EASY OLD FASHIONED MEATLOAF

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

  • Shape in loaf pan.
  • Cover with more ketchup if desired.

This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

2 lbs ground chuck
4 tablespoons Worcestershire sauce
1/2 cup grated onion
2 eggs, slightly beaten
2 cups breadcrumbs
1 cup milk
1 cup tomato juice (for topping) or 1 cup ketchup (for topping)
salt and pepper

Steps:

  • Mix everything together very well and shape into 2 loaves.
  • You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
  • Bake at 350 degrees for about 45 minutes to 1 hour or until done.
  • Makes 2 loaves.

1½ lbs ground beef
¾ cup quick oatmeal
¾ cup milk
1 egg
½ cup onion, finely diced (or grate it if your kids will freak out if they see a piece of onion)
1¼ tsp salt
¼ tsp pepper
GLAZE
⅓ cup ketchup
2 Tbsp brown sugar
1 Tbsp mustard

Steps:

  • Preheat oven to 350 degrees.
  • Combine ground beef, oatmeal, milk, egg, onion, salt, and pepper in a medium-sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so. You do not want to over-mix.
  • Transfer meat into a large loaf pan and press it down evenly into the pan.
  • For the glaze, mix ketchup, brown sugar, and mustard in a small bowl. Pour evenly over meatloaf.
  • Bake at 350 degrees for 1 hour and 20 minutes.
  • Remove from oven and drain off excess grease. Let stand for 5 minutes before serving.

1 pound ground beef, 80/20
1 tablespoon Montreal Steak Seasoning
1 tablespoon garlic, minced
1/4 cup minced onions
2 eggs
3/4 cup milk
3/4 cup old fashioned rolled oats (regular or gluten free oats)
1 tablespoon Worcestershire sauce
2 tablespoon ketchup
1 15-ounce can tomato soup, divided

Steps:

  • Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it's OK. Some brands of oats suck up all the milk while others do not.
  • In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 tablespoon of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more tablespoon of oats (don't worry if they aren't soaked). If too dry, add in the milk 1-2 tablespoon at a time. If you have no milk left as your oats sucked it all up just add more milk or water. You want the mixture to be pretty moist but firm enough to hold a shape.
  • In the bowl gently press together.
  • Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 30 minutes, remove from the oven, and spread the remaining tomato soup on top of the meatloaf.
  • Continue baking for another 30 minutes.
  • Remove from the oven and allow to rest for 10-15 minutes before serving.

2 lbs. ground beef
2 eggs
1 cup seasoned bread crumbs
1 cup ketchup, plus more for drizzling
2 medium onions (1 diced and the other sliced)
salt & black pepper, to taste

Steps:

  • Heat the oven to 350 F.
  • Grease a baking pan. Set aside.
  • In a large mixing bowl, combine the ground beef with the eggs, bread crumbs, 1 cup of ketchup, diced onion, salt and pepper.
  • Place the meat mixture in a baking pan and shape it into a loaf.
  • Drizzle the top with ketchup and salt and pepper.
  • Place the sliced onion around the perimeter of the meatloaf.
  • Bake for 1 hour.
  • Drizzle more ketchup on the top, and bake for another 10 - 15 minutes or until a thermometer registers 160 F.

2 pounds ground beef
1 large egg
1 cup panko bread crumbs

1 teaspoon kosher salt
1/2 cup ketchup
1 tablespoon brown sugar
1 tablespoon spicy brown mustard

Steps:

  • Preheat oven or grill to 350 degrees F. Line a baking sheet with parchment paper for easy clean up.
  • Melt butter in saute pan over medium heat. Cook onions until fragrant and slightly brown while stirring occasionally, about 3-5 minutes. Reduce heat to low and add garlic, cook for 2-3 minutes. Remove from heat and set aside to cool.
  • In large bowl, combine ground beef, egg, bread crumbs, milk, Worcestershire sauce, thyme, salt and cooked onions and garlic. Use hands to mix well, but try not to over work the meat. Shape into loaf on parchment lined baking sheet. Use sharp knife to cut a criss cross pattern on top.
  • Bake uncovered in the preheated oven 40 minutes. While meatloaf is cooking, combine ketchup with mustard and brown sugar in a bowl. Set aside.
  • After 40 minutes of cooking, spread ketchup mixture over the top of the meatloaf and continue baking for about 30-35 minutes to an internal temperature of 160 degrees F (70 degrees C).

  • Preheat oven to 350 degrees F.
  • In a large bowl combine the onion, garlic, milk, oats, egg, salt and peppers. Let sit for 5 minutes to soak up the liquid. Add in the ground beef and mix gently with your hands, just until combined (this should only take about 30 seconds, really!)

1/4 cup milk
1 egg

1/2 tsp pepper

Steps:

  • Put ground beef, sausage or ground pork, and oats into a mixing bowl.
  • Add egg, milk, 1/4 cup tomato sauce or ketchup, salt, pepper, and chopped vegetables to the blender. Pulse to chop vegetables into smaller pieces.
  • Add liquid/vegetable mixture to the ground meat and oats. Mix up with your hands. Let sit for about 15 to 30 minutes so the oats can absorb some of the liquid.
  • Shape the mixture into a round loaf or put into a bread pan.
  • If you are making a free-standing round loaf, cover a baking sheet with foil. Make sure there is a rim on the sheet because your meatloaf may release liquids. You can also use a large cast iron skillet too.
  • Bake in a 350-degree oven for 45 minutes. Carefully remove from oven.
  • Put the remaining tomato sauce or ketchup on top and bake an additional 15 to 20 minutes.

