to 350 degrees.
  • Steam the cauliflower and broccoli until cooked through and tender.
  • Fry the bacon until crisp and crumble it into small pieces.
  • Add the steamed cauliflower rice and broccoli to a large bowl with the chicken, bacon, eggs, 2 1/2 cups cheddar, and spices. Stir well to combine.
  • Spread mixture into 9x13 baking dish and sprinkle the top with remaining 1/2 cup cheese.
  • Bake uncovered for 30 minutes.
  • Serve immediately.

4 cups Chicken breasts ((cooked, cubed or shredded))
8 slices Bacon ((cooked, chopped))
3 cloves Garlic ((minced))
1 cup Ranch dressing
1 cup Mozzarella cheese ((shredded, divided))
1 cup Cheddar cheese ((shredded, divided))
5 cups Broccoli ((cut into florets))
1 lb Frozen spinach ((thawed, squeezed to drain well))

Steps:

  • Preheat the oven to 375 degrees F (191 degrees C).
  • If using frozen spinach, thaw and squeeze to drain first. If using broccoli, place it into a pot of water and bring to a boil. Simmer for 1-2 minutes until bright green.
  • Combine the chicken, bacon, drained spinach or broccoli, garlic, ranch dressing, and half of the shredded cheeses in a large bowl. Stir until well incorporated. Transfer to a 9x13 in (23x33 cm) glass or stoneware casserole dish. (Alternatively, you can mix everything directly in the casserole dish.)Optional tip: If you like extra ranch flavor, add 1-3 teaspoons of ranch seasoning mix, in addition to the dressing.
  • Top with remaining shredded mozzarella and cheddar cheeses.
  • Bake for about 15 minutes, until hot and bubbly.

4 tablespoons butter
1/2 cup heavy cream
6 tablespoons parmesan cheese
salt and pepper
8 ounces Canadian bacon, diced
3/4-1 cup grated mozzarella cheese
1/2 cup grated low-fat sharp cheddar cheese
1 cup chicken stock
1/2 cup heavy cream
8 boneless skinless chicken breasts
stock or water, for cooking chicken
sage (for cooking chicken)
thyme (for cooking chicken)
onion powder (for cooking chicken)
1 1/4 lbs sliced mushrooms
2 slices bacon, crispy not burned

Steps:

  • Preparation for Alfredo Sauce:.
  • Combine ingredients in saucepan, cook on LOW and stir until it looks and feels like Alfredo sauce. Please never boil this!
  • Remaining Ingredients:.
  • Preheat oven to 375. Spray rectangular casserole dish or Dutch oven with non-stick spray.
  • Cook chicken breasts in stock seasoned with thyme, sage and onion powder until chicken is cooked through, about 20 minutes. Let chicken cool, then cut into bite sized pieces and layer in bottom of casserole dish or Dutch oven. Saute mushrooms in a little olive oil , then layer mushrooms on top of chicken. Don't be afraid to use butter if it's a matter of taste for you, but this might make it too rich for some!
  • Put chicken stock into saucepan and boil to reduce by 1/3. Mix heavy crème with 2 T cold water, then wisk into chicken stock and cook 5 minutes, or until slightly thickened. Wisk in Alfredo Sauce, and heat, then pour sauce over the chicken mixture in casserole dish or dutch oven. Bake about 25 minutes. Add bacon and Canadian bacon over the chicken. Uncover, sprinkle with cheese and BROIL for 5 minutes, until cheese is melted and browned on top. You gotta watch it closely to make sure it doesn't burn the cheese!
  • If you have a lot of sauce left over....cook some zucchini slices on the side and cover them with sauce and fresh cracked black pepper.

2 tablespoons margarine
2 tablespoons minced garlic
5 skinless, boneless chicken breasts, chopped
1 pinch garlic powder, or to taste
1 pinch dried basil, or to taste
1 pinch dried oregano, or to taste
salt and ground black pepper to taste
1 (16 ounce) container ricotta cheese
2 cups shredded mozzarella cheese, divided
1 cup shredded Parmesan cheese
½ cup milk
1 large egg
1 (28 ounce) jar vodka marinara sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt margarine in a roasting pan with minced garlic in the preheated oven. Add chicken, garlic powder, basil, oregano, salt, and pepper; mix well.
  • Bake in the preheated oven until chicken is no longer pink, 20 to 25 minutes. Remove from the oven but leave the oven on.
  • Mix ricotta, 1 cup mozzarella cheese, Parmesan cheese, milk, and egg together in a bowl. Spread evenly over the top of the chicken. Pour vodka marinara sauce over top and spread evenly.
  • Return to the oven and bake for 20 minutes. Sprinkle remaining mozzarella cheese on top. Continue to bake until melted, about 10 minutes.
