EASY GRAND MARNIER SAUCE
Steps:
- Gather the ingredients.
- Slice the room-temperature butter into 1/4-inch pieces and set aside.
- In a small saucepan, heat the strained orange juice, sugar, and finely grated orange zest over low heat, stirring often, for 5 minutes.
- Increase the heat and bring the mixture to a boil. The sauce will thicken and become syrupy.
- Add the butter slices to the saucepan, piece by piece, while whisking constantly. When thoroughly blended, remove the pan from the heat and stir in the Grand Marnier .
- Serve immediately and enjoy.

CHOCOLATE-GRAND MARNIER TART
Steps:
- 1. Almond Crust: In a small bowl combine 1 1/2 cups toasted blanched almonds and 1/4 cup packed brown sugar. Place a portion at a time in a food processor bowl or blender container: cover and process or blend until nuts are finely ground. Transfer to medium bowl. Stir in all-purpose flour. Add melted unsalted butter or regular butter, stirring until well combined. Press mixture onto bottom and 1 inch up side of a 9 inch tart pan with a removable bottom or a 9 inch springform pan. Bake in a 325 degrees F oven about 20 minutes or until golden and firm to the touch. Cool crust in pan on a wire rack.
- 2. In a small saucepan, heat whipping cream over medium heat just until simmering. Remove from heat; whisk in semi-sweet chocolate until smooth. If desired, whisk in Grand Marnier. Cool about 30 minutes or until filling begins to thicken but is still pourable.
- 3. Spread marmalade over bottom of Almond Crust. Pour chocolate filling over marmalade. Cover and chill in refrigerator about 2 hours or until set. To serve, remove side of pan. Use a sharp knife to cut tart into wedges.

GRAND MARNIER CARROTS
The carrots can be served in hollowed out orange shells for a nice presentation. The recipe also says they may be prepared ahead and reheated although I have never done that. Prep time does not include the time to clean and cut the carrots.

Steps:
- Combine carrots, water to cover, and salt in pan. Cover and cook over medium heat 25 minutes. Drain and set aside.
- Melt butter in a large skillet over medium heat. Add sugar and marmalade and simmer about 10 minutes or until sugar is melted. Stir in carrots and 1/2 cup Grand Marnier. Simmer, uncovered about 30 minutes or until carrots are shiny and candied. Add remaining Grand Marnier.
- Sprinkle with nutmeg and serve in orange shells, if desired.

HOMEMADE GRAND MARNIER
From Classic Liqueurs, by Cheryl Long and Heather Kibbey: Grand Orange-Cognac Liqueur. I modified it to make it a little more chef friendly.

Steps:
- Place zest and sugar in a small bowl. Mash together with the back of a wooden spoon or a muddle. Continue until sugar is absorbed into zest.
- Place in a container with a tight seal, preferably glass. Add cognac, stir and seal.
- Allow to age in a cool, dark place 2 to 3 months. Shake monthly.
- After initial aging, strain and filter. Stir with a wooden spoon to combine. Cap and age 3 months more before serving.
- Note: Seville oranges produce the authentic taste but any type of orange peel/zest may be used with good results.
ORANGE GLAZED PORK CHOPS
A sensational combination of orange marmalade, fresh sage, soy sauce and garlic is the basis for a quick and easy marinade for grilled pork chops. Prep time includes 30 minutes marination. Cook time depends on the thickness ot the chops.

Steps:
- In a small bowl, combine marmalade, sage, soy, garlic, Grand Marnier, salt and pepper.
- Pour over chops, and marinate for 30 minutes (I put the chops and marinade in ziplock bags).
- Grill the chops, reserving the marinade.
- While the chops are cooking, add the marinade to a small saucepan, bring to a boil, then remove from heat.
- To serve, spoon glaze over the pork chops and garnish with sage leaves.
