GOOEY BUTTER COOKIES

Steps:
- Cream together cream cheese and butter.
- Add egg and vanilla, then cake mix.
- Refrigerate for at least 1 hour or until cookie dough is firm.
- Roll in 1 inch balls, then roll in confectioner's sugar.
- Preheat oven to 350*.
- Bake cookies on ungreased cookie sheet for 10-15 minutes or until cookies are slightly firm to touch.
- Wait a minute or two before removing cookies to cooling racks.
- Dust with confectioner's sugar.
OATMEAL CARMELITAS
Chewy gooey caramel, nuts and chocolate. We call them Goober Cookies. They taste great the next day if you get them to last that long.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x9 inch square pan.
- Combine the 1 cup flour, baking soda, oats, brown sugar, salt and melted butter. Mix to combine, mixture will be very crumbly. Press half of the mixture into the bottom of the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 10 minutes.
- Let cool slightly then sprinkle over the crust the chocolate chips and chopped nuts. Mix the caramel ice cream topping with the 3 tablespoons of flour and drizzle over the chocolate chips. Top with the remaining oatmeal mixture. You will need to break it into small pieces to cover.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Let bars cool before cutting.

Steps:
- preheat the oven to 350.
- beat butter and sugars until creamy.
- add milk and egg.
- in another bowl, mix flour, soda, and salt.
- gradually add the flour mix to the sugar and butter until combined.
- stir in the oats, goobers, and raisinettes.
- drop in teaspoonfulls on a lined cookie sheet.
- bake for 12 minutes.
GOPHER BARS
Steps:
- Preheat the oven to 350 degrees F. Grease a glass 9-inch-by-13-inch baking dish with butter and line it with strips of parchment paper so the paper comes up over the edge of the dish. Grease the paper with more butter.
- Place a small pot of water on medium heat, and bring to a simmer. Place a heatproof bowl over the simmering water and add the butter and chocolate to gently melt together, stirring to combine. (This can also be done in the microwave, heating at 15 second intervals.)
- Transfer the chocolate and butter mixture to a large mixing bowl. Add the brown and granulated sugars, eggs, vanilla and salt and whisk together. Add the flour and gently whisk to combine, then pour into the baking dish. Bake until a toothpick inserted in the center comes out somewhat clean, 25 to 30 minutes. Let the brownies cool completely.
- Carefully spread the Minty Buttercream over the brownies, then refrigerate until firm. Once the buttercream has firmed up, use the parchment sleeves to carefully remove the brownies from the baking dish. Slice into bars.
- Combine the cream cheese and butter in the bowl of a stand mixer fitted with the paddle attachment and beat until smooth. Add the creme de menthe and beat until combined. Add the confectioners' sugar a quarter at a time and beat until the mixture is smooth and fluffy.
GUBERBURGERS

- Warm the peanut butter in a saucepan over medium-low heat, stirring, until loose, about 2 minutes. Reduce the heat to low; keep warm.
- Divide the meat into 6 loose balls, then gently flatten into thin patties. Heat a large cast-iron skillet over high heat. Add the patties to the hot skillet, smash them flat with a spatula and season with salt and pepper. Cook, flipping once, until the burgers are well done, 4 to 5 minutes per side.
- Meanwhile, melt the butter in another skillet over high heat. Place the buns cut-side down in the hot skillet, press them down slightly with another skillet and toast until golden, about 2 minutes. Put the burgers on the bottom buns and spread each with 1 heaping tablespoon warm peanut butter. Top with lettuce and tomato. Spread mayonnaise on the cut side of each top bun, then put on top of the burgers.
GOOBER COOKIES

