Weeknight pasta? Rigatoni with veggies can be ready in less than 30 minutes.

3 cups uncooked rigatoni pasta (9 ounces)
2 cups broccoli florets
1 tablespoon cornstarch
1 can (12 ounces) evaporated fat-free milk
1/2 cup crumbled Gorgonzola cheese (2 ounces)
1 small tomato, chopped (1/2 cup)
1 jar (6 ounces) sliced mushrooms, drained
10 pitted ripe olives, cut in half
1/2 teaspoon salt
1/4 teaspoon pepper
Oregano sprigs, if desired

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in saucepan or skillet, place steamer basket in 1/2 inch water (water should not touch bottom of basket). Place broccoli in basket. Cover tightly and heat to boiling; reduce heat to medium-low. Steam about 3 minutes or until crisp-tender.
  • In 3-quart saucepan, mix cornstarch and milk using wire whisk. Heat to boiling over medium heat, stirring constantly; reduce heat to low. Stir in cheese; continue stirring 2 to 3 minutes or until cheese is melted.
  • Stir broccoli, tomato, mushrooms, olives, salt and pepper into cheese sauce; heat through. Serve over pasta. Garnish with oregano.

1 pound whole wheat pasta (fusilli or penne work great)
1-2 heads broccoli (cut into florets (about 3-4 cups))
2 tablespoons olive oil (plus a little more if desired)
1 medium onion (diced)
1 clove garlic (minced)
8 ounces mushrooms (sliced)
8 ounces Gorgonzola Cheese (crumbled)
salt and pepper to taste
¼-1/2 cup shredded Parmesan cheese
8 ounces diced pancetta (bacon, or chicken)
1 cup cherry tomatoes (halved)

Steps:

  • Boil water in a large pot. Add 1 teaspoon salt and a little olive oil to boiling water if desired. Add pasta and set a timer for 8 minutes.
  • While the pasta is cooking, heat olive oil in a frying pan. Add mushrooms, garlic, onion, and optional pancetta/bacon/chicken. Stir occasionally and cook until the ingredients start to brown. Then add optional tomatoes and cook for 2 more minutes.
  • When the timer for the pasta goes off, add the broccoli and cook for an additional 2 minutes. The pasta should be al dente and broccoli lightly cooked at this point. Drain the pasta and broccoli and return to the pot.
  • Stir mushroom mixture into the pasta. Then gently stir in the crumbled gorgonzola cheese and let sit for a minute or two-you want the cheese to soften, not form a sauce. Season with a little salt and pepper if desired.
  • Serve up and garnish with Parmesan cheese, and enjoy!

350g penne pasta
1 tbsp vegetable oil
1 onion , chopped
8 rashers smoked back bacon , chopped
200ml hot vegetable stock
300g frozen pea
150g pack gorgonzola , cubed
250g spinach

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the onion and cook for 3 mins until starting to soften. Add the bacon, cook for a further 5 mins, then pour in the hot stock and bring to the boil. Simmer for a few mins until the liquid has reduced slightly.
  • Stir in the peas, followed by the gorgonzola, until the cheese has melted and the peas are defrosted. Quickly stir through the spinach to wilt. Drain the pasta and mix with the sauce, then serve.

8 green 1 tablespoon butter
3 garlic cloves
250 g chicken breasts
150 g broccoli
150 g asparagus
90 g gorgonzola
100 ml dry white wine
cheese
2 tablesppon salt
120 ml cream
250 g pasta
ground pepper

Steps:

  • Sauté grated garlic in a large frying pan on a spoonful of butter for a few seconds, taking care not to burn it.
  • Add the diced chicken and fry for about 3-4 minutes. Season lightly with salt and pepper. In the meantime, cook the pasta (al dente) and vegetables. Put broccoli and asparagus in boiling water for 2 minutes, and then into ice-cold water (it is worth adding ice cubes, then the vegetables will retain their color and will be firm). Pour the wine into the chicken, and after a while the crème fraîche. We mix everything up. Finally, add the gorgonzola cheese, pasta, vegetables and a handful of grated Parmesan cheese. Mix everything until the cheese dissolves. Put on plates and sprinkle with grated Parmesan cheese.

Inspired by Mean-Chef's gorgonzola sauce recipe (only easier) and a dish I had at a great little Italian restaurant in Albany, NY.

1/2 cup butter
8 tablespoons flour
4 cups milk (skim is ok)
1 pint cream (light Cream or half and half is ok)
8 ounces gorgonzola, crumbled
1/2 cup parmesan cheese, grated
6 cloves garlic, minced
salt & fresh ground pepper
6 cloves garlic, sliced
2 medium sweet onions, coarsely chopped
3 medium bell peppers, julienned (green, red, and yellow or any combination you prefer)
1 1/2-2 lbs Italian sausages, cooked and cut in 1 inch pieces on the bias.
1 lb asparagus, cooked al dente (optional)
1 lb portabella mushroom, sliced and pre-sauteed (optional)
1 1/2 lbs penne pasta, cooked per direction on package (Mini-penne's are a good choice)
extra virgin olive oil
1 teaspoon italian seasoning (or substitute basil and oregano)
salt and pepper

Steps:

  • In a large sauce pan melt butter over medium heat.
  • Add minced garlic to sauce pan cook for a few minutes but do not brown.
  • Whisk in the flour to make reux- cook for 3 to 5 minutes whisking constantly- do not let it brown.
  • Whisk in milk and heat until boiling- whisk often, add some fresh ground pepper.
  • Once sauce is thickened remove from heat and set aside (well get back to the this later).
  • In a large frying pan over medium-high heat add 3 Tbs olive oil add onions and slice the remaining garlic into pan sautee for 3 minutes until onion starts to soften.
  • Add peppers, Italian seasoning cook for 5 minutes until Peppers begin to soften.
  • Add cooked Sausage and warm through.
  • Just before vegetable and meat mixture is finished- heat White sauce and stir in the cream, bring up to almost a boil and stir in parmesean and gorgonzola.
  • Stir sauce until most of the gorgonzola is incorportated (lumps of cheese left in the sauce is a good thing!).
  • Check cream sauce for salt add if necessary.
  • In pasta bowls place Penne followed by Pepper onion meat mixture, then spoon on the Gorgonzola sauce, arrange mushrooms and asparagas on top.

A quick and nice comfort food dish back from my university days. Exactly 5 ingredients! Well, the basic "student" version, which is actually really good and filling :). Feel free to add garlic, a dash of cognac, parsley, parmesan and toasted nuts (such as walnuts) to enhance the basic version.

400 g pasta (Spaghetti, Penne, Farfalle, ... any rather thick pasta to soak up this rich sauce)
150 g cream cheese
150 g gorgonzola
salt and pepper

Steps:

  • Boil pasta according to package instruction.
  • Melt cream cheese and gorgonzola in a pot. Stir frequently.
  • (For the deluxe version: now it's time to add cognac, garlic and minced parsley).
  • Salt and pepper to taste.
  • Drain pasta and mix with sauce. (Deluxe versioners now sprinkle with toasted nuts and shaves of parmesan).
