12 (1/3-inch-thick) baguette slices
3 ounces Gorgonzola crumbles, at room temperature
1/2 cup chopped walnuts or pecans
Honey

Steps:

  • Preheat oven to 325 degrees F. Place baguette slices in single layer on baking sheet. Toast in oven until golden, about 10 minutes.
  • Sprinkle Gorgonzola on baguette slices. Sprinkle nuts over each. Drizzle each slice lightly with honey.

A friend gave me this recipe about 10 years ago. I tweaked it a little. It's always a hit when I make it for special occasions and parties. I always double and sometimes triple the recipe depending on how many guests. Also, I make the fig jam ahead of time and sometimes caramelize the onions the day before. That's a real time...

1 c black mission figs
1 tsp lemon juice, fresh
2 c water
2 Tbsp maple syrup
1 dash(es) salt
ONIONS
2 c sliced onions
1 tsp balsamic vinegar
1/2 tsp fresh thyme, chopped
1/4 tsp salt
2 Tbsp butter
1 Tbsp olive oil
REMAINING INGREDIENTS
1/2 c (4 ounces) gorgonzola cheese. feta or any other soft pungent cheese can be substituded
24 lb diagonally cut french or ciabatta bread, toasted
1 tsp chopped fresh parsley

Steps:

  • 1. To make jam, remove stems from figs and put in food processor along with the lemon juice and coarsely chop. Put the fig mixture, 2 cups of water, syrup and salt in a medium sauce pan and bring to a boil. Reduce heat and simmer 25 minutes or until thick. This can be done ahead of time or the day before. Cool completely.
  • 2. Heat a large skillet with 2 tablespoons of butter and 1 tablespoon of olive oil, Add onions, vinegar, thyme and 1/2 teaspoon of salt. Cover and cook for 5 minutes. Remove cover and cook 25 minutes more or until onions are golden brown stirring occasionally. While onions cook, add 1/2 cup of water a little at a time as needed to keep onions from sticking to the pan.
  • 3. Spread 1 teaspoon of Gorgonzola over each slice of toasted bread. Top each with 1 teaspoon of caramelized onions and 1 teaspoon of fig jam.
  • 4. Sprinkle each with the chopped parsley. Can be placed in a warm oven till ready to serve.

1/4 cup extra virgin olive oil
4 yellow onions, thinly sliced
1-tablespoon fresh rosemary leaves
1/4 cup softened butter
Basic Pizza Dough, recipe follows
10 ounces Gorgonzola, crumbled
Salt
Freshly ground black pepper
1 cup warm tap water (100 to 115 degrees)
1 package active dry yeast
3 to 3 1/2 cups all purpose flour
1/2 teaspoon salt

Steps:

  • In a large saute pan over high heat, warm the oil. Add the onions and rosemary, and cook until soft and translucent, about 5 minutes. Add butter and lower heat and continue to caramelize for about 15 minutes. Season with salt and pepper and set aside.
  • Spread the pizza dough with the onion mixture and scatter Gorgonzola over top. Bake in a pizza oven or a preheated 400 degree oven until lightly golden and the crust is browned, about 20 minutes. Cut into wedges and serve.
  • Pour the water onto a medium--sized mixing bowl and add the yeast, stirring with a fork until dissolved. The water should turn a light beige color. Add 1 cup of flour and the salt. Mix thoroughly with a wooden spoon. Add the second cup of flour and repeat. The dough should start coming away from the sides of the bowl, forming a soft, sticky mass. Take the last cup of flour and sprinkle over a clean, dry work surface and flour your hands well.Take the dough from the bowl and begin to work in the additional flour a little at a time. Use the heel of your hand to knead the dough and push across the work surface, clenching the dough with your fist and twisting it over. Use a dough scraper to help gather any wet dough that sticks to the surface while you are kneading. Also only add as much flour as it takes to keep the dough from sticking to your hands. When the dough no longer feels sticky, push the heel of your hand down into it and hold it there for 10 seconds. If the dough comes up clean, it's ready. If it sticks you will have to knead it a bit more.
  • Lightly oil a 2 quart bowl with vegetable oil, and roll the ball of dough around the bowl to coat it with a thin film of oil, then tightly seal the bowl with plastic wrap. Keep in a warm place, and let the dough rise for 30 to 45 minutes. When dough doubles in size, remove from bowl and punch it down with your fist to deflate, then knead it again for about a minute. Dough is now ready to stretch into a round, or press into a pizza pan.
  • Note: If you have a food processor with a dough hook attachment, you can make the dough much faster. Start by adding the yeast and water first and mixing well. Then add all the flour and salt and mix into a ball. Then rise the dough.

4 ounces cream cheese, room temperature
1/4 cup mayonnaise
4 ounces (1 cup) crumbled gorgonzola cheese
2 Tablespoons finely chopped green onion
Salt and fresh ground black pepper, to taste
1 cup halved red grapes
1/2 cup toasted pine nuts*
30 slices baguette bread

Steps:

  • 1. Preheat broiler and adjust rack so that it is about 4 inches from heat source.
  • 2. Beat together cream cheese, mayonnaise, gorgonzola cheese and green onions; season with salt and pepper. Fold in grapes and pine nuts.
  • 3. Spread a tablespoon of cheese mixture on each baguette slice.
  • 4. Broil until heated and lightly browned, about 3 minutes. Serve immediately.
  • *To toast pine nuts: Put pine nuts on baking sheet. Bake in preheated 350 degrees F. until lightly browned, about 7 minutes.

