GREEN BEANS GREMOLATA

1 pound French green beans, trimmed
2 teaspoons minced garlic (2 cloves)
1 tablespoon grated lemon zest (2 lemons)
3 tablespoons minced fresh flat-leaf parsley
3 tablespoons freshly grated Parmesan cheese
2 tablespoons toasted pine nuts
2 1/2 tablespoons good olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil. Add the green beans and blanch them for 2 to 3 minutes, until tender but still crisp. Drain the beans in a colander and immediately put them into a bowl of ice water to stop the cooking and preserve their bright green color.
  • For the gremolata, toss the garlic, lemon zest, parsley, parmesan, and pine nuts in a small bowl and set aside.
  • When ready to serve, heat the olive oil in a large saute pan over medium-high heat. Drain the beans and pat them dry. Add the beans to the pan and saute, turning frequently, for 2 minutes, until coated with olive oil and heated through. Off the heat, add the gremolata and toss well. Sprinkle with 3/4 teaspoon salt and 1/4 teaspoon pepper and serve hot.

3 cups dried white pea beans or 3 cups dried navy beans, cleaned
1 large onion
1/2 lb salt pork
1/2 cup sugar, a little under
2 tablespoons brown sugar
2 tablespoons molasses
2 teaspoons dry mustard
1/2 teaspoon pepper
1 teaspoon salt, if salt pork has mostly meat in it or 1 tablespoon salt, if salt pork has mostly fat in it

Steps:

  • Clean beans of pebbles and rocks.
  • Put cleaned beans in pot. Set aside.
  • Mix sugars, molasses, and mustard. Add salt and pepper. Mix into beans.
  • Add enough water to cover beans.
  • Place salt pork down into beans. You can opt to cut it up, or leave it whole, like my gram used to do.
  • You can also put the onions in whole, or opt to chop them up. She used to keep them whole, so us kids could fight over them lol.
  • Bake in bean pot, at 200 degrees, all night or 8 hours If not done, finish in the morning.
  • When beans are ready to be eaten, turn oven up to 450 until beans start to boil, then turn back to 200, until ready to serve.
  • Note: If beans look like they are drying out, just add water as you are cooking.

2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

¼ pound peppered bacon, chopped
1 medium onion, sliced
4 cups fresh green beans, trimmed
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon seasoned salt
water as needed

Steps:

  • Place bacon in a large pot and cook over medium heat, stirring occasionally, for 5 minutes. Add onion; cook until bacon just starts to brown a bit, 4 to 5 minutes. Add green beans and stir until coated in bacon grease. Add sugar, salt, seasoned salt, and just enough water to cover. Bring to a boil.
  • Reduce heat, cover, and simmer until beans are soft, about 45 minutes.

1 piece salt pork, 3x4-inch piece
6 cups string beans, fresh, ends snapped off and left whole
3 tablespoons canola oil
salt and pepper, to taste
cider vinegar, as much as you like
butter, as much as you like

Steps:

  • Remove both ends of green beans.
  • Wash beans thoroughly in cold water.
  • In a lg. pot, fill about 1/2 way with water.
  • Add piece of salt pork into the pot. Bring to a boil, and cook for about 30 minutes on med. high.
  • Add string beans, and add water to cover beans.
  • Add canola oil.
  • Let cook until beans are tender, 15-25 minutes Drain.
  • Serve with butter, and I always have mine with salt and pepper, and a little vinegar sprinkled over the beans at serving time.

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

5 slices thick-cut bacon
1 red onion, sliced thin
1 jalapeño, seeded and diced small
1 1/2 pounds green beans, trimmed
1 cup chicken stock
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1/4 cup fried onions

Steps:

  • Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
  • Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
  • Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

lean salt pork, sliced across the top, a good sized piece
1 bunch swiss chard, dandelion, kale, collard, mustard, spinach greens (your choice)
4 -6 large potatoes
apple cider vinegar, to taste
salt and pepper, to taste
butter

Steps:

  • Wash greens in water, and remove any dirt. Remove stems. Remember these cook down, so pack them down in the pot. If you fill a lg. stock pot, it should feed 4 people.
  • Add cleaned greens to pot, and cook 20 mins, then add washed potatoes cut in quarters (they don't have to be peeled).
  • Add enough water to cover potatoes, if needed.
  • Cook 25-30 minutes longer, or until potatoes are cooked through when tested with a fork. Greens and meat will be tender.
  • Drain off water, and serve greens with butter, apple cider vinegar, butter, salt and pepper, along with potatoes with butter.
  • You can eat the salt pork along with it too, if you like.
  • Makes 4 servings.

