4 1/2 cups sugar
Pinch salt
2 tablespoons butter
1 (12-ounce) can evaporated milk
2 cups coarsely chopped pecans
1 pint (1 jar) marshmallow cream
12 ounces semisweet chocolate
12 ounces German's sweet chocolate

Steps:

  • In a heavy saucepan over medium heat, bring the sugar, salt, butter and evaporated milk to a boil. Boil for 6 minutes.
  • Meanwhile, place the pecans, marshmallow fluff and chocolate in a large bowl. Pour the boiled syrup over the chocolate mixture. Beat until chocolate is all melted.
  • Spray a 15 1/2 by 10 1/2 by 1-inch jelly-roll pan with a nonstick cooking spray and pour fudge into pan. Let harden at room temperature before cutting into 1-inch squares (can be placed in the refrigerator or freezer to speed hardening process).

4 1/2 cups white sugar
1 pinch salt
2 tablespoons butter (no substitutions)
1 (12 ounce) can evaporated milk (NOT sweetened condensed milk)
2 cups chopped nuts (any kind)
12 ounces semi-sweet chocolate chips
12 ounces hershey chocolate bars, chopped into small pieces
1 (1 pint) jar marshmallow cream

Steps:

  • Butter 2 (9 x 9") baking pans
  • Place chocolate chips, broken chocolate bar pieces, marshmallow cream and nuts into a large mixing bowl; set aside
  • In a 4-quart saucepan, combine sugar, salt, butter and evaporated milk, stir over low heat until the sugar dissolves; bring to a boil, cook for 6 minutes, stirring constantly (set a timer for 6 minutes, and start the timer when mixture is at a FULL BOIL, this is very important!) Pour the boiling syrup mixture over the ingredients in the bowl, beat with a wooden spoon until all the chocolate is completely melted
  • Separate into the two prepared pans Let stand a couple of hours before cutting
  • Recipe variation (if desired): Gently stir in 1/2 cup Skor toffee pieces prior to pouring in to the greased pans Then gently press 2 tbsp toffee pieces in the top of fudge in the pan.

4 teaspoons plus 1/2 cup butter, divided
4-1/2 cups sugar
1 can (12 ounces) evaporated milk
1 teaspoon salt
16 ounces German sweet chocolate, chopped
2 cups semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
2 jars (7 ounces each) marshmallow creme
4 cups chopped pecans or walnuts, toasted
2 teaspoons vanilla extract

Steps:

  • Line two 13x9-in. pans with foil and grease the foil with 4 teaspoons butter. In a heavy Dutch oven, combine sugar, milk, salt and the remaining butter. Bring to a boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage)., Remove from the heat. Stir in chopped German chocolate and the chocolate chips until smooth. Fold in the marshmallow creme, pecans and vanilla. Spread into prepared pans., Refrigerate for 1 hour or until firm. Using foil, lift fudge out of pans. Discard foil; cut fudge into 1-in. squares. Store in airtight containers.

Mix the following in a large bowl:
2 large Hershey bars (9¾ oz), chopped
1 8-oz jar Marshmallow Crème
1 12-oz bag Chocolate Chips
1 pkg Chopped Nuts - about ½ pound
(you can also use mini marshmallows, or both)
1 Tbsp Vanilla
In a Saucepan, combine the following:
4½ C. Sugar
1 large can Evaporated Milk

Steps:

  • Bring mixture to a boil and cook gently to 237° - about 8 minutes - STIRRING CONSTANTLY! Pour hot mixture over the chocolate mixture in the bowl. Stir until melted. Pour into greased or buttered pans - will be about ½" - ¾" thick. Cut into bite-sized pieces.

12 ounces canned evaporated milk
12 ounces semisweet chocolate, broken into small pieces (may substitute morsels)
12 ounces German sweet chocolate, broken into small pieces
1 pint marshmallow cream
2 cups chopped nuts

Steps:

  • 1. Line a 12 1/2- by 17 1/2-inch baking sheet with waxed or parchment paper.
  • 2. Combine the sugar, salt, butter and evaporated milk in a medium saucepan over medium-high heat. Bring to a boil, stirring to form a smooth syrup, then remove from the heat.
  • 3. Combine the semisweet chocolate, German sweet chocolate, marshmallow cream and nuts in a large heatproof bowl. Pour the just-boiled syrup over the ingredients in the bowl. Stir until the chocolate has melted and the ingredients are well incorporated. Pour into the pans, spreading the mixture evenly into the corners. Let stand for a few hours before cutting into pieces.
  • 4. Store in an airtight container at room temperature.
  • My Note: IT IS SWEET! The kids like it a lot, but too sweet for me.

  • Boil sugar, salt, butter, and evaporated milk together for 6 minutes. Remove from heat.
  • While mixture is still hot, add semisweet chocolate chips, German chocolate, and marshmallow fluff.
  • Beat together by hand until all the chocolate is melted.
  • Refrigerate until set. Cut into small squares.

1 pinch salt
1 2/3 cups evaporated milk (one 12 ounce can)
2 tablespoons butter
2 cups semisweet chocolate pieces
3 (4 ounce) semi-sweet chocolate baking squares
1 pint marshmallow creme (two 7 ounce jars)
1 teaspoon vanilla extract
2 cups chopped pecans

Steps:

  • In a large saucepan, combine the sugar, salt, milk, and butter. Bring to a vigorous boil, stirring often; then reduce heat and simmer 6 minutes, stirring continuously.
  • Meanwhile, place the chocolate, Marshmallow Creme and vanilla into a large bowl. Gradually pour boiling syrup over the chocolate-marshmallow mixture and beat until chocolate is melted. Stir in nuts.
  • Pour into a buttered pan ( I used a buttered 11 x 16-inch jellyroll pan) and store in a cool place several hours to harden before cutting into 1-inch squares.
  • Store in a covered tin; keeps up to 6 months in a cool place.

The only fudge my family eats around the holidays. For the marshmallow creme, we always get one large jar and one small, because you can never get all the marshmallow cleaned out in time. Also, this is at least a 2-person gig. usually it's my mom, brother, and me. not too sure on cooking time, I never pay attention. When I was younger, it felt like forever, but doesn't feel so long now. Servings depends on how big you cut the pieces. we usually do 1-inch square.

  • cook sugar, milk and butter to softball (236 degrees); always stirring slow and consistent (you don't want to make a mess on the sides of pan).