1 cup dried black figs (about 6 ounces)
1 teaspoon lemon juice
2 cups water
2 tablespoons maple syrup
1 dash salt
cooking spray
2 cups vertically sliced yellow onions
1 teaspoon balsamic vinegar

1/4 teaspoon salt
1/2 cup water (optional)
1/2 cup gorgonzola, softened
1 loaf French baguette, toasted and sliced

Steps:

  • To prepare jam, remove stems from figs. Place figs and juice in a food processor; process until figs are coarsely chopped.
  • Place fig mixture, 2 cups water, syrup, and dash of salt in a medium saucepan; bring to a boil. Reduce heat, and simmer 25 minutes or until thick. Cool completely.
  • To prepare onions, heat a large nonstick skillet coated with cooking spray over medium heat.
  • Add onion, vinegar, 1/2 teaspoon thyme, and 1/4 teaspoon salt; cover and cook 5 minutes. Uncover and cook 20 minutes or until onion is deep golden brown, stirring occasionally.

2 large Vidalia onions, thinly sliced
2 teaspoons sugar
1 (10 ounce) package refrigerated pizza dough
1 pound Gorgonzola cheese, crumbled

Steps:

  • In a large saute pan, melt butter over medium heat. Saute onions in butter until the onions are soft and dark brown, approximately 25 minutes. Stir in sugar, and continue cooking for 1 or 2 more minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Grease a pizza pan or cookie sheet, and press out the dough to desired thickness. Spread onions evenly over the dough, and top with crumbled Gorgonzola.

1 small shallot, finely diced
1 tablespoon sherry vinegar
Salt

1 teaspoon Dijon mustard
2 tablespoons extra virgin olive oil
1 tablespoon walnut oil or olive oil
2 tablespoons olive oil
1 large onion, sliced 1/4-inch thick
Salt

1/2 teaspoon finely chopped rosemary
6 slices rustic whole-grain bread or ciabatta, 3/4-inch thick
3 to 4 ounces Gorgonzola dolce
20 to 24 walnut halves
8 ounces mixed bitter greens, like radicchio, curly endive and escarole
1/2 cup finely chopped pale interior celery stalks and leaves
2 or 3 ripe pears

Steps:

  • Make the vinaigrette: Put the shallot in a small bowl with the vinegar and a good pinch of salt and pepper to taste. Let macerate for 5 to 10 minutes. Stir in the mustard, then whisk in the oils. Taste and adjust seasoning.
  • Make the crostini: Heat the oil in a skillet over medium-high heat. Add the onion and brown, turning frequently. When it begins to soften, season generously with salt and pepper; reduce heat to medium. Continue cooking for about 5 minutes, until nicely caramelized. Add the rosemary and transfer to a bowl to cool to room temperature.
  • Heat the oven to 400 degrees. Put the bread in the toaster until lightly browned, then lay the slices on a baking sheet. Spread about 1/2 ounce Gorgonzola on each toast, then top with the onion mixture and 3 or 4 walnut halves.
  • Bake on the top shelf of the oven until bubbling and lightly browned, 5 to 7 minutes. Cut into wedges if desired.
  • Assemble the salad: Put the greens and chopped celery in a low wide salad bowl. Just before serving, lightly sprinkle with salt and pepper, then toss with half the vinaigrette, just coating the leaves. Peel, core and slice the pears. Dress the slices with the rest of the vinaigrette in a separate bowl, spoon the pears over the salad, and serve with the warm crostini on the side.

Pear & gorgonzola crostini, perfect vegetarian buffet finger-food

2 small firm pears , unpeeled
2 tbsp clear honey
150ml port
150ml red wine
1 French bâton or baguette (30cm/12in long)
2 tbsp extra-virgin olive oil
200g gorgonzola , at room temperature
mustard and cress, to garnish

Steps:

  • Halve and core the pears, then cut each one into 12 small wedges. Place in a heavy-based saucepan with the honey, port and wine. Cook for 5-10 minutes or until the pears are just tender when pierced with the tip of a sharp knife (they shouldn't be soft).
  • Carefully tip the pears into a sieve set over a small saucepan and allow them to drain thoroughly.
  • Reduce the liquid in the saucepan by two-thirds - it should have a syrupy consistency like runny honey. This will take 10-12 minutes. Pour the syrup into a small bowl and allow to cool while you prepare the bruschettas.
  • Preheat the grill to hot. Cut the bread into 24 slices and brush both sides of each slice with olive oil. Grill until the bruschettas are golden on both sides. This only takes a minute, so keep watch.
  • Spread each bruschetta with a little gorgonzola and top with a poached pear wedge. Arrange the bruschettas on a serving plate and drizzle with the port syrup using a teaspoon. Sprinkle over a little mustard and cress.
  • Prepare ahead: you can poach the pears the day before and serve them cold - they're just as nice. Take them out of the syrup and reduce, then store the pears and syrup in separate plastic containers in the fridge. If the syrup is too thick the next day, add a little warm water, and if it is too thin, you can reduce it by simmering for a minute or two.
