If you like pumpkin pie you're going to love this carrot pie. Sweet, creamy, perfectly spiced and it's easier to make!

Number Of Ingredients 13

pre-baked and cooled 9" pie crust
1 1/2 pound carrots
2 tablespoon butter (softened)
1/2 cup sugar
1/2 cup brown sugar (packed)
2 large eggs
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ginger
1 teaspoon vanilla
3/4 cup half and half
1 tablespoon flour

Steps:

  • Peel and chop carrots.
  • Place carrots in large pot, cover with water and bring to a boil. Reduce heat to medium and simmer until carrots are tender, about 25 - 30 minutes.
  • Drain water. Return carrots to pot. Cook carrots over low heat, stirring constantly, for a few minutes, to steam off all excess water.
  • Puree carrots and butter until absolutely smooth. You can do this in a food processor, blender, food mill or with a ricer.
  • I use my food processor. After the carrots are smooth, mix in sugars, eggs, cinnamon, nutmeg, salt, ginger, vanilla, half & half and flour until well combined.
  • Pour mixture into prebaked & cooled 9" pie crust.
  • Bake at 350° for 50 - 60 minutes or pie is set and toothpick inserted in center comes out clean.
  • Cool on wire rack. Refrigerate for 1-2 hours before serving. Serve with whipped cream and enjoy :)

My Grandma use to make this every Thanksgiving and Christmas and now every since she passed years ago I've been the one to make it in my family. This pie is a lot like pumpkin pie (which i don't really like )but not it's not so rich. You will never no its made from carrots.

Number Of Ingredients 7

2 c carrot pulp (see below on how to make it)
1/2 tsp pumpkin pie spice
1/4 tsp cinnamon
3/4 c sugar
2 eggs
2 c evaporated milk
1 dash(es) salt

Steps:

  • 1. To make carrot pulp : Peel and slice 3-4 lb. of carrots ; (I have used the baby carrots and don't have to peel or slice ) put carrots in a kettle with enough water to just be level with the carrots ; Add 2 Teas. baking soda ; it prevents too much foaming when cooking.
  • 2. Boil carrots until tender ; Drain.
  • 3. Run carrots through a food sieve (cone) to make the pulp. This will remove any bad pulp you don't want ; like missed peel and the stringy texture in the carrots.
  • 4. Mix up all the above ingredients in a large bowl.
  • 5. Pour into a prepared raw pie crust.
  • 6. Bake on center rack in a pre-heated oven @ 350 deg. for 45-60 minutes or until a tooth pick comes out clean when inserted in the center . Cooking time varies depending on your oven. Let pie completely cool before serving.
  • 7. Note: I double this recipe and get 3 pies when using 9" deep dish frozen pie crusts. I cooked up 15 pounds of baby carrots and got 12 pies out of all the pulp.

GRANDMA MINNIE'S CARROT RING

When I was growing up, holidays in the Kahan house were celebrated with family meals made by my Russian grandmother, Grandma Minnie. One of her most beloved recipes was her savory carrot cake, called Grandma Minnie's Carrot Ring. Similar to cornbread's sweet-savory combination of flavors, it is delicious served mounded with Braised Romano Beans with Salmoriglio or your favorite hearty winter vegetable. (Note: please plan ahead for overnight refrigeration of batter.)

7 ounces carrots
1 cup unsalted butter, plus additional to butter the mold
1/2 cup dark brown sugar
1 large egg
1 tablespoon water
1 1/2 cups all-purpose flour, plus additional for rolling
1/2 tablespoon baking soda
1 teaspoon baking powder
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Peel the carrots. Use the coarse holes on a box grater to grate them; place them in a large bowl.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and brown sugar together. Add the egg, water, and grated carrots, and continue mixing on medium to incorporate. Add the flour, baking soda, baking powder, nutmeg, cinnamon, and salt; mix on medium-low until the batter comes together. Remove from the mixer and set aside.
  • Butter a 9½-inch Savarin ring mold. Spread the batter evenly in the buttered mold; wrap tightly with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F. Remove the carrot ring from the refrigerator and let it temper for 30 minutes. Bake in the preheated oven for 1 hour. Remove the carrot ring from the oven and allow it cool for a few minutes.
  • After the carrot ring has cooled slightly, unmold it onto a large, circular platter. Serve with vegetables mounded in the center, if you wish.

