1 pound lean ground beef (90% lean)
1 large onion, chopped
1 medium green pepper, chopped
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) no-salt-added diced tomatoes, drained
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
2-2/3 cups cooked brown rice
Chopped green onions, optional

Steps:

  • In a large skillet, cook beef, onion and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain., Stir in tomato sauce, tomatoes and seasonings; bring to a boil. Add rice; heat through, stirring occasionally. Garnish with green onions, if desired.

Authentic Spanish Rice may be traditional but it's also simple with just a handful of ingredients including long-grain white rice, water, chicken broth, tomato sauce and Rotel canned tomatoes. With a lot of stirring and a little patience, you too will master this easy side dish.

2 tablespoons lard or butter
2 cups long grain white rice
1 cup water
1 cup chicken (or vegetable broth)
8 ounces canned tomato sauce
10 ounces Rotel (canned tomatoes with chiles), drained

Steps:

  • Melt lard in a large skillet; add rice and cook, stirring constantly until lightly browned. Do not burn.
  • Once browned, add water and bring to a boil.
  • Once the water has mostly absorbed, add broth and cover over low heat.
  • Let simmer and cook for approximately 20 minutes. Stir often so that a crust doesn't form. If it does, do not scrape it.
  • Once the rice is fluffy, add drained Rotel (keep the juice) and tomato sauce. Stir.
  • If the rice isn't perfectly fluffy, add the reserved Rotel liquids, turn off heat and cover until the rice steams to perfection.

Light and fluffy in every forkful, this restaurant-style Spanish rice recipe is quick and easy to make at home, turning out perfectly cooked grains that don't clump every single time.

2 tomatoes (, stemmed and quartered)
1/2 yellow onion (, peeled and quartered)
2 cloves garlic (, peeled)
1 teaspoon kosher salt
1 tablespoon canola oil
1 cup uncooked long grain white rice
1 1/2 cups chicken broth

Steps:

  • Place the tomato, onion, garlic and salt in a blender or food processor and blend until smooth, then set aside.
  • Add the oil to a large skillet over medium heat. When the oil is hot, add the rice and cook for about 5 minutes or until golden brown, stirring constantly so it doesn't burn. Add the tomato mixture to the skillet (be careful, it will sizzle and splatter) and cook for 2 minutes while stirring. Add the chicken broth, stir, and cover with a ild. Reduce to a simmer and cook for about 30 minutes or until the liquid is totally absorbed. Fluff with a fork to stir in the tomato bits that have risen to the top. Serve warm.

1/4 cup good seasons classic balsamic dressing
2 tablespoons oil
1/2 cup onion, diced
1/2 cup bell pepper, diced
1 garlic clove
1 cup rice
2 cups water
1/4 cup ketchup
1 chicken bouillon cube

Steps:

  • Marinate the chicken breast with the balsamic dressing for 30 minutes.
  • Fry the onions and pepper and garlic in the oil.
  • Add sliced bratwurst sausage and chicken breast with the dressing.
  • Add the rice and brown lightly.
  • Add water and ketchup and bouillon cube.

This is a great recipe I found in Quick Cooking magazine years ago. It's very versatile and easy to throw together.

1 lb ground beef
1 small onion, chopped
1/2 cup chopped green pepper
2 cups cooked rice
1 (14 ounce) can diced tomatoes, undrained
1 (11 ounce) can whole kernel corn, drained
1 (2 1/4 ounce) sliced olives, drained
6 bacon, strips cooked and crumbled
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon salt
1 1/2 cups shredded cheddar cheese, divided
1/2 cup dry breadcrumbs
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • In a a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink. Drain grease. Stir in rice, tomatoes, corn, olives, bacon, chili powder, garlic powder and salt. Bring to a boil, then remove from heat. Add 1 cup of the cheese, stir until melted.
  • Transfer to a greased 11x7x2 inch baking dish. Sprinkle with remaining cheese. Toss bread crumbs with butter, sprinkle over cheese. Bake, uncovered, at 350 for 15-20 minutes or until cheese is melted.

1 lb fresh or frozen shrimp, peeled, de-veined
4 slice bacon
1 Tbsp cooking oil (optional)
1 small onion, minced
1/2 green bell pepper, diced
1 (16oz) can(s) stewed tomatoes
1 (8oz) can(s) tomato sauce
1/2 tsp basil, dried or fresh
1/2 tsp chili powder
1/2 tsp oregano, dried or fresh
1/2 tsp salt
1/4 tsp black pepper
2 c chicken bouillon
1 c long grain rice, uncooked

Steps:

  • 1. Rinse and drain shrimp. Set aside.
  • 2. In large skillet, fry bacon till almost crisp; crumble and set aside.
  • 3. Using the bacon grease, or cooking oil if preferred, begin cooking the rice, onion, and bell pepper until onions become clear.
  • 4. Add bacon, tomatoes, sauce and seasonings; stirring well.
  • 5. Add bouillon. Cover and cook until rice is almost done.
  • 6. Add shrimp and cook, stirring frequently until rice and shrimp are both done.

1/2 cup onion, white, chopped
8 ounces tomato sauce
3 teaspoons chicken bouillon

  • Saute rice in oil until rice begins to brown.
  • Add Onion and cook 2 to 3 minutes.
  • Pour in tomato sauce, water and add chicken bouillon.
  • Bring to a boil.
  • Turn heat to a medium-low. Cover with a lid and cook 20 minutes.
  • Open and sprinkle with black pepper.
  • Let sit about 10 minutes before you serve to absorb any excess fuilds.

1 1/4 lb ground beef, uncooked
1 chopped onion
1 sm. jar green olives, sliced
1 tsp salt
1/2 tsp pepper
28 oz can crushed tomatoes
12 oz Kraft Shredded Mozzarella Cheese

Steps:

  • Cook rice.
  • Mix all ingredients (except cheese) together in a 2 1/2 qt. casserole bowl.
  • Cover and bake at 350 degrees F for 1 hr. 15 min. Mix after first 1/2 hr of baking. Last 10 minutes, sprinkle with Kraft Shredded Mozzarella Cheese.
