Granny's Banana Cream Pie (No Sugar Added Version) image

This is a modification of reatherbewimmin's recipe, but using mashed bananas as sweetener instead of sugar. ( Original Version Here: http://www.food.com/recipe/grannys-banana-cream-pie-30946 ). The pie crust is Laurie's No Roll Pie Crust (http://www.food.com/recipe/my-no-roll-pie-crust-51537) ... but again, with no sugar. Cooking time includes time for the pie to cool in the fridge.

1 1/2 cups flour
1 teaspoon salt
1/2 cup oil
2 tablespoons milk
2 bananas, mashed
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups milk
3 egg yolks, lightly beaten
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon vanilla extract
3 medium firm bananas
8 ounces heavy whipping cream

Steps:

  • Make the Pie Crust:.
  • Mix flour and salt together with a fork in a pie pan.
  • Make a well in the center and add the oil and milk.
  • Mix with a fork til it makes a ball.
  • Flatten and press into the pan in pie crust shape and flute the edge.
  • Bake at 375 for 10-12 minutes until golden.
  • Make the Filling:.
  • Blend the mashed bananas with the flour, salt and 1/4 of the milk.
  • After well mixed, add the remaining milk and blend until mixed thoroughly.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Boil for 2 minute.
  • Remove from heat.
  • Stir in a small amount of the mixture from the saucepan into the egg yolks to warm up the yolks, so you don't end up with scrambled eggs.
  • Return everything to the saucepan.
  • Cook for 2 minutes, stirring constantly.
  • Remove from heat and add butter and vanilla; mix well; allow to cool slightly.
  • Slice the bananas and place evenly in pie crust.
  • Pour cream mixture over bananas.
  • Place in fridge to cool.
  • Make the Topping:.
  • Whip the whipping cream with an electric beater until you have whipped cream. :).
  • Top the filling with whipped cream once the filling has cooled.

3 egg yolks, slightly beaten
2 tablespoons butter

Steps:

  • Have baked 9-inch pie shell ready. In a large saucepan, scald the milk. In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk. Over medium heat, stirring constantly, cook until thickened. Cover and, stirring occasionally, cook for two minutes longer. In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture. Cook for one minute longer, stirring constantly. Remove from heat and blend in the butter and vanilla. Let sit until lukewarm. When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas. If desired, make a meringue (you'll have 3 leftover egg whites) to top the pie, or just let the pie cool until serving.

1 (21 ounce) can blueberry pie filling

Steps:

They can be made any time of the year-bring them to parties, keep them for your family, save one for yourself, save 10 for yourself, whatever you want! I promise everyone will love this delicious balance of sweet but not too sweet. Eat hot, eat cold, eat these whenever. They can be stored in the freezer or in a container.

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup mashed ripe banana
½ cup sour cream
1 teaspoon vanilla extract
1 cup margarine

1 cup chopped walnuts
½ cup unsalted butter
1 cup brown sugar
¼ cup milk, or more as needed
2 ½ cups powdered sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
  • Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
  • Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.

  • Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
  • Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
  • Spread frosting on cooled cookies.

The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! 4 tablespoons flour
2 tablespoons cornstarch
3 egg yolks
1/2 cup sugar
1/8 teaspoon salt

1 deep dish pie shell, baked & cooled

Steps:

  • TO MAKE FILLING: Mix flour and constarch with 1/3 cup cold milk to make a thin smooth paste, and set aside.
  • In a separate bowl, beat egg yolks, then add sugar and salt and beat well.
  • In a medium saucepan, scald remaining milk, stirring constantly.

Dough for single-crust pie
3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
3 medium, firm bananas
Whipped cream, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes.
