GRANDMA'S SPEEDY CELERY STUFFING
This is a great basic stuffing recipe, easy to make and flavorful. It is also a good base to add sausage to.

Steps:
- Melt butter in skillet and cook onion and celery in butter until translucent.
- Add celery, onion and sage to stuffing. Add chicken broth and toss lightly.
- Cover and bake in a greased 1 1/2 court casserole at 375 for 15 minutes. Remove cover and bake for 10 minutes more.
- Note: I like to add one beaten egg in to help bind the stuffing. I add it with the broth.

GRANDMA'S STUFFED CELERY
My grandma always made stuffed celery at Thanksgiving and Christmas. As kids, we were always so hungry before the holiday meal we would sneak and get a piece of celery to curb our appetite. It was nearly all gone by meal time and we always got fussed at with hint of a grin from Grandma. Now I never have holiday meals without it!

- Thoroughly dry each piece of celery with paper towels. Mix the cream cheese, olives, garlic, salt, and black pepper in a bowl. Using a knife, spread a generous amount of cream cheese filling down the center indentation of each celery piece. Serve immediately or refrigerate.

- Soak bread in milk, set aside.
- Saute finely chopped celery and onions in margarine over low flame. Add cold or freshly mashed potatoes and mix with celery and onions. Add seasoning, squeeze bread dry and mix all ingredients together being careful to keep flame low.

- Spoon into salted cavity of chicken or turkey.

- Preheat oven to 350°. In a large skillet, brown sausage. Drain sausage, discarding drippings. Meanwhile, in a small saucepan, heat milk over medium heat until bubbles form around sides of pan. MY GRANDMA'S HEIRLOOM - THANKSGIVING STUFFING
When my grandmother passed away, I received a number of things from her estate. None were as important to me as her handwritten recipe for dressing. Not only is it the BEST dressing I've ever tasted, but it's also not too "sage"y...wonderful for those of us who don't adore sage. I add mushrooms and sometimes finely chopped oysters for personal preference. The shared secret recipe is written out on "General Shale Brick" notepaper, the company my grandfather worked for before he died.

Steps:
- In large fry pan cook celery and onions in grease or oil and water over low for about 1/2 hour.
- Put bread, sage, salt and pepper in large bowl. Pour onion/celery mix (including liquid) over bread and mix well.
- Beat eggs and add to bread mixture. Mix well.
- Put dressing in greased baking dish and bake about 45 minutes in 350 oven, covered.
- Doubles well, extremely good cold.
- Can be made in well greased crockpot on low in about 3 hours.
