Grandma's No Fail Brownies image

My grandmother made these brownies many times, they freeze well and ship well in care packages for college students, which many of my cousins enjoyed while away from home at college. Because of recent dairy allergies we found that 7/8 c. of oil may be used instead of butter with no problems, they come out just as yummy! One of my...

GRANDMA'S CLASSIC NO-BAKE COOKIES

Grandma's Classic No-Bake Cookies image

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

GRANDMA'S DOUBLE CHOCOLATE BROWNIE COOKIES

Grandma's Double Chocolate Brownie Cookies image

My Mom used to make these cookies for my daughter, without the chopped nuts. They are her favorite cookie. The original recipe used shortening, I use butter and add 1 tsp of instant clearjel per cup of flour to stop the cookies from spreading. If you don't have any instant clearjel make sure to chill your cookies prior to baking. I usually only make half a recipe. You can freeze the cookies before baking, just add a couple of minutes to the baking time if using frozen dough.

  • Grease your 8x8 cake pan with butter and cut two 8-inch wide rectangles of parchment paper to line the pan (the rectangles will overlap in the middle). It's important to grease the pan before adding the parchment paper. This helps the parchment stick and line the pan smoothly. Lining the pan with parchment allows you to lift the cake out easily after baking and it also ensures that no part of the cake gets stuck to the pan during baking.
  • Add the brown sugar, vanilla extract, and cocoa powder. Mix well until everything is combined and then stir in the egg until it is completely incorporated.
