GRAMMIE BEA'S HERBED DUMPLINGS
Simple and easy to make these dumplings are "To Die For" if you love dumplings... Great with stews and soups, these are a "WINNER". This recipe was made many times by my gram, and we always enjoyed them... They are WONDERFUL! Great with my recipes for Recipe #218703 and Recipe #218699!

Steps:
- Mix together.
- Drop dumplings into the edge of the soup pan using a lg. tablespoon.
- Cook dumplings in soup with the cover off for the first 10 mins., then cook with cover on for 10 minutes.

GRAMMIE BEA'S FABULOUS MUSTARD PICKLES
My gram passed away in 1984, but her fabulous recipes live on :) These pickles are my absolute FAVORITES of all time. They are DELICIOUS with soups and chowders, with your favorite sandwich, or just for a snack! I make mine in peanut butter jars by the jar. I just let them sit for a couple of weeks, then put in the fridge, and they last 3-4 weeks in the refrigerator with no problem. But don't worry, they won't last that long :D The cooking time does not include the processing time if you decide to can them.

Steps:
- Cut cucumbers in 1/2, and then into 1/4's. Cut into chunks about 2" long. Put in jar.
- Add water to the vinegar. (If you want pickles in a hurry, add hot vinegar to hot water).
- Pour over pickles in jar.
- Add dry mustard, sugar, and salt. Put on cover.
- You can process these if you want to, but we always eat these so fast that we don't.
- Let sit for a couple of weeks and eat.

GRAMMIE BEA'S BOSTON BAKED BEANS
We used to have these beans every Saturday night with hot dogs and brown bread... Everyone LOVED my Gram's Baked Beans, as she was a TOP NOTCH cook, and everything she made was ALWAYS delicious.... Steps:
- Clean beans of pebbles and rocks.
- Put cleaned beans in pot. Set aside.
- Mix sugars, molasses, and mustard. Add salt and pepper. Mix into beans.
- Add enough water to cover beans.
- Place salt pork down into beans. You can opt to cut it up, or leave it whole, like my gram used to do.
- You can also put the onions in whole, or opt to chop them up. She used to keep them whole, so us kids could fight over them lol.
- Bake in bean pot, at 200 degrees, all night or 8 hours If not done, finish in the morning.
- When beans are ready to be eaten, turn oven up to 450 until beans start to boil, then turn back to 200, until ready to serve.
- Note: If beans look like they are drying out, just add water as you are cooking.
HERBED DUMPLINGS
Steps:
- Stir flour, baking powder and salt in medium bowl to blend. Add 2 tablespoons butter. Using fingertips, rub butter into dry ingredients until mixture resembles coarse meal. Add parsley and thyme. Gradually add milk, mixing until dough comes together. On lightly floured surface, press out dough to 6-inch square. Cut dough into 24 pieces.
- Bring 1 inch of water to boil in large saucepan. Butter vegetable steamer rack; place rack in pan. Arrange dumplings in single layer on rack. Cover pan; steam dumplings until doubled in size and cooked through, about 14 minutes. Using tongs, transfer dumplings to bowl. Drizzle with melted butter and serve.
GRAMMIE BEA'S NEW ENGLAND BOILED DINNER
New England boiled dinner is often made with a smoked ham shoulder, and that's the way we always had it at my house growing up. The flavor is incredible and makes for a DELICIOUS meal! Some people like their vegetables firm and some like them soft and tender, so cook your veggies accordingly. The cooking time for this particular recipe is 4 hrs. for an 8 lb. ham, or 5 hrs. for a 10 lb. ham. Another way of cooking veggies is, wait until ham is cooked and removed from water, then cook your veggies in the water in the kettle to the desired doneness. Sometimes I use boneless ham and add turnip and beets, just like in the photo I posted. Yummy!!

Steps:
- Place ham in a large dutch oven style kettle.
- Cover with cold water, and fill to about 2" above top of ham. Cover kettle, and bring to a boil using high heat.
- Turn down to med-high and let boil a few minutes, then drain water, and refill with water 2" above ham, and bring to a boil again over high heat. This method is used to make the ham less salty. (Or you may refrigerate ham overnight in water, and change water several times before cooking instead).
- Once water comes to a boil, turn heat down to med. to med-high making sure it keeps boiling. Keep cover on kettle while cooking.
- Add peeled onions to the kettle.
- Cook ham 1/2 hour per pound of ham.
- Add some water to the kettle, when it starts getting low.
- Peel and cut potatoes and carrots.
- Wash and core cabbage, then cut into wedges.
- Add vegetables during the last 30-40 minutes of cooking time. Serve when veggies are tender, or to your liking.

Steps:
- Combine the flour, baking powder and salt in a bowl. Cut in the butter with a pastry blender or your fingertips until the mixture is crumbly. Stir in the parsley, chives and pepper.
- Beat the egg and stir in three tablespoons of milk. Using a fork, lightly mix the egg mixture into the flour, just until all the ingredients are moistened and hold together to form a soft doughy batter.
- Shape the batter into rounds and drop them into simmering stock or water. Allow them to cook for 10 minutes.

GRAMMIE BEA'S DANDELION GREENS
We used to go picking dandelions in the spring (May), using a V-shaped blade tool with a long handle on it... We just dug into the roots of the dandelions, and lifted down on the handle, and it cut the dandelion at the top of the root. Before the dandelions bloom is the best time to pick them, as they are sweeter.

Steps:
- Pick 2 lg. brown bags full of dandelions, or buy 3 lbs., as they shrink a lot during cooking.
- Wash dandelions well 2-3 times in changes of water, to remove bugs and dirt. Inspect leaves and stems as you go, to make sure they.
- arent wilted or rotted or anything, and break off any that are.
- Add about 6" of water to a lg. pot.
- Add cut up pieces of salt pork into the water.
- Once washed well, add the greens to the pot.
- Add 1 teaspoons salt. on top of the greens.
- Cook on high until water comes to a boil, then turn down to medium heat.
- Let greens cook, until reduced, and tender.
- Make sure salt pork is cooked through, at least 45-50 minutes.
- Drain well, and serve with butter, vinegar, salt, and pepper.
- Note: Preparation time varies, depending on how dirty the dandelions are and how well you clean them.

We had these a lot growing up, and they were always a real treat... Sweet and delicious, these tiny fish pack a lot of flavor... We always served these with Mashed Potatoes, and Stewed Tomatoes... Some things just go together! WONDERFUL!!!

Steps:
- Buy as many fresh water smelts as you need. They are smaller and sweeter than sea smelts.
- Clean the smelts in cold water, cutting off the heads, and snip down the belly with scissors, to remove the bellies.
- Rinse out the bellies of each one, as you cut and snip the heads.
- Soak in cold water, until you are ready to cook them, or put in fridge.
- When ready to cook you will need:.
- Eggs, beaten in a lg. bowl, enough to dip all your fish in,(depending on how much you are making depends on how many eggs you.
- need).
- I use about 3 eggs for 2 lbs. of smelts.
- Jiffy corn muffin mix, (if you are cooking 2-3 lbs. of smelts 1 box will do. If you are doing more, then you will need at least 2 boxes).
- oil, enough to fill the frying pan up about 2".
- salt, to taste.
- Beat the eggs well, and put them in a bowl.
- Put Jiffy corn muffin mix in a lg. plate, and mix in salt, about 1/2 teaspoons per box.
- Put oil in frying pan to get hot. Cook on high heat, letting the pan get hot, before putting in your fish, then turn down the heat to med-high.
- Dip your fish in the egg, and then in the muffin mix.
- Deep fry in at least 2" of oil in a heavy frying pan, until golden brown.
- You can also use this corn muffin mix to cook any other sweet fresh water fish, such as horn pout, or what you may call catfish, bass, white perch etc.
