GRANDMA'S BAKED BEANS

Grandma's Baked Beans image

Grandma Smith makes the best baked beans ever. She is not good about sharing her recipes, however. She gave me these ingredients but no proportions. So here is my best guess.

Provided by Snowpeas

Categories     Beans

Time 1h5m

Yield 56 ounces, 12 serving(s)

Number Of Ingredients 4

56 ounces pork and beans (van camp's)
1/2 cup brown sugar
1/3 cup ketchup
1/2 lb bacon

Steps:

  • Mix the beans, brown sugar and ketchup in a baking dish.
  • Pull the bacon apart and place on top of the beans.
  • Bake at 350 degrees until bacon is done and beans are bubbly. About 1 hour.

GRAMMY CARL'S RULE FOR BAKED BEANS

Grammy Carl's Rule For Baked Beans image

Provided by Nancy Fuller

Categories     side-dish

Time 16h

Yield 12 to 14 servings

Number Of Ingredients 7

1 pound dried navy beans
8 ounces salt pork
1 large onion, chopped
3/4 cup molasses
1/2 cup ketchup
1 teaspoon dry mustard
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl or pot with water to cover and soak at room temperature overnight.
  • The next day, dice half the salt pork and leave the other half in 1 piece. Drain the beans and put them in a large Dutch oven with the whole piece of salt pork and enough water to cover, about 1 quart. Bring to a boil over medium heat, cover, and simmer until soft, about 1 1/2 hours. Drain the beans, reserving 2 cups cooking liquid.
  • Preheat the oven to 325 degrees F. Put the diced salt pork in another large Dutch oven (or clean the first one) and cook over medium-high heat, stirring occasionally, until translucent and slightly crispy, 3 to 5 minutes. Add the onion, molasses, ketchup, dry mustard, cooked beans and enough of the reserved cooking liquid to cover the beans. If necessary, add more water to cover the beans.
  • Bake, covered, until the beans are soft to the tooth and most of the liquid has been absorbed, about 2 hours. When finished, season with some salt and pepper and serve hot.

THE BARON'S MOTHER'S (MRS. MARY KIRK'S) FROM-SCRATCH BAKED BEANS

The Baron's Mother's (Mrs. Mary Kirk's) from-Scratch Baked Beans image

Provided by Food Network

Time 17h5m

Number Of Ingredients 9

1 pound navy beans or Great Northern pea beans
1/2 medium onion, diced
1/2 cup dark brown sugar
1/4 pound bacon square (smoked hog jowls), diced
1/3 cup sorghum
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt

Steps:

  • Preheat oven to 275 degrees. Wash and clean the beans, then place them in a bowl and cover with water. Let soak overnight, adding more water if necessary. Drain the beans and wash again. Put beans in a saucepan, cover with fresh water, and bring to a boil. Boil until the beans are soft, then drain, reserving the broth. Layer the beans, onions, sugar, diced bacon square and all other ingredients in a bean pot or ovenproof dish, adding bean broth to bring beans to desired consistency. Bake uncovered for 5 to 8 hours, stirring occasionally. If beans seem to be getting too brown, put on cover while baking.

Number Of Ingredients 10

2 pounds dried navy beans, soaked overnight in cold water and drained
1 onion, coarsely chopped
1 garlic clove, minced
3/4 cup light molasses or sorghum syrup
3/4 cup light brown sugar

1 1/2 teaspoons salt
1 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard
1/2 pound slab bacon in one piece

Steps:

Bring to a simmer and cook until the skins on the beans curl up when you blow on them, about 30 minutes. 2. Preheat the oven to 300°. Stir the onion, garlic, molasses, brown sugar, soy sauce, salt, Worcestershire and mustard into the beans, then nestle in the bacon. Cover and bake for 3 hours, until the beans are tender, stirring occasionally and adding water as needed to cover the beans by 1/2 inch. 3. Stir in the Burnt Ends (if using), then bake the beans uncovered about 11/2 hours longer, until richly browned on top. Remove the bacon piece, chop into cubes and return to the beans before serving. Can be made up to 3 days ahead
