GRANDMA'S CHICKEN AND RICE CASSEROLE
This chicken and rice casserole is one of my favorite recipes from my grandmother. It makes great leftover meals, too, perfect for someone with a busy lifestyle.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish with butter.
- Stir chicken, soup, rice, celery, salad dressing, eggs, lemon juice, and onion together in a large bowl. Pour into the prepared baking dish. Sprinkle with cornflake crumbs.
- Bake in the preheated oven for 45 minutes. Sprinkle with almonds and bake until bubbly, about 15 minutes longer.

GRANDMA'S CHICKEN CASSEROLE
From Grandma Smith. From this recipe, I make one large casserole and one 8-inch round casserole. I think the recipe could be halved easily, but when making for myself, I freeze one casserole for later use. Freezes well.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place chicken breasts in a large pot; cover with water. Season with salt and pepper and bring to a boil; reduce heat, cover, and simmer until chicken is no longer pink in the center, about 15 minutes. Drain and let cool, 5 to 10 minutes. Chop into small pieces.
- Mix chicken, canned vegetables, chicken soup, sour cream, water chestnuts, onion, and Cheddar cheese in a large bowl. Pour into a large baking dish. Sprinkle crushed crackers over the top and dot with butter.
- Bake in the preheated oven until the filling starts to bubble and the topping browns, about 30 minutes.

MAMAW'S CHICKEN AND RICE CASSEROLE
I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

- Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
- Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.
- Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.

Steps:
- 1. cut chcken nto squares as small as possible. Then saute n skllet till white.
- 2. pour soup, milk, and seasonings into crock-pot. turn on high. cook while chicken turning white after chicken is white pour into crock. cook for 30-45 mins.
- 3. after 30-45 mins add rice, cook another 20-30 mins. check for rice tenderness. if not enough fluids in crock with periodic checks add WATER 1/4 cup at time till satisfied if too thin add more milk.
- 4. after rice tender cool if want ENJOY!!!!! ADD MORE SEASONINGD AS WANTED OR NEEDED

- Preheat oven to 375 degree. Combine undiluted soup, water, rice, 3/4 tsp dill, and black pepper in a 13x9 dish, mix well.
- Remove skin from chicken pieces, discard skin.
- Arrange chicken pieces on top of rice mixture. Cover tightly with aluminum foil, bake for 45 minutes.
- Melt butter in small saucepan over low heat, remove from heat. Add crushed crackers, paprika, and remaining dill to butter. Stir until blended.
- Sprinkle cracker mixture on top of chicken pieces, bake (uncovered) until chicken is tender and rice cooked (approx. 5-10 mins longer). Season to taste with salt and pepper.

- This is a great use for leftover rice.
- Optional: Sprinkle a little Mrs. Dash on the top for added flavor.

- Saute rice in oil until rice begins to brown.
- Add Onion and cook 2 to 3 minutes.
- Pour in tomato sauce, water and add chicken bouillon.
- Bring to a boil.
- Turn heat to a medium-low. Cover with a lid and cook 20 minutes.
- Open and sprinkle with black pepper.
- Let sit about 10 minutes before you serve to absorb any excess fuilds.
