GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

Steps:
- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

GRANDMA A'S LIME GELATIN SALAD
This is a salad my Grandmother Achenbach made for us almost every time we went to visit. She was an excellent cook and liked simple dishes. Usually we had either Steak or Fried shrimp for a main course, but there were always at least two veggies, a salad and a dessert with Farm fresh whipped cream. This was my favorite salad of hers. Old Fashioned but still as good as ever. I have used a Google Image until I can get my own photos.

Steps:
- Place water and pineapple juice to measure 2 cups, and lemon/lime juice in a medium microwaveable mixing bowl and heat to boiling on high in microwave. 3 to 4 minutes.
- Stir in Lime Jello and stir to dissolve completely 2 to 3 minutes. Refrigerate until slightly thickened and "syrupy".
- Whip together the cream cheese and mayo til smooth. Add the drained pineapple and celery and stir to mix.
- When Jello mixture is thickened, stir in the cream cheese mixture until well blended. Add cottage cheese and stir until evenly distributed.
- Pour mixture into 9 x 12 casserole and top with chopped toasted pecans.
- Cover and return to refrigerator to complete setting, 3 to 4 hours or overnight.
- To serve, cut into squares and top with a combination of whipped cream and mayonnaise mixed together. (about 1/2 and 1/2)
GRANDMA VI'S GREEN JELLO SALAD
Served at my grandma's house for every holiday occasion as long as I can remember. You wouldn't know there is cabbage in this unless you saw the ingredient list! Tastes like fruit and whipped cream!

- Drain juice from can of crushed pineapple into a measuring cup.
- Add enough pineapple juice to make 2 cups.
- Bring the 2 cups of juice to a boil.
- Remove from heat and dissolve completely 2 pkgs.
- of lime jello in the juice, stir, stir, stir.
- Add all the cream cheese pieces using a gravy whip to blend.
- Add 6 ice cubes and pineapple, stir until ice dissolves.
- Put in the freezer until cool and syrup-like.
- Fold in chopped nuts, cabbage (shredded very fine), and Cool Whip.
- Refrigerate several hours.
GRANDMA'S JELLO SALAD
When ever I serve this dish I get rave reviews. My grandma used to make this for our holiday meals; it was the only thing that NEVER had leftovers. When most people hear the ingredients. they are often skeptical until they try it. So far it has won over everyone that has tried it. It is so simple to make that you can have it any night. Prep time is time to combine items and cook time is time to chill. Servings are approx.

- Mix jello powder and whipped cream in bowl until jello is evenly dissolved.
- Add cottage cheese, 1/2 mandarin oranges (1 can), whole can of fruit cocktail, and walnuts stir until well mixed.
- Garnish top with remaining mandarin oranges and a sprinkle of walnuts.
- Refrigerate for about 1 hour before serving.

This is my best friend's grandma's recipe. It's similar to another posted but different enough to merit it's own place. We make this every holiday and it's my most favorite way to make jello ever! Don't let the ingredients scare you out of trying this one.

Steps:
- Dissolve jello in boiling water.
- Mix in all ingredients except cottage cheese and whipped cream.
- Cool mixture then add cottage cheese and whipped cream.
- Refrigerate until molded. Cover so it doesn't dry out.
- Use a 9X13 glass pan or pretty bundt shaped pan. If you use a bundt pan, set the pan in warm water for a few minutes before unmolding.

GRANDMA LULA'S LIME SALAD
Better known in our family as "Green Stuff" and used to be something Grandma had on her table every time we would visit. I am trying to keep the tradition going now that she's not with us any more.

Steps:
- Put jello and marshmallows in a mixing bowl. Pour boiling water over both. Stir to dissolve jello and melt marshmallows.
- In another bowl, mix cream cheese and whipping cream until smooth and creamy.
- Add cream cheese mixture and pineapple to jello and stir well. Add nuts if desired. Mix well.
- Pour in mold if desired or in the bowl you plan to serve the salad in and refridgerate for 3-5 hours.