Yum! This is not your average pecan pie. It's a cross between a carrot cake and a pecan pie. It's a match made in pie heaven! The crunchy brown sugar and not topping is the perfect touch. It tastes like fall with every bite.

1 prepared pie crust
8 large carrots, cooked and pureed
3 large eggs, beaten well
1/2 tsp each: ground cloves, ground allspice, ground ginger, ground nutmeg
1 1/2 Tbsp ground cinnamon
1/2 c brown sugar, firmly packed
1 can(s) (14-ounces) sweetened condensed milk
PECAN TOPPING
3/4 c brown sugar, firmly packed
1/3 c butter, softened
1 1/3 c pecans

Steps:

  • 1. Combine carrots, brown sugar, sweetened condensed milk, eggs, spices. Beat for 3 minutes.
  • 2. Pour into prepared pie crust.
  • 3. Mix brown sugar, butter, and pecans. Sprinkle on top of pie.
  • 4. Bake 25 minutes, 375 degrees while covered with tin foil. Remove tin foil and bake 20-25 minutes.
  • 5. It is done when a knife inserted in the center comes out clean.

1-1/2 cups canola oil
4 large eggs, room temperature
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 cups shredded carrots (about 6 medium)
1 cup chopped walnuts
FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Beat first 4 ingredients until well blended. Whisk together flour, baking soda, salt and cinnamon; gradually beat into sugar mixture. Stir in carrots and walnuts., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack; cool completely., For frosting, beat cream cheese and butter until smooth. Gradually beat in confectioners' sugar. Spread over cake.

8 large carrots (cooked and pureed)
3 large eggs (beaten well)
2 1/4 c milk
1/2 tsp salt
1/2 tsp each: ground allspice, ground cloves, ground ginger, ground nutmeg
1 1/2 Tbsp ground cinnamon (or to taste)
1 1/2 c brown sugar, firmly packed
PIE CRUST

Steps:

  • 1. Combine carrots, eggs, milk, brown sugar and seasonings in mixer bowl. Beat 3 minutes. Pour into pie shell. Bake at 450 degrees for 15 minutes. Reduce temperature to 325 degrees. Bake for 35 more minutes. It is done when a clean, dry knife inserted in center comes out clean.
  • 2. This is similar to a pumpkin pie... but not quite. *** Cover the edges of the pie crust with aluminum foil, this helps prevent the crust from getting too dark.

1 cup real butter

  • drain the carrots and mash them in large bowl.
  • in a separate bowl mix the salt, allspice, cinnamon, wheat germ,baking soda, and flour.
  • in another bowl whip the eggs til smooth.
  • add the sugar and the vegetable oil and cream together.
  • add the flour mixture and the egg mixture to the carrots, whip til mixed well.
  • add the buttermilk and the walnuts and mix again.
  • bake at 350 degrees in a well oiled and floured cake pan for 50 minutes.
  • cool completely.
  • mix the softened butter, softened cream cheese, vanilla, sugar, and lemon.
  • frost the cake and enjoy.
  • ps. i have been known to add another box of cream cheese and another

4 eggs
1 1/2 cups vegetable oil
2 teaspoons cinnamon

  • Bake for 35-40 minutes or until knife comes away clean from center of cake.
  • While cake is baking, prepare the frosting.
  • Cream together the first 3 ingredients.
  • Slowly incorporate the powdered sugar until you reach a frosting of nice consistency (you may find you need a little less powdered sugar).
  • When cake is done, let it cool. Remove from pan and continue to let it cool completely on a wire rack.
  • When cake has COMPLETELY cooled, frost it.

I don't know who Grandma Rose is but if she is a "grammy", it must be good. This recipe came in a flyer from "The Chosen People" featuring "The Fall Feasts of Israel." This recipe is for a sweet snack for Rosh Hashanah. It has been a three-generation recipe in Grandma Rose's family. It probably goes back even further, as most family recipes do. Perhaps Moses mom baked it, considering that most of the ingredients were around in Bibical times.

1 cup strong brewed coffee
1 3/4 cups honey
4 eggs
4 tablespoons vegetable oil
1 1/2 cups dark brown sugar
3 1/2 cups flour

  • Alternately stir the dry flour mixture and the wet honey mixture into the egg mixture.
  • Pour the batter into the loaf pans and bake for 70 minutes or until the cakes are springy to the touch.
  • Let cool for 10 minutes, then turn onto wire cooling racks to cool.
  • Wrap tightly in foil and let sit for 24 hours, so that the flavor of the honey has time to develop.