- sift together flour,salt and baking powder; sett aside. cream together shortening, goober, and sugars; beat in vanilla and eggs. stir in flour mixture, blending well. shape mixture into 1 inch balls; place on greased cookie sheet. flatten each cookie with the tines of a fork;dip fork in flour to keep it from sticking to cookie dough. bake cookies at 350 degrees for about 10 minutes.
GOOBER PEAS OR BOILED PEANUTS
A southern treat my husband was craving from his childhood in Florida. I'm posting the recipe so I have it handy in my cook book. :) Never tried them myself so I'm anxious to what his fuss is about... Boiled Peanuts Recipe Judging from the many variations on recipes for boiled peanuts, there appears to be no wrong way to boil green peanuts. The important thing is the many tastings needed to determine when they are done. You must taste test the boiled peanuts for saltiness and firmness, as some people prefer soft nuts to firmer ones.You can also add spices to add different flavors, I see canjun flavor is popular as well as adding hot sauce or cayenne pepper to the boiling mix to add kick I don't know how much though I assume it's preferential. *NOTE* I'm using a bag of roasted peanuts still in the shell as I am in California and this is all I could find in the store. Also it seems Valencia peanuts are recommended because they have better flavor but my package doesn't say what type they are...My research says Valencia are the most common though.

- Wash unshelled peanuts thoroughly in cold water until water runs clear; then soak in cool, clean water for approximately 30 minutes before cooking.
- In a large pot ( I used my pressure cooker), place soaked peanuts and cover completely with water. Add 1 cup of salt per gallon of water. Cook, covered, on high heat for 4 to 7 hours.
- NOTE: the cooking time of boiled peanuts varies according to the maturity of the peanuts used and the variety of peanuts. The cooking time for a 'freshly pulled" or green peanut is shorter than for a peanut that has been stored for a time.
- Boil the peanuts for about 4 hours, then taste. Taste again i 10 minutes, both for salt and texture. Keep cooking and tasting until the peanuts reach desired texture (when fully cooked, the texture of the peanut should be similar to that of a cooked dry pea or bean).
- Remove from heat and drain peanuts after cooking or they will absorb salt and become over salted.
- Peanuts may be eaten hot or at room temperature, or chilled in the refrigerator and eaten cold, shelling as you eat them.
- Freezing boiled peanuts:.
- Prepare peanuts as indicated above. Drain, allow to cool, and freeze in airtight containers. They keep indefinitely.
- Canning Boiled Peanuts:.
- Prepare peanuts and brine the same as for boiling for immediate use.
- Pack peanuts into jars to within one-half inch of the top, using equal weights of peanuts and hot brine (212°F). Partially submerge containers in upright position in boiling water for 10 minutes.
- Seal while hot and process 45 minutes at 10 pounds pressure. Cool containers in water, label, and store away from heat.

GOOBER THUMBPRINT COOKIES
These are so tasty, I love an old-fashioned peanut butter cookie and this is just a little better!!

- Combine flour, cocoa, baking powder and salt in small bowl.
- Melt morsels over lowest possible heat; stir until smooth.
- Beat sugar, 1/3 cup peanut butter, butter and vanilla in a large mixer bowl until creamy. Beat in melted chocolate. Add eggs one at a time, beating well after each addition. Gradually stir in flour mixture. Cover; chill just until firm.
- Shape into 1-inch balls; press thumb into tops to make about 1/2 -inch deep impressions. Place on ungreased baking sheets. Fill each depression with about 1/2 teaspoons peanut butter; press 3 goobers into peanut butter.
- Bake in preheated 350F oven for 10-15 minutes or until sides are set. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely.

Steps:
- Preheat oven to 350.
- Mix the base together and press into an unbuttered pan, 9 x 13, and bake 12 to 16 minutes. Remove from oven and sprinkle 3 cups marshmallows on the base mixture and place back in the oven until marshmallows puff up.
- Remove from oven and cool.
- While cooling, mix the corn syrup, butter, vanilla and butterscotch chips over low heat , stirring constantly until topping is smooth. Remove from heat and add immediately the Rice Krispies and Peanuts.
- Spread topping over the cooled base.
- Cut into squares.
