TEX-MEX TURKEY BURGERS WITH AVOCADO MAYONNAISE

Steps:
- Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
- Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
- Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

Steps:
- Mix ground turkey, minced red onion, Dijon mustard, and coarse salt in a bowl; form into 4 patties and refrigerate 30 minutes.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Drizzle olive oil over the burgers.
- Cook burgers on the preheated grill until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Serve on whole wheat hamburger buns topped with baby arugula, avocado, green bell pepper, and Parmesan cheese.

- Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with Gruyere, scallions, breadcrumbs, mustard, and garlic; season generously with salt and pepper. Gently form mixture into four 1-inch-thick patties.
- Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.

GOURMET TURKEY BURGER SALAD WITH AVOCADO AND DIJON MUSTARD
This is a dinner from Bob Harper's book, "Jumpstart to Skinny," week 3. (Note that this is a single serving, for a female. A male should add half again as much.) It is delicious and satisfying as well as being very low calorie and healthy. The parsley and rosemary blend beautifully and the burger comes out with a crispy, savory crust. I enjoy it even off the diet, though I add a slice of melted low-fat cheddar cheese on top!

- 1. Using your hands as a tool, mix the turkey, garlic, parsley, and rosemary together until well combined. Flatten into a patty.

- Mash half of 1 avocado with a fork in a medium bowl until smooth (reserve remaining half for topping burger). Add Worcestershire, garlic powder, cumin, 3 Tbsp. mayonnaise, 2 tsp. Sriracha, and 1½ tsp. salt. Grate half of the onion (as in, half of the half, or one-quarter of the whole) on the medium holes of a box grater into bowl. Mix with a fork to combine. Add turkey and mix thoroughly with clean hands until mixture is homogeneous (it will feel very wet and soft, which is okay).
- Drizzle 1 Tbsp. oil on a large plate. Using oiled hands, form turkey mixture into 4 balls, place on plate, and press down into patties 4–4½" across (they’ll shrink as they cook). Chill, uncovered, at least 10 minutes and up to 2 hours (this step will help keep them firm). If chilling for more than 2 hours, cover with plastic and chill up to 2 days.
- Meanwhile, stir remaining ½ cup mayonnaise and 2 tsp. Sriracha in a small bowl and season with a pinch of salt.

- In a medium bowl, using your hands, combine the turkey, Dijon, Worcestershire, bread crumbs, salt and 1 c. diced caramelized onions. Once everything is roughly combined, add in the cubed avocado and gently work it into the meat mixture.
- Form the mixture into 3-4 inch patties and place on a baking sheet. Refrigerate covered for 1-2 hours.
- On a medium-high grill or skillet, coated with non-stick cooking spray, cook each burger for 2-3 minutes on each side.
- Meanwhile, slice your bread into thin pieces and cut each slice in half. Spray each piece of bread with non-stick spray and add them to the grill for 1 minute on each side to toast them up.
