Truly the best monster cookie recipe! These peanut butter, oatmeal and chocolate chip cookies are perfectly crisp on the outside and tender on the inside. Recipe yields 18 cookies.

Number Of Ingredients 10

1 1/2 cups creamy or chunky peanut butter (that's one full 16-ounce jar minus 1/4 cup)
2 1/2 cups packed coconut sugar or 2 cups lightly packed brown sugar
1/3 cup melted coconut oil or 5 tablespoons melted butter
3 large eggs
2 teaspoons baking soda
2 teaspoons vanilla extract
2 1/2 cups quick-cooking oats or old-fashioned oats (certified gluten-free if necessary)
3/4 cup bittersweet chocolate chips
3/4 cup candy-coated chocolates (like M&M's) or additional chocolate chips
Optional: flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line tw0 large, rimmed baking sheets with parchment paper or silicone mats for easy clean-up.
  • In a large mixing bowl, combine the peanut butter with the sugar and coconut oil. Use an electric mixer or a large spoon to mix until well combined. Add the eggs, baking soda and vanilla, and mix well. Add the oats and chocolate chips and mix until they're evenly incorporated.
  • Working with an ice cream scoop or 1/4 cup measuring cup, drop the cookies onto the prepared baking sheets. These cookies spread while baking, so leave several inches around each (I can bake six at a time). If they are irregularly shaped at the base, gently shape them into a more rounded mound. If you'd like your cookies to look extra pretty, dot a few extra M&M's and chocolate chips on each mound of dough before baking.
  • Bake 10 to 12 minutes, until they're just starting to turn golden around the edges. Do not overbake. Let the cookies cool for 10 minutes before transferring to a cooling rack. In the meantime, bake your next six cookies, and so on.
  • If desired, sprinkle the cookies lightly with flaky sea salt. Let them cool completely before storing them in an airtight container. Cookies will keep well for several days at room temperature.

Monster cookies are loaded with creamy peanut butter, chewy oats, colorful m&ms, and gooey chocolate chips! They bake up super thick, with chewy edges and incredibly soft centers. A must try for all of my fellow cookie monsters out there!

1 cup (227 grams ounces) unsalted butter, at room temperature
1 cup creamy peanut butter, at room temperature
2 teaspoons pure vanilla extract
1 and 1/4 cups light brown sugar, packed
1/3 cup granulated sugar
2 large eggs, at room temperature
1 large egg yolk, at room temperarure
2 cups (240 grams) all-purpose flour
1 cup old-fashioned oats
1/2 cup quick oats
1 teaspoon baking soda
1 and 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 and 1/2 cups M&M candies
1 and 1/2 cups semi-sweet chocolate chips
1/2 cup salted peanuts, roughly chopped

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using a handheld electric mixer, beat the butter on medium speed until smooth and creamy.
  • Add in the peanut butter and vanilla and beat until smooth, about 2 minutes.
  • Next add in both sugars and beat until light and fluffy, scraping down the sides and bottom of the bowl as needed, about 2 minutes.
  • Add in the eggs and yolk, one at a time, beating well after each addition. Turn mixer off.
  • Add in the flour, oats, baking soda, baking powder, cinnamon, and salt. Whisk the ingredients together lightly before turning the mixer back on low and mixing in the dry ingredients until just combined. Be sure not to over mix here.
  • Turn mixer off and use a spatula to fold in the M&Ms, chocolate chips, and peanuts.
  • Cover the bowl and place it in the fridge for 30 minutes, or up to 2 days.

These cookies are fool proof and delicious! This makes a pretty big batch, about 60 or more. I like to ball up half the dough and freeze it for quick cookies next time. I dare you to try and just eat one!!

2 tsp baking soda
5 tsp cornstarch
3 Tbsp mollasses
1 c semi sweet chocolate chips
1 c m&ms

Steps:

  • 1. Preheat oven to 350 Cream butter, sugar, vanilla, and molasses in mixer. Scrape down the sides and mix in the eggs. In separate bowl, stir together dry ingredients. Mix them into wet ingredients. Stir in choc chips and M&Ms. Drop by the tablespoon onto lined cookie sheet. Bake 8-10 minutes.

Steps:

  • Beat butter, vanilla, egg and cream cheese until fluffy. Mix in cake mix. Add green food coloring until it's the color you want. Chill for 30 minutes.   • In a large bowl, using a hand-held mixer or stand mixer with paddle attachment, cream the butter and sugars together on medium speed, about 3 minutes. Mix in the peanut butter, egg, and vanilla (in that order). Scrape down the sides of the bowl as needed. Slowly mix in the baking soda and flour. Do not over-mix. On low speed, beat in the quick oats, M&Ms, and chocolate chips just until incorporated. If the dough is very soft and unmanageable by hand, chill the dough for 30 minutes before rolling.
  • Rolls balls of dough, about 2 Tablespoons of dough per ball, onto prepared baking sheet. Press a few extra M&Ms on top for looks, if preferred. Bake for 11-13 minutes– the cookies will still look a little soft, which is recommended. Slightly press down the baked cookies with the back of a spoon, since the cookies only slightly spread in the oven. Allow cookies to cool on baking sheet for 10 minutes before transferring to a wire rack. Cookies will firm up as they cool.
