6 eggs, seperated
1 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
5 tablespoons water
1/2 cup ground walnuts
1 1/4 cups milk
1 (3 1/2 ounce) package cook-and-serve chocolate pudding mix
1/2 cup butter, softened
1/2 cup shortening
1 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In large mixing bowl, beat egg yolks and sugar for 10 minutes or until light lemon-colored. Beat in vanilla. Combine cake flour and baking powder; add to egg mixture alternately with water, beating well. Fold in walnuts.
  • In another mixing bowl, beat the egg whites until stiff peaks form; fold into batter. Pour into two greased and floured 9 inch round cake pans. Bake at 350 for 20-25 minutes or until toothpicks come out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely.
  • In small saucepan, whisk the milk and pudding mix. Bring to a boil, stirring constantly. Remove from the heat. Pour into a bowl; press a piece of waxed paper or plastic wrap over pudding. Refrigerate for 30 minutes.
  • In mixing bowl, cream the butter, shortening and confectioners sugar until light and fluffy. Beat in vanilla and cooled pudding. Split each cake into two layers. Place one bottom layer on a serving plate; spread with about 3/4 cup filling. Repeat layers. Garnish with chocolate curls, if desired.

4 cups nuts, 1 kind or an assortment, roasted and cooled
1 1/2 cups sugar
3/4 cups butter or margarine
5 large eggs, separated
1 1/2 tablespoons lemon juice
1 tablespoon grated lemon peel
1/3 cup all-purpose flour

Steps:

  • Place nuts in a food processor and grind until finely ground.
  • In a bowl beat 1/2 cup of sugar and 1/4 cup of the butter until blended. Add the egg yolks, one at a time, beating well after each addition. Mix in the ground nuts, lemon juice, lemon peel and all but 2 tablespoons of the flour.
  • In a deep bowl beat egg whites with a mixer on high speed until soft peeks form. Gradually beat in 1/4 cup sugar until the whites hold stiff, shiny peaks. Gently fold the whites into the yolk mixture.
  • Spoon the batter into a buttered and floured 9-inch cheesecake pan with removable rim. Bake in a 350 degree oven until the torte is very lightly browned and the center feels just barely firm to the touch, about 20 to 25 minutes.
  • To prepare the topping, in a medium sized pot melt remaining 1/2 cup butter over a medium heat. Add the remaining sugar, flour and nuts. Stir the mixture until bubbling. Immediately spoon the toffee topping evenly over hot torte, pushing nuts with a spoon to arrange decoratively. Return to oven and bake until nuts and topping are slightly more brown, about 15 to 20 minutes longer.
  • Cool torte in the pan for 10 minutes, then run a knife inside the pan rim to release. Remove pan rim. Serve torte warm or cool.
  • TIP: PAN ROASTING ALMONDS
  • Spread shelled nuts in a single layer on a baking pan. Bake in a 350 degree oven, stirring often, until golden, about 15 minutes.

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, beat egg yolks and sugar for 10 minutes or until light lemon-colored. Beat in vanilla. Fold in walnuts., In another bowl and with clean beaters, beat the egg whites on high until stiff peaks form. Fold a fourth of the egg whites into batter; fold in remaining whites. , Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. MIDDLE LAYER

6 tablespoons flour

ICING
1 cup shortening
1 cup butter
2 cups sugar
8 tablespoons flour
1 cup milk

Steps:

  • For Top/Bottom Layers: In separate bowl, beat egg yolks with sugar and baking powder till it becomes lemon colored. It takes about 10 minutes to get it thick and lemony. Add flour and ground nuts until well combined. In a different bowl, beat the egg whites till they form stiff peaks. Fold the egg whites into the egg yolk mixture. Bake in two greased and floured cake pans at 325 degrees F for about 30 minutes or until a toothpick comes out clean. For Middle Layer: In separate bowl, mix egg yolks with sugar till it becomes lemon colored. Add the flour and baking powder until well combined. In a different bowl, beat the egg whites till they form stiff peaks. Fold the egg whites into the egg yolk mixture. Bake in greased and floured cake pan (same size as top and bottom) at 325 degrees F for about 30 minutes or until a toothpick comes out clean. For Grandma's 30 Minute Icing: Beat the shortening, butter and sugar for 10 minutes or until grainy texture is gone. Add the flour and milk slowly, alternating between the two and beat till smooth as whipped cream, about 20 minutes. It will be very light and fluffy. But you do need to beat it this long for the sugar to dissolve and the icing to get fluffy as it should be. It will spread beautifully and you will be amazed at the taste.

