3 cups chicken cooked, shredded
3 cups chopped broccoli florets
10.5 oz condensed cream of broccoli soup
10.5 oz condensed cream of chicken soup
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
2 cups cheddar cheese, shredded
12 oz Pillsbury refrigerated biscuits

Steps:

  • Preheat oven to 375F.
  • Dump shredded chicken, broccoli florets, cream of broccoli soup, cream of chicken soup, salt, pepper, garlic powder and onion powder. Stir well.
  • Add shredded cheddar to the bowl. Stir well again.
  • Dump mixture into a greased 9 x 13 inch bake dish and spread it out evenly.
  • Open the package of biscuits and cut each one into six pieces.
  • Place the pieces of biscuit dough on top of the chicken and broccoli mixture, spacing them out as evenly as possible.
  • Place the dish in the oven and bake the casserole until the biscuits are nicely browned on top. 30-32 minutes.
  • Remove from oven and allow to sit for a couple minutes before scooping and serving.
  • Enjoy!

1 can cream of chicken soup
1/4 cup chopped onion

Steps:

  • Combine all ingredients except biscuits and topping in an 1 ½ quart casserole.
  • Mix well.
  • Bake at 375 for 20-25 minutes or until hot and bubbly.
  • Cut biscuits into halves and arrange in casserole.
  • Mix sour cream, egg, celery seed and salt to make topping; sprinkle over casserole.
  • Return to oven and contine baking 25-30 minutes or until golden brown.

1 can Pillsbury refrigerated biscuits
2 tablespoons plus 2 teaspoons salted butter
2 tablespoons all-purpose flour
1 3/4 cup milk
1 cup Parmesan cheese, shredded
1 tablespoon extra virgin olive oil
3 boneless, skinless chicken breasts, cut into cubes
1 onion, chopped
3 cloves garlic, minced
1 broccoli, cut into florets
1 cup cheddar cheese
1/4 cup bread crumbs

Steps:

  • Spray a 9x13 casserole dish with cooking spray. Cut each biscuit into quarters and spread on the bottom of the casserole dish.
  • In a small saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Slowly whisk in the milk and bring to a boil. Stir constantly until thickened, about two minutes. Remove from heat. Stir in Parmesan cheese. Spread sauce over the biscuits in the casserole dish.
  • Heat olive oil over medium heat in a large skillet. Brown chicken, about 7 to 9 minutes. Stir in onions, garlic and broccoli and cook until onions and broccoli are softened, about 5 minutes. Spread veggie/chicken mixture over the sauce mixture in the casserole dish.
  • Top veggies/chicken with shredded cheddar cheese.
  • Mix together 2 teaspoons melted butter and bread crumbs. Sprinkle evenly on top of cheese.
  • Bake, uncovered, in a preheated 400F oven for 30 minutes, or until cheese is melted and bread crumbs are browned. Serve hot.

1 stick butter
1 medium onion, diced
1 ½ teaspoons garlic, minced
1 cup all-purpose flour
½ (32 ounce) container chicken broth
1 ½ cups milk
2 teaspoons chicken bouillon granules

1 cup shredded Colby-Jack cheese
1 cup shredded Cheddar cheese
1 pound cooked chicken breasts, shredded
3 cups chopped cooked broccoli
salt and ground black pepper to taste
4 cups crushed cornflakes
1 tablespoon butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt 1 stick butter in a large frying pan over medium heat. Add onion and garlic and saute until onion is translucent, about 5 minutes.
  • Add flour and stir quickly until it is mixed like Play-Doh®. Quickly add broth, milk, and chicken bouillon; whisk until smooth. Remove from the heat and transfer to a large bowl. Add sour cream and both cheeses; stir until well mixed.
  • Place shredded chicken across the bottom of a 9x13-inch casserole dish. Layer cooked broccoli over the chicken and season with salt and pepper. Pour the cheese mixture over top.

This recipe, from Cooking Light September 2005, is easy, tasty and low fat. Although I don't normally prefer recipes with cans of soup in them, this is a great weeknight meal and also freezes well. The original recipe calls for 1 cup of low fat mayo - I eyeball it but tend to use only 2/3 cup or 3/4 cup. I also use a blend of cheeses including cheddar, parm, and whatever else I have on hand. If you only have uncooked chicken breasts on hand, cube them and poach them with the broccoli.

  • In a skillet, melt the butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots in butter until tender. 1 tablespoon butter or margarine
1 package (8 oz) sliced fresh baby portabella mushrooms
1 can (10 3/4 oz) condensed golden mushroom soup
1/2 cup milk
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
3 cups cut-up cooked chicken
1 bag (1 lb) Frozen Broccoli Cuts, thawed
1 can (8 oz) sliced water chestnuts, drained
1 cup shredded American-Cheddar cheese blend (4 oz)
1 can (2.8 oz) French-fried onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Add mushrooms; cook 4 to 6 minutes, stirring frequently, until mushrooms are browned.
  • In large bowl, mix soup, milk, mustard, salt, thyme and pepper. Stir in mushrooms, chicken, broccoli and water chestnuts. Pour into baking dish. Sprinkle with cheese.
  • Cover dish with foil. Bake 30 minutes. Sprinkle French-fried onions over top. Bake uncovered about 15 minutes longer or until mixture is hot and bubbly.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2/3 cup mayonnaise
2 to 3 teaspoons Worcestershire sauce
4 cups cubed cooked chicken
3 cups chopped broccoli, cooked
1 medium onion, chopped
1 cup shredded cheddar cheese
2 tubes (12 ounces each) refrigerated buttermilk biscuits
2 large eggs
1/2 cup sour cream
2 teaspoons celery seed
1 teaspoon salt

Steps:

  • In a large bowl, combine the soup, mayonnaise and Worcestershire sauce. Stir in the chicken, broccoli and onion. Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese. Cover and bake at 375° for 20 minutes., Separate biscuits; cut each in half. Arrange, cut side down, over hot chicken mixture. , In a small bowl, combine the remaining ingredients; pour over biscuits. Bake, uncovered, 28-32 minutes longer or until biscuits are golden brown and completely baked.

1 can (10-3/4 oz.) 98%-fat-free condensed cream of mushroom soup
3/4 cup sour cream, divided
2 cups chopped cooked chicken
1 pkg. (16 oz.) frozen broccoli florets, thawed
1 cup KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA
1 cup all-purpose baking mix
3 Tbsp. milk

Steps:

  • Heat oven to 375ºF.
  • Combine soup and 1/2 cup sour cream in 8-inch square baking dish. Stir in chicken, broccoli and cheese.
  • Mix baking mix, remaining sour cream and milk just until mixture forms soft dough; spoon into 6 mounds over chicken mixture.
  • Bake 35 min. or until biscuits are golden brown and chicken mixture is hot and bubbly.
