Southern-style meatloaf made with simple, flavorful ingredients!

1 tablespoon olive oil (for sauteing )
1/2 cups onions (finely diced)
1/4 cup red bell peppers (finely diced)
1/4 cup green bell peppers (finely diced)
1/4 cup celery (finely diced)
2 teaspoons minced garlic
1 cup dry/stale bread crumbs
1/4 cup whole milk ((may need more or less))
3 tablespoons unsalted butter (melted)
2 eggs beaten
2 tablespoons parsley
1 teaspoon sage
1 teaspoon oregano
1 teaspoon basil
1 teaspoon black pepper
2 teaspoons sea salt
1½ teaspoons onion powder
1½ teaspoons garlic powder
1/2 teaspoon paprika
8 oz tomato sauce ((can use less if desired))
2 lbs 90 % lean ground beef
1/2 cup natural ketchup
1/2 cup tomato sauce
1 teaspoon honey
1 teaspoon prepared yellow mustard
1 tablespoon brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
liquid smoke (splash)

Steps:

  • Preheat oven to 350 F.
  • Heat olive oil in a large skillet.
  • Add onions, peppers and celery and saute until tender.
  • Add garlic and cook just until fragrant.
  • Remove from heat and let cool. Set aside.
  • In a large bowl, add breadcrumbs and just enough milk to moisten the crumbs.
  • Add remaining ingredients, except for the beef.
  • Mix these ingredients well.
  • Add the beef. Use your hands to mix it in. Don't be alarmed if the mixture seems a bit too wet at first. Handle the beef as little and as gently as possible to prevent it from becoming tough when baked. Mix JUST until everything is combined.
  • Optional: Fry a tiny piece of the mixture to check the taste and adjust the seasonings if desired.
  • When all of the ingredients are well combined, spoon the mixture into a loaf pan and smooth to an even layer. Set aside.
  • To make the glaze, combine all glaze ingredients and spread half on top of meatloaf.
  • Bake for 30-35 minutes and then top with remaining glaze. ( you don't have to use all of the glaze. You can save some to use when serving the meatloaf of desired)
  • Continue baking for another 30-35 minutes or until internal temperature reaches 160 F. or to your desired (safe) doneness. ( I like to flip the oven to broil for the last few minutes to get the glaze a bit sticky but watch it carefully if you decide to do this)
  • Remove from oven, drain off the fat and let meatloaf rest before slicing. (If meatloaf is steaming hot when you cut into it, it will fall apart)

1 tablespoon vegetable oil
2 ribs celery, chopped
1/2 cup chopped onion
1 1/2 pounds ground beef, or a combination of ground beef and pork
3/4 cup​ quick or old-fashioned oats
1/4 cup chili sauce, or ketchup
1 tablespoon​ Worcestershire sauce
1 1/2 teaspoon salt
1 large​ egg, beaten
3 tablespoons water, or milk

Steps:

  • Preheat the oven to 350 F
  • Heat the oil in a large skillet over medium heat. Add the chopped celery and onion; cook until the vegetables are tender, or for about 7 to 9 minutes, stirring frequently.
  • In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
  • Pack the meatloaf mixture into a 9-by-5-by-3-inch loaf pan or shape it and bake it free-form in a 9-by-13-by-2-inch baking pan or 10-by-15-by-1-inch jelly roll pan.
  • Bake at 375 F for 1 hour.
  • Using 2 spatulas, carefully move meatloaf to a serving plate and slice.

This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

2 lbs ground chuck
4 tablespoons Worcestershire sauce
1/2 cup grated onion
2 eggs, slightly beaten
2 cups breadcrumbs
1 cup milk
1 cup tomato juice (for topping) or 1 cup ketchup (for topping)
salt and pepper

Steps:

  • Mix everything together very well and shape into 2 loaves.
  • You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
  • Bake at 350 degrees for about 45 minutes to 1 hour or until done.
  • Makes 2 loaves.