1 lb ground beef
1/2 c milk
3/4 c rolled saltine crackers
2 Tbsp chopped onion
1 tsp salt
1/2 c bell pepper (optional)
SAUCE
1/3 c ketchup
2 Tbsp sugar
2 Tbsp white vinegar
2 Tbsp worcestershire sauce
1/4 c water
1/4 c chopped onion

Steps:

  • 1. Combine all of the above ingredients for the meat loaf.
  • 2. Spoon meat loaf into a 9 inch x 4 1/2 inch loaf pan and bake at 400 degrees for 15 minutes.
  • 3. While this is cooking, make the sauce:

  • 5. Remove meat loaf from oven and drain off excess liquid.

2 lbs. hamburger 85/15
1 cup saltine cracker crumbs (oatmeal or bread crumbs)
1/2 cup onion, chopped
1/2 cup bell pepper chopped (my addition)
2 eggs
3/4-1 cup evaporated milk (whole milk or half and half)
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground coriander (my addition)
2 cups of water
1 cup ketchup
1 cup (maybe more) juices in the skillet from the meatloaf
2 tablespoons cornstarch
1 (8 oz.) can tomato sauce
1 1/2 cups water

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9 or 10-inch cast iron skillet with a nonstick cooking spray; set aside.
  • In a large bowl, combine all the above ingredients, except for the water and ketchup, and mix until well blended.
  • Be careful not to handle the meat mixture too much. Shape into a round bun and place in the cast iron skillet. Pour water a third of the way up in the skillet.
  • Bake in the oven for 1 hour or until meatloaf is done. Spoon ketchup over the meatloaf and return to the oven for another 15 minutes. If the liquid has cooked down too much to make gravy add another 1/2 cup of water.
  • Heat reserved juices from the skillet. Using a wire whisk, blend in cornstarch, stirring constantly. When all is incorporated, tomato sauce and 1 cup of water at a time.
  • Stir the water in until thick and bubbly. If the gravy is too thick, add more water, 1/2 cup at a time.
  • Taste the gravy and season to your taste. I usually add the same seasonings in the meatloaf, salt, black pepper, garlic powder, and coriander.
  • Serve over meatloaf.

1 1/2 teaspoon salt
1 large​ egg, beaten
3 tablespoons water, or milk

Steps:

  • Preheat the oven to 350 F
  • Heat the oil in a large skillet over medium heat. Add the chopped celery and onion; cook until the vegetables are tender, or for about 7 to 9 minutes, stirring frequently.
  • In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
  • Pack the meatloaf mixture into a 9-by-5-by-3-inch loaf pan or shape it and bake it free-form in a 9-by-13-by-2-inch baking pan or 10-by-15-by-1-inch jelly roll pan.
  • Bake at 375 F for 1 hour.
  • Using 2 spatulas, carefully move meatloaf to a serving plate and slice.

¼ cup + 2 Tbsp. Romano cheese, optional
½ cup dried bread crumbs
½ cup ketchup
½ cup egg substitute
1 tsp. black pepper
1 tsp. kosher salt

Steps:

  • In a large mixing bowl, mix together ground beef, parsley, oregano, onion, garlic, optional cheese, bread crumbs, ketchup, egg substitute, pepper, and salt. Roll mixture into a large ball.   • Gather the ingredients. Pre-heat the oven to 350 F.

  • In a large bowl, combine the ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, 1/3 cup of ketchup , milk, and Worcestershire sauce .

  • Bake the meatloaf for 1 hour. Carefully pour excess grease into a can or jar (dispose of it in the trash after it cools).
  • Spread the meatloaf with 1/2 to 3/4 cup of ketchup or barbecue sauce and continue baking for 15 minutes longer, or until the meatloaf registers at least 160 F on an instant-read food thermometer inserted into the center. (If you have instead swapped ground turkey or chicken for the beef, cook the loaf to an internal temperature of 165 F.)
  • Let the meatloaf rest for ten minutes before slicing so it holds together well. Then, serve and enjoy!

Old-fashioned Meatloaf - A.K.A Basic Meatloaf image

This classic meatloaf recipe will be a family favorite for years to come. Mix ground beef, onion, bell pepper, and a few more ingredients to create a tasty blend for your meatloaf. Serve with your favorite sides.

Number Of Ingredients 11

1 lb ground beef
1 1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 lightly beaten egg
8 oz canned without juice diced tomatoes
1/2 cup quick cooking oats
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon mustard

Steps:

  • Preheat oven to 375 °F.
  • Mix ground beef, salt, pepper, onion, bell pepper, egg, tomatoes and oats together well and place in a baking dish. Shape into a loaf.
  • Topping:
  • Mix ketchup, brown sugar and mustard and spread on loaf. Bake for 1 hour.
