Farmhouse Chicken and Noodles image

A simple farmhouse classic, these old-fashioned Chicken and Noodles are total comfort food!

Provided by Blair Lonergan

Categories     Dinner

Time 2h

Number Of Ingredients 12

1 large whole chicken, gizzards removed (about 5 ½ - 6 lbs.)
1 celery rib, cut into 4 large chunks
1 large carrot, cut into 4 large chunks
1 onion, peeled and cut into 4 large chunks
1 bay leaf
2 sprigs fresh thyme
3 quarts cool water (or just enough to barely cover the chicken)
1 ½ tablespoons kosher salt
1 teaspoon ground black pepper
1 lb. uncooked egg noodles ((or other pasta of choice))
2 tablespoons lemon juice
Optional garnish: chopped fresh herbs such as parsley or thyme

Steps:

  • Place the chicken breast-side up in a 6-8 quart Dutch oven or other heavy-bottomed pot. Arrange the celery, carrot, onion, bay leaf and thyme around the chicken. Add cool water to just barely cover the chicken. Sprinkle in the salt and pepper.
  • Cover the pot and bring to a simmer. Cook for about 1 - 1 ½ hours, or until the chicken is falling apart. Turn off the heat and let it rest in the broth for 30 minutes.
  • Remove the chicken from the broth and shred the meat into medium-size pieces. Discard the skin and bones.
  • Strain the broth and return to the pot. Discard the vegetables and herbs.
  • Return chicken to the pot with the broth. Bring to a simmer; add the noodles. Cook for about 6-8 minutes for wide egg noodles, or until the pasta is al dente (cooked, but still slightly firm). Turn off the heat; stir in lemon juice. Taste and season with additional salt and pepper, if necessary.

EASY CHICKEN AND NOODLES

Easy Chicken and Noodles image

This chicken and noodles recipe is inspired by Amish chicken and noodles but more dressed up and easy to make with rotisserie chicken. Thick egg noodles are coated in a velvety cream sauce and tossed with shredded chicken. It's a 30-ish minute dinner that will warm you up on a cold night.

Provided by April Anderson

Categories     Dinner

Time 35m

Number Of Ingredients 10

8 ounces thick egg noodles
2 tablespoons unsalted butter
2 large cloves of garlic, chopped
2 tablespoons all-purpose flour
Up to a 1/2 teaspoon kosher salt (see note)
1 1/2 cups chicken stock
1/2 cup heavy cream
16 ounces shredded rotisserie chicken (about 4 cups)
2 tablespoons fresh parsley, plus more for garnish
Ground black pepper, to taste

Steps:

  • Bring a pot of water to a boil and cook the noodles according to package instructions. Drain the noodles and set aside.
  • While the noodles are cooking, melt the butter in a large pan over medium heat. Add the garlic and cook it in the butter until the butter turns frothy. Sprinkle the flour and salt over the top of the butter and, using a spatula, stir it into the butter until a paste forms. Cook the flour and butter mixture for about a minute.
  • Slowly add the chicken stock to the butter and flour mixture. Add a little bit at a time, stirring constantly, so you create a smooth sauce. Once all of the stock is added, turn up the heat to high. As soon as the mixture starts to boil, turn the heat to medium. Simmer the sauce for five to ten minutes or until it starts to thicken.
  • Add the cream and stir it into the sauce. If your sauce is too thin at this point, simmer the it for a few more minutes until it thickens more. Add the shredded chicken and parsley and stir to combine. Add the cooked noodles and stir them until they are coated evenly in the sauce. Garnish each serving with more chopped parsley and a few sprinkles of ground black pepper.

