HEALTHY BLUEBERRY-BANANA BREAD
I came up with this recipe when I had a lot of bananas and fresh blueberries to use up. I didn't want to make my usual fattening blueberry muffins or banana bread, so I experimented and came up with this instead. We thought it was pretty good for being low in fat!

Steps:
- Mix together dry ingredients until well combined.
- In a separate bowl, mix eggs, applesauce, and bananas.
- Stir banana mixture into flour mixture, and then add blueberries.
- Stir carefully (the blueberries crush easily).
- Bake in a greased loaf pan for approximately one hour at 350°F.
- Bread is done when a toothpick comes out clean.
GRANDMA'S APPLESAUCE BREAD
Grandma Carr made quick breads and enjoyed them, especially for breakfast, year round. The flavor depended on what she had on hand but all of them were good! Here's her applesauce version.

Steps:
- 1. Pre-heat oven to 350 degrees. Grease an 8 by 4 inch loaf pan. Put flour, brown sugar, cinnamon, baking powder, baking soda and salt in the bowl of a mixer and beat on low just to combine.
- 2. Add the applesauce and egg. Mix briefly to combine but do not mix for more than a minute or so. Stir in the nuts by hand. Pour into the prepared loaf pan.
- 3. Bake for 45 - 50 minutes at 350 degrees. Cool in pan on a rack for 20 minutes, then remove from pan and let cool completely.
- 4. NOTE: I recently made this recipe with blueberry flavored applesauce and it was awesome. I plan to try the peach or raspberry flavors, too. :)

- Place bananas in a large bowl and mash with electric mixer.
- Stir in sugar and let stand 15 minutes.

- 1. Preheat the oven to 375 degrees.
- 2. Put butter and sugar together in a medium bowl and beat together until creamed.
- 3. Add the baking powder, the flour, and the salt. Stir together. Remove 1/4 cup, add the cinnamon, and set aside. This will be the crumb topping.
- 4. Beat the egg in a 1 cup measure and add the sour cream. Add enough milk to make 1 cup.
- 5. Add the milk and egg mixture to the batter. Add the vanilla, and mix well. Coat the blueberries with flour and fold them into the batter.
- 6. Pour the batter into a greased muffin tin. Sprinkle the crumb topping over each muffin, and bake for 25 minutes.

- 1. For the crust, use your favorite recipe or try this one... In a bowl add the flour, salt, and shortening. Use 2 table knives or a pastry cutter to cut the dough.
- 2. Add the water and then cut the ingredients until the dough comes together.
- 3. Divide into 2 balls.
- 4. Roll each ball out each large enough to fit the pie pan.
- 5. Place the bottom crust into the pie pan (traditional, not deep dish) and trim the edges.
- 6. For the pie filling, combine berries, sugar, flour, salt, and lemon juice.
- 7. Fill an 8 or 9-inch pastry-lined pie pan with the blueberry mixture.
- 8. Dot top with butter.
- 9. Then add the top crust.
- 10. Slit the top.
- 11. Optional before baking - using a pastry brush, brush the top with milk.
- 12. Sprinkle the top with granulated sugar.
- 13. Bake in a 375 oven for 55-60 minutes.
- 14. Let the pie cool.

- Bag the bananas and seal the baggie, getting as much air out as possible. Then, using your hands, just start squishing and squashing, mashing the bananas to a pulp. "Smoosh" the bananas out of the baggie and into the Bread Machine's Pan.
- Put about a 1/4 cup of the Bread Flour in a bowl and stir the Blueberries around in it. This helps keep the Blueberries from clumping together in the dough.
- Insert the Bread Pan into the Machine and close the lid. Set the Machine for a Medium Crust, 2 Pound Loaf of Wheat Bread.

- Preheat oven to 375 degrees.
- Cream together butter, sugar and eggs. Then stir in flour, baking powder, vanilla and milk. Carefully fold in blueberries.
- Grease a regular-sized muffin pan. Fill muffin cups 2/3 full.
- Sprinkle filled muffin cups with sugar.
- Bake for 20 minutes or until a toothpick inserted into the center of one muffin comes out clean, and muffin tops are lightly golden.
- Remove from oven and set pan on a wire rack to cool for 15-20 minutes before removing muffins from the pan.
- Store in an air-tight container. Muffins will keep for 2-3 days.

- In large bowl, mix all ingredients except blueberries for about 30 seconds.
- Fold in frozen berries.
- Pour into 2 greased 8 1/2x4 1/2x2 1/2 loaf pans that have been greased on the bottoms only.
- Bake in 350º oven for 55-60 minutes, til toothpick inserted in center comes out clean.
- Cool slightly, loosen sides with knife from sides of pan, turn out onto rack to cool.
- When cool, wrap tightly with plastic wrap, keep refrigerated.
- Best the next day!
- *Ialways bake blueberries frozen in breads and muffins so they hold up perfectly, and you don't end up with a hollow blue hole, lol.
