GRANDMA'S ZUCCHINI BREAD

This is a family recipe that was taught to us by Grandma Betty. We always shredded the zucchini in the late summer and would freeze it for making this at Christmas time for the family. Grandma would make sure each family would get a loaf. I now carry that tradition by giving as Christmas presents to family and friends.

WET MIX
4 1/2 c sugar
2 c oil
4 c zucchini
2 Tbsp vanilla extract
6 large eggs
DRY MIX
2 c walnuts (optional)
6 c all purpose flour
2 tsp salt
2 tsp baking soda
2 1/2 tsp baking powder
2 tsp nutmeg
2 Tbsp cinnamon

Steps:

  • 1. Preheat oven to 350 Grease and flour glass loaf pans (3-4 pans)
  • 2. Mix Oil , Sugar , Zucchini and vanilla together.
  • 3. Beat Eggs well and then add to oil , sugar mix .
  • 4. Mix and then sift dry ingredients together. Slowly add dry mix to wet mix. Mix until no lumps remain .
  • 5. Fill glass loaf pans (greased and floured) to about 2/3 full.
  • 6. Bake at 350 for 1 hour or until centers are done. I usually insert a butter knife and if it comes out clean , it's done. Let cool in pans.

Grandma gave me her recipe card in 1990 ... a recipe cut of some newspaper years before. It was yellowed when she gave it to me 14 yrs ago. This is quick and delicious! If my kids new there was a vegetable in it would they be surprised!!

3 eggs
1 cup oil
2 cups sugar
2 cups peeled and grated zucchini
2 teaspoons vanilla
3 cups all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 teaspoons cinnamon

Steps:

  • beat together eggs, oil, sugar.
  • add and mix well: zucchini, vanilla, flour, baking powder, baking soda, salt, cinnamon.
  • pour into two pans sprayed with non-stick cooking spray.
  • Bake at 350* for one hour.
  • Makes 2 loaves.
  • (prep time includes peeling& grating zucchini).

This super easy zucchini bread is so moist and chocolaty that it's easy to forget zucchini is in it! My husband even loves it and he's never been a fan of zucchini!

2 ½ cups all-purpose flour
4 tablespoons cocoa powder
1 teaspoon salt
1 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon baking powder
1 ¾ cups white sugar
½ cup butter, softened
½ cup vegetable oil
1 teaspoon vanilla extract
3 eggs
1 (12 ounce) package semisweet chocolate chips
2 cups grated unpeeled zucchini
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two loaf pans.
  • Combine flour, cocoa, salt, baking soda, cinnamon, and baking powder in a medium bowl and mix together. Set aside.
  • Cream sugar, butter, oil, and vanilla extract together in a large bowl with an electric mixer until smooth. Add eggs, one at a time, until mixed. Mix the dry ingredients slowly into the sugar mixture on medium speed until incorporated. Gently add chocolate chips, zucchini, and walnuts with a spoon. Pour batter equally into the prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into each loaf comes out clean, 40 to 50 minutes. Don't overcook.

1 cup vegetable oil

2 cups zucchini, grated (not peeled)
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
3/4 teaspoon baking powder
1 teaspoon vanilla
1 cup walnuts, finely ground

Steps:

  • Preheat oven to 350
  • In large mixing bowl, beat eggs & gradually add sugar, then oil.
  • Combine dry ingredients, then add to egg mixture, alternately with Zuchini.
  • Add nuts & vanilla.
  • Pour into 2 loaf pans & bake on lowest rack for 55 minutes or until done.
  • Let stand for 10 minutes then turn to rack to cool.