This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

1 lb ground beef
2 eggs
salt (to taste)
pepper (to taste)
1 onion, chopped (Optional, I usually omit it or use a teaspoon of dried minced onion. You also don't need the whole o)
2 -3 tablespoons ketchup, heaping
1 tablespoon yellow mustard, heaping
1 cup saltine crumbs, crushed. (This is usually most of one sleeve of saltines.)

Steps:

  • Mix all together; I generally use my hands.
  • Form mixture into a loaf shape.
  • Put in a baking dish (I use a pie plate).
  • Bake at 350 for 1 hour.
  • NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.

1/2 cup catsup
1/2 cup oatmeal

1 teaspoon Worcestershire sauce
1 onion, finely chopped

Steps:

  • Mix loaf ingredients together and form 2 loafs.
  • Place each loaf in a loaf pan.
  • Mix sauce ingredients together in a saucepan and simmer over low heat for about 10 minutes.
  • Divide sauce and pour over meatloaf.
  • Cook at 350% for 1 hour.

1 large egg, beaten
1/4 cup dry bread crumbs
3 bacon strips, cut into 1/4-inch pieces
1 small onion, chopped
2 ounces cubed cheddar cheese
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
1-1/2 pounds lean ground beef
1/2 pound bulk pork sausage

Steps:

  • In a large bowl, combine egg, bread crumbs, bacon, onion, cheese, seasoned salt and pepper. Add beef and sausage; mix well. In a shallow baking pan, shape mixture into an 8x4-in. oval. , Bake at 350° for 1-1/4 hours or until no pink remains and a thermometer reads 160°; drain.

I modified this from Grandma's swedish meatball recipe, leaving out several seasonings that didn't seem to suit my family. I have the original 3 x 5 card that she wrote it on. The card is brown and brittle now, but treasured anyway. I'd love for some pioneering type to do this in the microwave and let me know how it works. I've not had much luck with beef in the microwave.

1 lb ground beef
1 lb bulk sausage
1 cup fine dry breadcrumb (seasoned or unseasoned)
1 teaspoon salt
1/2 cup milk
4 eggs, slightly beaten (I use fake eggs)
1/2 cup finely chopped onion
1/4 cup finely chopped celery (whatever) or 1/4 cup raw carrot (whatever)

Steps:

  • Pre-heat oven to 350 degrees F.
  • Spray your meatloaf pan with cooking spray.
  • Mix bread crumbs, salt, milk, eggs and onion in small bowl.
  • Set aside.
  • In large bowl, mix by hand the ground beef and sausage.
  • I usually wear powder-free medical gloves for this step.
  • Yuck!
  • Blend the meats completely and add the contents of the small bowl.
  • Continue to blend by hand until uniform in consistancy.
  • Put meat mixture in loaf pan and LIGHTLY pack.
  • Bake for 1 1/2 hours at 350 degrees F.
  • Remove from oven and let it rest on a cooling rack for about 20 minutes.
  • Slice and serve.

2 -2 1/2 lbs hamburger (I usually purchase 80% lean)
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1 medium onion, minced
1 carrot, grated fine
1 green pepper, minced (optional)
2 slices bread, toasted in your toaster and cubed
1/2 cup milk
1 1/2 tablespoons sugar
1 1/2 tablespoons vinegar
1 small onion, minced
1 tablespoon butter
1 1/2 tablespoons Worcestershire sauce
1/2 cup catsup
1/4 cup water

Steps:

  • Preheat oven to 375 degrees.
  • After toasting and cubing your bread, soak it in the milk.
  • Mix remainder of meatloaf ingredients together well.
  • Add toast cubes/milk and mix lightly.
  • Place meatloaf into a loaf pan and bake for about 1 hour or until a meat thermometer inserted reads 160 degrees.
  • Prepare the sauce by combining all the sauce ingredients in a small saucepan and simmer while meatloaf is cooking.
  • When meatloaf is thoroughly cooked, remove any extra fat that has accumulated in the loaf pan and slice into serving size pieces.
  • Pour sauce over and let stand for about 10 minutes.
  • Make sure to get the sauce in between the slices.
  • Serve and enjoy!

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten

Steps:
