PEANUT BUTTER GRAHAM BARS

Steps:
- Line the bottom of a greased 11x7-in. dish with half of the graham crackers; set aside. In a 2-qt. microwave-safe bowl, combine the crumbs, sugars, butter and milk. Microwave, uncovered, on high for 45 seconds; stir. Microwave on high 1-1/2 to 2 minutes longer. Immediately pour half over crackers in prepared pan. Top with the remaining graham crackers; spread with remaining sugar mixture., In a small microwave-safe bowl, heat chocolate chips and peanut butter, uncovered, on high for 30-45 seconds or until chips are melted. Stir until smooth and blended. Spread evenly over bars. Cover and refrigerate for 1-1/2 hours before cutting.

EASY PEANUT BUTTER GRAHAM BALLS
This recipe goes back a long time, it is easy to make and one of my son's favorites! Use only smooth peanut butter or the balls will not hold together, these are even great without the chocolate coating, plan ahead the peanut butter balls need to chill for a few hours before coating in chocolate, cooking time is chilling time.

Steps:
- In a bowl combine the peanut butter with confectioners sugar and graham crumbs until well combined.
- Add in the melted butter and mix thoroughly until combined (I find that using my hands for mixing works better than a spoon, if the mixture is not holding together add in a little more melted butter).
- Using hands shape into small balls (about 1-inch).
- Place the balls on a plate and refrigerate until completely cold (about 2 hours).
- After the balls have chilled I like to re-roll them again to make a perfect shaped ball but that is optional.
- In the microwave melt the chocolate with the shortening until smooth, removing once and stirring.
- Dip the COLD balls into the chocolate mixture to coat.
- Place on a baking sheet lined with parchment or waxed paper to set.

- Pulse the graham crackers in a food processor to a fine powder. Stream the melted butter into the processor, pulsing until combined. Add 1/4 cup water and process to a paste. Add the honey and blend until the consistency is thick but spreadable. Serve with fruit, cookies or candy.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the margarine, peanut butter and sugar until smooth. Beat in the egg. Combine the flour, baking powder and salt; stir into the peanut butter mixture. Crush the cereal squares and stir into the dough until well blended. Roll tablespoons of dough into balls and place them 2 inches apart onto the prepared cookie sheets. Flatten slightly using a fork and making a criss cross pattern. Dip the fork in sugar to prevent sticking.
- Bake for 8 to 10 minutes in the preheated oven, or until the bottoms are lightly browned. Let stand on the cookie sheet for 1 minute before removing to wire racks to cool completely.

- Combine peanut butter chips with shortening in medium microwavable bowl.
- Microwave on high for 1 1/2 minutes.
- Stir only for a few seconds.
- If needed, microwave about 15 additional seconds to melt mixture; stir well. Chips should be completely melted and mix should be smooth.
- Stir into mixture crushed pretzels, almonds, and cereal; combine well.

Steps:
- Preheat oven to 350°F.
- Melt margarine and honey slowly on stove.
- When melted add baking soda and stir with a whisk.
- Combine oats, flour, wheat germ, brown sugar and ground flax.
- Add butter mixture to oat mixture, stir until moist.
- Add raisins and sunflower seeds.
- Press into a 9x13 pan.
- Bake for about 12 minutes.
- Cut into squares while still warm, but don't remove them or they may fall apart.
- Remove when cooled.

- Heat oven to 350 degrees.
- Place sheets of foil on countertop for cooling cookies Combine shortening, peanut butter, brown sugar and granulated sugar in large bowl.
- Beat at medium speed of electric mixer until well blended.
- Beat in eggs and vanilla.

- Mix into creamed mixture at low speed until just blended.
