GRANDMA'S RICE PUDDING
My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. It took quite a bit of experimentation, but I finally got it right! And I'm glad to share this easy recipe here. -Margaret DeChant, Newberry, Michigan

- Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

My grandma used to make this for my mom, and she made it for me. It's just like hot rice pudding and so yummy served with cinnamon!

- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20. Add 2% milk, evaporated milk, sugar, and butter; stir well and cook until creamy, about 20 minutes longer. Serve sprinkled with cinnamon.

- Preheat oven to 325°. Place first four ingredients in a large saucepan; bring to a boil over medium heat, stirring constantly. Transfer to a greased 1-1/2-qt. baking dish. , Bake, covered, 45 minutes, stirring every 15 minutes. Stir in raisins and vanilla; bake, covered, until rice is tender, about 15 minutes. If desired, sprinkle with cinnamon. Serve warm or refrigerate and serve cold.

GRANDMA DOLORES'S RICE PUDDING
My grandmother's signature dish. She originally got the recipe from the Claridge Hotel in NY. This is a custard style pudding and is a family favorite. I can only make this one rarely, for special occasions, or I will be tempted to eat the entire batch. This takes a long time stirring, so having someone handy to help stir is a real plus. I have tried various milks in this, and the less fat the milk has, the longer it takes to thicken, so I highly recommend going with whole milk only...unless you enjoy stirring pudding for over an hour. Grandma usually would offer Cool Whip on the side as a topping, although I prefer no topping. When you chill this, leave off the cover or it will develop a "skin" - although as a kid, I would ask my grandma to cover my portions because I always liked it to have a "cinnamon skin." Once it is fully cooled, you may cover it.

Steps:
- Put rice and milk in a 3 quart saucepan bring to just a boil, stirring constantly and watching the pot like a hawk so it doesn't burn or boil over.
- As soon as it just starts to boil, lower the heat enough to maintain a gentle simmer without burning the milk, and simmer for about 30 minutes or until the rice is very soft, keep stirring, so the rice does not stick to the bottom.
- Once the rice is soft, slowly stir in the sugar, vanilla, and nutmeg; it will still seem quite wet (this will thicken more upon cooling).
- A test for doneness is to stick a wooden spoon into the custard and then see if it coats the back, swipe your finger down the coating and see if the line remains;it is ready then.
- Ladle out a small amount of the custard base into a small dish and add the beaten eggs to it, whisking quickly, to temper the eggs.
- Return this mixture to the pot and stir.
- Cook another minute or so (to cook egg), then pour into a 2 quart casserole.
- Dust top completey with cinnamon or nutmeg.
- Chill well and serve nice and cold with Cool Whip if desired.

- In a 1-1/2-qt. slow cooker, combine the first nine ingredients. Cover and cook on low for 2 hours; stir. Cover and cook 1-2 hours longer or until rice is tender. Transfer to a small bowl; cool. Refrigerate until chilled., Just before serving, fold in whipped cream. If desired, garnish with additional whipped cream and cinnamon.

- Pre-heat oven to 350.
- Stir rice, milk and sugar in large, deep cookie sheet. and bake for 1 hour, stirring frequently.
- Add raisins, nutmeg and vanilla and bake for an additional hour stirring frequently.
- Top with whipped cream and or cinnamon if desired.
GREAT GRANDMA'S RICE PUDDING

- scald milk (not boiled)
- remove from heat and add the butter and sugar.
- cool. Slowly stir into the beaten eggs and add remaining ingredients.
- pour into a buttered casserole dish; set in pan of hot water
- Put pan with casserole dish inside of it inside the oven and bake at 350 for about 45 mins until the custard is firm.