Please note that a lot of the recipes she left for us were given down orally. for example when she gave my mom and i this recipe she litterally said: Bake until done. baking times are estimated by the many times i've made this cake.

1 cup butter, at room temp
1 cup sugar
1 cup all-purpose flour
1 cup self rising flour (or 1 cup all-purpose flour with 1 teaspoon baking powder)
your favorite jam
pecans (optional)

Steps:

  • preheat oven to 350 degrees.
  • mix the ingredients for the crust together by hand until well blended.
  • Flatten about 2/3 of dough into a 9X13 pan, or a large round pizza pan.
  • Its up to you, how thick you want the crust.
  • Spread as much jam as you like over the crust and sprinkle with nuts.
  • use the remaining dough to form into ribbons.
  • Place ribbons in a lattice position.
  • Bake for 35-40 minutes until lightly browned.
  • Enjoy this warm, or at room temperature.

Just like grandmas! Beautiful and delicious. The nuts actually taste like candy after the recipe is all put together, so this may be surprisingly tasty even for the non-nut-lover.

1 fresh yeast cake (or 1 envelope)
1/4 cup warm milk
1/2 lb butter (2 sticks, softened)
4 egg yolks (use whites for nut filling)
1/2 pint sweet cream (half and half)
4 cups flour
1 teaspoon sugar
3/4 teaspoon salt
1 lb walnut meat, finely ground
1 1/2 cups sugar
1 teaspoon vanilla
4 egg whites, beaten to stiff stage
1 egg, beaten

Steps:

  • Dough: Let yeast dissolve in milk for a few minutes. Melt butter. Mix butter with beaten yolks in big bowl. In a separate bowl, sift flour, sugar and salt together. Mix yeast mixture with butter and egg yolks, sweet cream, and then flour mixture. Beat with wooden spoon or spatula until smooth or use hands to mix. The mixture will absorb the flour, cleaning the sides of the bowl. Shape into 3 balls and refrigerate overnight.
  • Prepare filling by mixing together nuts and sugar and then add vanilla. Fold in beaten egg whites.
  • Use 1 to 1 ¼ cups filling per roll.
  • Roll out each ball into rectangle 1/8 to ¼ inch thick. Sides will be about 12 by 16 inches. With paring knife, even off sides slightly. Spread with nut filling to within ½ inch of sides. Roll from short side up long side. Place the three rolls side-by-side on a 10 by 14 inch baking pan or cookie sheet and let rise in a warm area for 3 hours. Brush top with beaten egg. Bake at 325°F for 1 hour.

2 cups chopped walnuts
1 teaspoon ground cinnamon
¾ cup white sugar
¼ cup warm water (110 degrees F/45 degrees C)
1 (.25 ounce) envelope active dry yeast
1 teaspoon white sugar
4 egg yolks
½ cup sour cream
1 ⅓ cups butter or margarine, softened
4 ½ cups all-purpose flour
1 (16 ounce) jar apricot preserves
4 egg whites
⅔ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x17 inch jelly roll pan. Mix together the walnuts, ground cinnamon, and 3/4 cup of sugar in a medium bowl and set aside.
  • In a small bowl, dissolve the yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes. In a large bowl, stir together the yeast mixture, egg yolks, sour cream, and butter. Gradually stir in the flour until the dough becomes too stiff to use a spoon. Use your hand to knead the dough in the bowl until it becomes smooth, about 5 minutes. Divide the dough into three equal parts, form into balls, cover, and set aside to rest for about 15 minutes.
  • Roll one of the balls of dough between 2 sheets of waxed paper to fit the pan. Place the dough in the bottom of the prepared baking pan and spread with 3/4 of the nut mixture. Roll out another ball of dough in the same way, place this over the nut layer in the pan and spread the apricot preserves evenly over the dough. Roll the third ball in the same way and place on top of the layer of preserves.
  • Place the torte in the preheated oven and set the timer for 40 minutes. When the timer goes off, the top of the torte should be golden brown, if not then wait a few minutes. Place the egg whites into a clean glass or metal bowl. Whip the egg whites to soft peaks, then gradually add 2/3 cup sugar while beating the egg whites to stiff peaks. Spread the meringue evenly over the top of the torte and sprinkle with the remaining nut mixture.
  • Bake the meringue-covered torte for an additional 15 minutes. Cool the torte in the pan set on a wire rack. Trim the edges for a cleaner presentation. Serve at room temperature.
