NORWEGIAN BUTTER COOKIES (SERINAKAKER)
These Norwegian Butter Cookies (Serinakaker) are delicate and buttery, similar to shortbread but less crumbly, with melt-in-your-mouth almond and vanilla flavors. They are the PERFECT cookie, especially if you're looking for a new Christmas cookie recipe!

- Preheat your oven to 350 degrees F and line one or two baking sheets with parchment paper.
- In a large bowl, mix together softened butter (1.5 cups), baking powder (1/2 teaspoon), kosher salt (1/2 teaspoon), and flour (4 cups) with an electric hand mixer until well blended and the texture resembles coarse sand.
- Add the sugar (1.5 cups) and mix until well combined.
- Add the vanilla extract (2 teaspoons) and almond extract (1/2 teaspoon) and two of the eggs, then mix until well combined.
- Using a small cookie scoop, measure out equal portions of the dough and roll into balls. Place on baking sheet and, using your thumb, press on the center of each ball to create a small indentation (if you find that the dough is too sticky, keep a small bowl of water next to you to dip your thumb into every so often).
- Beat remaining egg in a small bowl and brush the tops and sides of each indented cookie with the egg. Sprinkle with the almonds.
- Bake for 16 minutes, or until cookies are only JUST beginning to brown.

- Mix the flour, baking powder and a pinch of salt together. Add the butter and rub in with your fingers until the mixture resembles coarse crumbs. Mix in all the icing sugar and the vanilla sugar, then add the whole egg and mix until just combined, but be careful not to overmix.
- Transfer the dough to a food bag and put in the fridge to chill for about 1 hr.
- Heat the oven to 180C/160C fan/gas 4. Roll the chilled dough into about 40 even balls (around 15g each). Arrange the dough balls over two baking sheets lined with baking parchment, leaving space between each for spreading. Using the back of a fork, press the balls down gently in the middle, so they spread to a diameter of about 3cm (they will spread more as they bake). If you prefer flat cookies, use the bottom of a glass.
- Brush the cookies with the beaten egg white and sprinkle over the pearl sugar or almonds. Bake for 10 mins, or until just cooked through (the cookies should not be fully browned, just lightly golden at the edges). Remove from the oven and transfer to wire racks to cool completely.

- 1.Preheat oven to 375 degrees 2.Cream butter until light and fluffy. 3.Add sugar and beat well. 4.Add eggs and vanilla and mix. 5.Add flour and salt and beat until combined. 6.Drop by small teaspoons onto baking sheet lined with parchment paper spacing about 2 inches apart. 7.Bake for 8 to 10 minutes and allow to cool on sheet before removing to a rack to finish cooling. 8.Note: I press the tops down slightly before baking and sprinkle with lemon sugar. Or you can leave and dust with powdered sugar once they are cool.

Steps:
- Preheat oven to 350 degrees F.
- In large mixing bowl or electric mixer beat; butter, egg, vanilla, and sugar.
- Then add 2 1/2 cups of flour to mixture and mix until creamy.
- Roll out dough on flat surface until about 1/2 inch thick.
- Use cookie cutters of your choice to cut the dough.
- Place the dough on a greased cookie sheet, and bake for 8-10 minutes.
- After removing the cookies from the oven, let them cool.
- Frosting and sprinkles are opptional but recommended by Grandma herself!

- Cream together the sugar and butter, then add egg and vanilla mixing well. Sift together the flour, baking soda, nutmeg, and baking powder. Then combine with the creamed mixture alternating with the buttermilk. Cover tightly and allow to rest overnight at room temp. Preheat oven to 475. On floured work surface and with floured hands take a T of the dough and roll into a thin roll. (Dough will be very sticky) Place roll on ungreased baking sheet in the form of a figure 8 or pretzel. Bake for approx. 5 minutes or until just brown on the bottoms. After removing from the oven, spread with cream, milk, or butter and sprinkle with powdered sugar. Then transfer to a wire baker's rack to finish cooling.

- In a large bowl, cream shortening and sugar; add eggs and vanilla. In a small bowl, combine buttermilk and baking soda. Stir in half the buttermilk mixture. Combine flour, nutmeg, salt and baking powder. Stir in dry ingredients alternately with buttermilk mixture. Dough will be tender. With a rolling pin, roll dough to 1/2-inch thick, using generous amounts of flour. Cut out cookies with a round cookie cutter. Bake on a greased cookie sheet. Bake for 10 minutes (I baked mine 12 minutes and they were super soft) at 350 degrees. Do Not Overbake. The cookies should be soft. Cool completely and spread with pink icing.

My Grandma and Mom made these cookies often when I was growing up and I have been making them for my kids for 20 years! I have tried many other peanut butter cookie recipes, but this one is still our favorite. Crispy, but a light texture . . . they almost melt in your mouth!

- Cream butter and peanut together in a large bowl.
- Add sugars and eggs, mix well.
- Sift together dry milk, flour, baking powder, baking soda and salt, stir into butter mixture.
- Let dough stand 15 minutes.
- Roll into balls, about the size of a walnut and place on a slightly greased baking sheet.
- Flatten with a fork, dipped in flour, criss-cross fashion.
- Bake at 375 degress for 10-12 minutes.
- Watch closely and remove when tops just start to brown.
- Wait about 5 minutes before removing from baking sheet. Cool on racks.

- Mix well with a spoon.
- Shape dough into 1-inch round balls.

- Bring sugar, butter, milk and cocoa to a boil for 1 minute.
- Then add peanut butter and vanilla. When peanut butter is melted, add quick oatmeal. Stir together.
- Drop by tsp. on wax paper as fast as possible. Cool and serve.
