My grandma made this for us as kids all the time. She passed away two years ago and I recently came across a lot of her recipes and wanted to share them with the Zaar world. I hope you enjoy this as much as we did. It's a quick and easy one dish meal. I always fix up a salad to go with it. This recipe has lots of possibilities. You could add green beans and potatoes to the mixture as well.Addition: I have realized that I did leave out an ingredient in the topping. I found the recipe and looked and--sure enough, you need milk.

1 1/2 lbs lean ground beef
1 medium onion (diced)
1 (16 ounce) can creamed corn
1 (14 ounce) can tomatoes (chopped)
2 tablespoons green peppers (chopped)
salt and pepper
1 cup yellow cornmeal
1 cup flour
1/4 cup sugar
4 teaspoons baking powder
1 egg
1 teaspoon salt
1 cup milk

Steps:

  • Brown hamburger, onion and green peppers in pan.
  • Drain the grease.
  • Stir in corn and tomatoes and add salt and pepper to taste.
  • Pour into a 9x13-inch pan.
  • Mix cornbread topping and pour over hamburger mixture.
  • Bake at 425° for 35-45 minute.

½ cup butter
⅔ cup white sugar
2 large eggs
1 cup buttermilk
½ teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
  • Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

1 (8 ounce) package herb seasoned stuffing mix (cornbread or regular)
1 cup boiling water
1/2 cup butter, melted
1 lb ground beef
1 cup shredded cheddar cheese
1 egg, beaten
1/4 cup ketchup
1 tablespoon dried onion flakes
1 teaspoon seasoning salt
1/2 teaspoon dried thyme
1/8 teaspoon black pepper

Steps:

  • Combine stuffing, water, and melted butter; mix well. Reserve 1 cup of stuffing mixture.
  • Press remaining stuffing into 10-inch pie plate to form pie shell.
  • In a heavy skillet over medium heat, brown ground beef until it loses it is no longer pink; remove from heat.
  • Stir in Cheddar cheese, beaten egg, ketchup, onion, salt, thyme, pepper, and the remaining 1 cup of stuffing mixture.
  • Spoon the mixture into pie shell and bake at 375° for 20 to 30 minutes, or until hot and cooked through.

1 pound ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
¾ teaspoon kosher salt
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
1 (28 ounce) can diced tomatoes, drained
1 (15 ounce) can black beans, rinsed and drained
1 ¼ cups buttermilk
1 egg
2 tablespoons vegetable oil
1 ¼ cups cornmeal
¾ teaspoon kosher salt
¾ teaspoon baking soda
1 cup shredded Mexican cheese blend
1 jalapeno pepper, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Spray a large skillet with cooking spray and place over medium-high heat. Saute onion until translucent, 3 to 5 minutes. Add meat, chili powder, cumin, oregano, salt, garlic powder, and cayenne pepper. Stir together and cook until meat is browned and crumbled and almost cooked through, about 5 minutes. TOPPING:
1/2 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar

1/2 cup fat-free milk
1 tablespoon canola oil

Steps:

  • Preheat oven to 425°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans, tomatoes, chili powder and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes., Transfer to an 11x7-in. baking dish coated with cooking spray. For topping, in a small bowl, combine flour, cornmeal, sugar, baking powder and salt. Combine egg, milk and oil; stir into dry ingredients just until moistened.