Ultimate Chicken Noodle Soup image

It's not often that the most delicious comfort dishes are also very healthy for you. Categories     Entree     Main Course     Soup

Time 1h35m

Number Of Ingredients 17

2 tablespoons oil
3 to 3 1/2 pounds bone-in, skin-on chicken pieces ((drumsticks and thighs will produce the best flavor but you can include breasts))
1 large yellow onion (, finely chopped)
3 large carrots (, sliced into rings)
3 large celery ribs (, diced)
1 medium leek (, finely chopped, thoroughly rinsed and drained)
4 cloves garlic (, minced)
10 cups quality chicken broth ((either homemade or high quality store-bought; we use and recommend ANETO))
3/4 teaspoon dried thyme
3/4 teaspoon dried rosemary
2 bay leaves
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
8 ounces uncooked egg noodles ((or pasta of choice))
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill ((optional but highly recommended for best flavor; can use extra parsley instead))
1 tablespoon fresh lemon juice

Steps:

  • In a Dutch oven or stock pot heat the oil over medium high heat and brown the chicken pieces in batches on all sides until dark golden brown. Transfer the chicken to a plate and set aside. Add the onion, carrots, celery, and leek and cook until softened, 4-5 minutes. Add garlic and cook for another minute.Return the chicken pieces to the pot along with the thyme, rosemary, bay leaves, salt, and pepper. Add the broth and stir to scrape any browned bits on the bottom of the pot. Bring the soup to a boil, reduce the heat to low, cover ,and simmer for 50-60 minutes. Remove the chicken and let it sit until cool enough to handle. Remove and discard the skin. Remove and dice the chicken meat. Discard the bones. If desired, spoon off the top layer of oil on the soup. Add the noodles and cook for 8-10 minutes or until done. Discard the bay leaves. Place the chicken pieces back in the pot along with the parsley and lemon juice and heat through. Add salt and pepper to taste. Serve immediately.

FRUGAL GOURMET CHICKEN

Frugal Gourmet Chicken image

I think this came from the Frugal gourmet's tv show - was it back in the 80's? Anyway, this technique of "sealing in the juices" is wonderful and it ends the controversy (at least with me) whether the chicken on the grill is "really done". Try this.

Categories     Poultry

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 2

8 -10 chicken drumsticks, any chicken with bone and skin on would be fine
1 cup barbecue sauce (I use "Cookies", a brand that originates from Iowa)

Steps:

  • Choose a stockpot or large sauce pan, depending on amount of chicken you are making.
  • Fill pot with water and bring to boil.
  • Place chicken with skin in pot until it stops boiling.
  • (Seals in juices) Remove chicken from pot.
  • Bring pot to a boil again.
  • Put chicken back in and bring to a full boil.
  • When water and chicken are boiling again, put lid on pan, turn burner off.
  • Let stand for one hour.
  • Finish chicken by placing on grill for 15- 20 minutes Brush with barbecue sauce.
  • Preparation time is an estimate.

OLD-FASHIONED CHICKEN AND NOODLES

Old-Fashioned Chicken and Noodles image

This was a Sunday favorite when I was growing up. Sometimes my mother dipped the chicken in seasoned flour after boiling and fried it.

Provided by Roge

Categories     Main Dish Recipes     Pasta     Chicken

Time 1h50m

Yield 8

Number Of Ingredients 12

1 (2 to 3 pound) whole chicken, cut into pieces
4 stalks celery, diced
celery tops
1 carrot, shredded
1 onion, halved - unpeeled
ground black pepper to taste
3 (32 fluid ounce) containers chicken broth
2 eggs, beaten
1 cup warm water
2 tablespoons vegetable oil
1 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large pot over medium heat, combine chicken, celery and their tops, carrot, onion and its peel, and pepper. Pour broth over and bring to a boil. Cover, reduce heat and simmer until chicken is tender and falls from the bone, about 45 minutes.
  • While chicken is cooking, make noodles. In a large bowl, combine eggs, water, oil, salt and enough of the flour to make a stiff dough.
  • Strain chicken stock, reserving meat, celery and carrots. Pull meat from bones and return strained stock and meat, celery and carrots to pot. Bring to a boil. Make noodles by cutting dough from a broth-dipped spoon or using scissors or your fingers to make small, chickpea sized, noodles and dropping them in the boiling water. When the noodles rise to the surface they are done.