2 cups stale crusty bread cubes
6 tablespoons extra-virgin olive oil
2 teaspoons finely chopped fresh rosemary
Pinch of red pepper flakes
Kosher salt
2 pounds green beans, trimmed and halved
4 cloves garlic, thinly sliced
Zest of 1 lemon
Freshly ground pepper

Steps:

  • Pulse the bread in a food processor until coarsely chopped. Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add the bread, 1 teaspoon rosemary, the red pepper flakes and a pinch of salt. Cook, stirring occasionally, until the bread is golden brown, about 10 minutes; transfer to a bowl.
  • Meanwhile, bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 6 minutes. Drain, rinse under cold water and blot dry with paper towels. (You can refrigerate the green beans, covered, for up to 4 hours; keep the bread mixture at room temperature.)
  • Heat the remaining 1/4 cup olive oil and the garlic in a large nonstick skillet over medium-high heat. Cook until the garlic is lightly golden, about 3 minutes, adding the remaining 1 teaspoon rosemary during the last 30 seconds. Add the green beans and lemon zest; cook, stirring, until coated. 2 small shallots , very finely sliced
3 garlic cloves , thinly sliced
squeeze lemon
2 tbsp toasted flaked almonds

Steps:

  • Cook green beans in boiling salted water until tender, then drain and cool under running water. Set aside.
  • Put olive oil, shallots, garlic cloves and some salt in a frying pan, then cook gently for about 8 mins until soft but not brown. Tip in the beans and a grind of pepper, toss well, then warm through. Finish with a squeeze of lemon and toasted flaked almonds.

GRAMMIE BEA'S CRISCO YELLOW CAKE

My gram considered this to be her "BEST" yellow cake...It was WONDERFUL! Try it, you'll LOVE it! My gram used chocolate frosting lots of times, and then sprinkled chopped walnuts all over the top. Sometimes she would use Recipe #218589 instead... YUM! Keep in mind this is a "homemade" cake not a "box" cake. It has a heavy, moist texture a lot like Wacky Cake. Note: Don't over bake. Check cake at 30 mins. and every 5 mins. after, until a toothpick stuck in the middle of the cake comes out clean.

2 1/2 cups flour
1 teaspoon salt
1 2/3 cups sugar
3 1/2 teaspoons baking powder
1 1/4 cups milk
2/3 cup Crisco
3 eggs, unbeaten (2/3 c.)
1 1/2 teaspoons vanilla

Steps:

  • Mix thoroughly by hand 300 strokes or 2 minutes at med. speed with mixer. Scrape bowl frequently during mixing.
  • Add eggs and vanilla, and again mix by hand 300 strokes, or 2 minutes at med speed with mixer.
  • Pour batter into greased and floured 9x13" or two 9" round pans, and bake in 350 oven.
  • Bake 9" layer pans 30-35 minutes.
  • Bake 9x13" pan 40-45 minutes.
  • Let cakes cool for 10 minutes in layer pans, then remove onto a cooling rack until cool.
  • If you use the 9x13" pan keep the cake right in the pan and frost when cool.

2 lbs green beans
1 -2 tablespoon olive oil (or just enough to lightly coat beans)
1 teaspoon kosher salt (or to taste, may substitute with Mrs. Dash if desired)
1/2 teaspoon fresh ground pepper (or to taste, omit if using Mrs. Dash)

Steps:

  • Preheat oven to 400°F.
  • Wash, dry well, and trim green beans.
  • Put green beans on a jelly roll pan.
  • Drizzle with olive oil.
  • Sprinkle with salt and pepper to taste (I like them salty so I use about 1 1/2 teaspoons of salt and about 8-10 grinds of the pepper mill). *Mrs. Dash may be substituted for salt and pepper as desired.
  • Use your hands to be sure all the beans are evenly coated and spread them out into 1 layer.
  • Roast for 20-25 minutes, turning after 15 minutes, until beans are fairly brown in spots and somewhat shriveled.
  • Serve hot or at room temperature.
