The PHILADELPHIA Cream Cheese adds flavor and texture to this old fashioned dessert!

2 cups flour
1 Tbsp. baking powder
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup butter, softened
2 cups sugar
1 tsp. vanilla
6 eggs

Steps:

  • Heat oven to 350ºF.
  • Mix flour and baking powder; set aside. Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, beating after each until blended. Gradually beat in flour mixture on low speed until blended.
  • Pour into 12-cup fluted tube or 10-inch tube pan sprayed with cooking spray.
  • Bake 1 hour or until toothpick inserted near center comes out clean. Cool in pan 10 min. Loosen cake from sides of pan with knife. Invert cake onto wire rack; gently remove pan. Cool cake completely.

1 (20-oz) can crushed pineapple, undrained
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1/2 cup packed light brown sugar
1/2 cup chopped walnuts
1/2 cup butter
1/2 cup evaporated milk
1/2 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • To make the cake, preheat the oven to 350 degrees Fahrenheit.
  • In a bowl, add eggs, pineapple, flour, 1 cup of granulated sugar, baking soda, salt, and 1 teaspoon of vanilla. Mix until well-combined. Pour batter into an ungreased 9x13-inch baking pan.
  • For the topping, combine brown sugar and walnuts. Sprinkle over the cake batter. Bake for 25 to 35 minutes or until a toothpick inserted into the center comes out clean.
  • For the glaze, combine butter, evaporated milk, 1/2 cup of granulated sugar, and a teaspoon of vanilla in a small saucepan over medium-low heat. Stir constantly until the mixture is thin, and the sugar dissolved.
  • Pour glaze over hot cake. Serve either warm or cold. Enjoy!

1/2 cup butter
1 tsp vanilla
3 cups powdered sugar

Steps:

  • Preheat oven to 350° and spray two 9 x 5 baking pans or a 13 x 9 baking dish with non stick spray. Set aside.

This is an eggless, milkless, butterless cake. " A delicious spiced cake that's easy on the budget". I found this recipe in the "Guideposts" magazine (August 2009 issue). The recipe was part of a wonderful article with the same title written by Rosemary Marbach.

1 cup brown sugar, firmly packed
1 1/2 cups water
1/3 cup vegetable oil
2 cups dark raisins
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons water
2 cups flour
1 teaspoon baking powder

Steps:

  • Pre-heat oven to 325 degrees.
  • Combine sugar, water, vegetable oil, raisins, and spices in a saucepan, and bring to a boil. Boil for 3 minutes, stirring frequently. Take pan off heat and let cool for 10 minutes.
  • Dissolve baking soda and salt in 2 teaspoons of water and add to raisin mixture (it will foam).
  • Blend in the flour and baking powder. Mix well.
  • Pour the batter into a greased 9 inch square pan and bake for 55 minutes, or until a toothpick unserted in the center comes out clean.
  • Let cake cool for about 10 minutes before serving.

This cake is something my Grandma made during the depression. I always thought it sounded odd, but it is actually pretty good. My Dad said that as kids (he was one of 9) it was one thing that was always a treat.

1 c brown sugar
1 c raisins
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp cloves, ground
1/3 c shortening (crisco)
1 c water
2 c flour
1 tsp baking soda
1 tsp salt

Steps:

  • 1. In a large sauce pan boil 1 cup water, add first 6 ingredients, boil together until luke warm, stir. Remove from burner
  • 2. In large mixing bowl add all dry ingredients, mix together with fork. Sift into the sauce pan. Mix well.
  • 3. Grease or spray a 9x9 baking dish. Pour mixture in dish, and spread evenly.
  • 4. Bake at 350 for 30-35 minutes. Watch it towards end so it doesn't get too dark. Enjoy! (You might be able to make this gluten free by using a gluten free flour, haven't tried it, but it might work.)

This was my great-grandma's recipe that she gave to my mom when she was young. I've added chocolate chips to it before but they are optional. (In the picture my sister put frosting on it and "decorated" it with pecans for New Years.)
