4 cups chopped pecans, divided
1 cup butter, softened
2-1/4 cups packed brown sugar
4 large eggs, room temperature
2 tablespoons vanilla extract
1 cup all-purpose flour
2-1/4 cups red candied cherries
1-1/2 cups chopped candied pineapple
1/2 cup chopped candied citron
1/3 cup rum

Steps:

  • Sprinkle 3 cups pecans over a greased 15x10x1-in. baking pan., Preheat oven to 350°. Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Gradually add flour to creamed mixture, beating well., Spread batter into prepared pan. Combine candied fruit and remaining pecans. Spread fruit and pecans evenly over creamed mixture; press gently to help mixtures adhere. Bake until a toothpick inserted in center comes out clean, about 1 hour. Sprinkle rum over the top; cool completely in pan on a wire rack. Cut into bars. Store in an airtight container.

1 1/2 c sugar
1/3 c all-purpose flour
1/4 c cocoa, unsweetened
3 large egg yolks, beaten
2 c pet milk (evaporated) or milk
1/2 stick butter
1 pie shell, baked
MERINGUE
3 large egg whtes
3 Tbsp sugar
1/8 tsp cream of tartar or baking powder
NOTE: I LIKE TO USE 4 EGG WHITES, 6 TABLESPOONS (1/3 CUP) SUGAR, 1/8 TSP CREAM OF TARTAR AND A TSP VANILLA TO MAKE THE MERINGUE,

Steps:

  • 1. Put all ingredients (for pie filling) in a saucepan and cook until thickened and bubbly. NOTE: I mix beaten egg yolks and milk together in a saucepan then add dry ingredients and butter; whisk until bubbly and thickened.
  • 2. Pour into cooled pre-baked pie shell.
  • 3. Make the meringue by beating egg whites until stiff. Add sugar one tablespoon at a time.
  • 4. Add cream of tartar or baking powder (and vanilla if desired.)
  • 5. Beat until stiff.
  • 6. Put meringue on top of the pie.
  • 7. Bake at 400 degrees 5-8 minutes or until lightly brown.
  • 8. Cool on wire rack.

1/4 cup caster sugar
2 tablespoons cornflour
3/4 cup milk
100 g dark chocolate, grated
2 teaspoons gelatin
1 tablespoon water
1 tablespoon dark rum or 1/2 teaspoon rum extract
1/2 cup thickened cream

Steps:

  • Beat egg and sugar in small bowl until thick and creamy, stir in blended cornflour and milk.
  • Pour mixture into pan, stir over heat until mixture boils and thickens.
  • Remove from heat, add chocolate, stir until chocolate is melted.
  • Sprinkle gelatine over water in cup, stand in small pan of simmering water, stir until dissolved.
  • Add to chocolate mixture, mix well, cool to room temperature, stir in rum.
  • Beat cream until soft peaks form, fold into chocolate mixture.
  • Pour into pastry shell, refrigerate several hours until firm.

¾ cup white sugar
2 tablespoons self-rising flour
1 tablespoon cocoa powder, or more to taste
2 cups whole milk
2 eggs, separated
1 teaspoon vanilla extract
1 pre-baked pie shell
1 pinch white sugar, or to taste
1 dash vanilla extract, or to taste

Steps:

  • Mix sugar, flour, and cocoa powder together in a bowl until well combined.
  • Mix milk, egg yolks, and vanilla extract together in a separate large bowl. Add flour mixture and blend custard until smooth.
  • Pour custard into a cast iron skillet over medium heat. Cook, stirring continually, until slightly boiling but not popping, about 5 minutes. Cook just until reasonably thickened, 3 to 5 minutes more, and remove from heat immediately. Stir hot custard to smooth out any lumps and pour into the pre-baked pie shell.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Beat egg whites, sugar, and vanilla extract together in a small bowl until peaks start to form. Spread the thick meringue mixture on top of the custard.

3 1/2 ounces jello chocolate pudding mix (cook & serve, not instant)
2 cups milk
1/3 cup chocolate chips
1/2 teaspoon vanilla extract
2 tablespoons butter
1 pie crust

Steps:

  • In a medium saucepan, stir pudding mix into 2 cups milk with wire whisk.
  • Stirring constantly, cook on medium heat.
  • Add chocolate chips while heating, stirring until they are melted. Continue cooking until mixture comes to full boil.
  • Remove from heat; add butter and vanilla.
  • Put lid on pot and let sit for 5 minutes.
  • Pour into your favorite pie crust and refrigerate until set.
  • Serve with whipped cream or cool whip.

Dough for single-crust pie
3/4 cup sugar
5 tablespoons baking cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, beaten
1 teaspoon vanilla extract
3 large egg whites, room temperature
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., In a saucepan, mix sugar, cocoa, cornstarch and salt; gradually add milk. Cook and stir over medium-high heat until thickened and bubbly. Gradually add sugar and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to pie crust. Bake until meringue is golden brown, 12-15 minutes. Cool 1 hour on a wire rack. Refrigerate at least 4 hours before serving.

½ cup white sugar
3 eggs
4 ounces German sweet chocolate, melted, divided
4 ounces semisweet chocolate, melted, divided
1 (8 inch) prepared graham cracker crust
½ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix cream cheese and sugar together in a bowl using an electric mixer. Mix in eggs. Add 1/2 the German chocolate and 1/2 the semisweet chocolate; beat until thick and smooth. Pour into the prepared pie crust.
