1 cup sugar
1/3 cup milk
5 tablespoons butter or 5 tablespoons margarine
1 cup semi-sweet chocolate chips

Steps:

  • Put first three ingredients in a sauce pan.
  • Bring to a boil, while stirring constantly.
  • Remove from heat and add chips.
  • With a wire whip beat until creamy and cooled.
  • Add chopped pecans if desired.

6 tablespoons milk
1/2 cup margarine
1/2 teaspoon baking powder
1 teaspoon vanilla extract

Steps:

  • Combine brown sugar, milk, and butter; bring to a full boil and cook for exactly 2 minutes. Remove from heat; add baking powder and vanilla. Beat until thick enough to spread.

Grandma's Fluffy White Frosting image

Make my Grandma's fluffy white frosting to decorate your favorite cakes or cupcakes! It's a simple recipe I've used for over 45 years.

Number Of Ingredients 8

1 cup milk
1½ Tablespoons cornstarch
1 dash salt
½ cup vegetable shortening
½ cup butter (or margarine) (, softened)
⅔ cup granulated sugar
1⅔ cup powdered sugar (, divided use)
1 teaspoon vanilla extract

Steps:

  • Place milk, cornstarch and a dash of salt in a medium saucepan. Stir or whisk to combine ingredients. Cook on LOW heat, stirring often, until mixture thickens. Once mixture thickens, remove it from the heat; set it aside to cool.
  • In a separate large mixing bowl (or stand mixer), mix together vegetable shortening, butter, granulated sugar and a portion (2/3 cup) of the powdered sugar. Beat these ingredients REALLY WELL for about 15 minutes, until creamy. NOTE: It is important to take the time to mix really well, so the granulated sugar is dissolved and is no longer "grainy".
  • Add vanilla extract, and the completely cooled, thickened milk mixture. Beat ingredients well, until fully incorporated into the frosting.
  • Add remaining cup of powdered sugar to the frosting. Mix well until fully combined. Now the frosting is done. It should be fluffy and light in texture, and ready to use. Will make enough frosting to fully cover a 2 layer round cake or 2 dozen cupcakes.

My Grandma was a great baker. She made the most delicious frosting for her cakes. I could never quite get why my frosting never tasted like hers. Years later I found this recipe in her handwriting and it had coffee in it. I'm not a coffee drinker, but boy was this frosting delicious. The recipe is actually for 3 variations: white, chocolate or mocha.

1/4 lb butter, softened
1 1/2-2 cups powdered sugar
2 -3 tablespoons milk or 2 -3 tablespoons cold coffee
1 teaspoon vanilla extract
1 tablespoon cocoa powder (optional)

Steps:

  • Cream butter and sugar together. Slowly add enough milk to make the frosting spreadable. Add the vanilla. Adjust milk and powdered sugar until desired consistency.
  • For chocolate icing, add the cocoa powder.
  • For mocha icing, delete the milk and add cocoa and cold coffee.

  • In a medium bowl, using an electric hand mixer, beat the butter until light and smooth. Beat in the powdered sugar, milk and vanilla until smooth and creamy.

GRANDMA'S SHORTBREAD COOKIES

This is a recipe for an amazingly dense and rich yet delicate cookie. You can't eat just one. When I make them, they're gone in a sitting and guests, family members and friends love and look forward to these. I can easily eat 10 in a row. The delicate nature is due to the cornstarch which most recipes I've come across do not include. They taste great with coffee and hot cocoa. This recipe comes from the back of an old box of Benson's Cornstarch. I kept the empty box for years in the hopes of making them one day. I always double the recipe to make about 50 small cookies.

1/2 cup cornstarch
1/2 cup icing sugar (confectioner's sugar, in Canada it's 'icing')
1 cup all-purpose flour
3/4 cup unsalted butter, softened (= 1 1/2 sticks, no margarine or substitute)

Steps:

  • Sift together corn starch, icing sugar and flour.
  • With wooden spoon (or by hand as I do it), blend in butter until soft, smooth dough forms.
  • Shape into 1 inch (2.5 cm) balls.
  • Place 1 1/2 inches (4 cm) apart on an ungreased cookie sheet, flatten with lightly floured fork.
  • Alternatively, roll dough to 1/4 inch (6 mm); cut into shapes with cookie cutters.
  • Decorate with candied cherries, colored sprinkles or nuts if desired.
  • Bake in 300 Fahrenheit oven for 15-20 minutes or until edges are lightly browned.
  • Cool on wire rack.
  • Tips:.
  • Do not substitute anything for the butter otherwise it's not a genuine shortbread cookie. ETA: Sadielady reminded that I forgot to mention the type of butter. Please forgive the D'oh moment. Please use unsalted butter. I never ever add salt. Any added salt in baked goods is not pleasing to my palate and too much salt is unhealthy but you may want to add a bit.
  • You can "nuke" aka microwave the butter to soften it rather than letting it sit out. It saves time and won't alter the taste. Just make sure you don't melt it.
  • If dough is too soft to handle then cover and chill for 30-60 minutes (15 minutes worked for me).
  • To make Crescents:.
  • Add 1/2 cup (125 ml) ground almonds or hazelnuts to flour mixture.
  • Shape into logs about 1/2 inch (1 cm) thick and 3 inches (7 cm) long.
  • Twist into crescent shapes.
  • When baked and cool, dip ends in melted chocolate.

  • Add together margarine, peanut butter and salt and stir until well mixed.
  • Add in powdered sugar and coffee, blend well.
  • Frost over cake or cupcakes.
  • Enjoy!
