HONEY WHOLE WHEAT LOAVES

Steps:
- In a large bowl, dissolve yeast in warm water. Add the milk powder, honey, wheat bran, wheat germ, flax, oil, salt, whole wheat flour and 3 cups all-purpose flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down and turn onto a floured surface; shape into two loaves. Place in two 9x5-in. loaf pans coated with cooking spay. Cover and let rise until doubled, about 30 minutes., Bake at 350° for 35-40 minutes or until golden brown. Remove from pans to wire rack to cool.

FRENCH BREAD ("RAPID RISE")
This recipe makes a rather good French loaf. Since it uses "rapid rise" yeast, it is quicker to make because it only needs 1 rise instead of 2. Prep time includes 40 minute rising time.

Steps:
- Set aside 1 cup of flour.
- In a large bowl, mix remaining flour, sugar, salt and yeast.
- Stir hot water into dry mixture.
- Mix in enough reserved flour to make a soft dough.
- On lightly floured surface, knead dough until smooth and elastic (about 8-10 minutes).
- Cover dough and let it rest for 10 minutes.
- Divide dough in half.
- Roll half of dough into a 10x15 inch rectangle.
- Roll dough tightly (like a jelly roll), starting from the long side, and tapering the ends.
- Pinch ends and seam to seal.
- Place dough seam side down on greased baking sheet which has been sprinkled with cornmeal.
- Repeat with remaining half of dough.
- Cover dough and let rise in a warm draft-free place until doubled in size (about 35-40 minutes).
- With a sharp knife or razor blade, make 4 diagonal cuts on the top of each loaf.
- Combine egg white and 1 Tablespoon water, brush on loaves.
- Bake in preheated 425°F oven for 25-30 minutes or until done.
- Remove from baking sheets and cool on wire racks.
- Note: If you want to make baguettes instead of loaves, you can roll the dough into a rope (by hand) to get the longer thinner shape.

Using half whole wheat and half all purpose flour yields a light crust with a distinctive nutty taste. Quick rising yeast shortens the rising time to just 10 minutes, making wholesome homemade pizza a possibility for busy weeknights. A food processor makes fast work of mixing the dough, but you can also use a stand mixer fitted with a paddle attachment or a little elbow grease to do it by hand. Whichever method you choose, add enough liquid to the dry ingredients to make a soft dough. If kneading by hand, knead for about 10 minutes. The dough will keep, in a plastic bag coated with cooking spray, in the refrigerator for up to 2 days.

Steps:
- Put 1 cup of the flour in your mixing bowl. Stir in the yeast, salt and sugar. Pour in the warm milk and mix well for three or four minutes on medium. Let stand for about 10 minutes until bubbly.
- Add the egg, then the onion and cheese, then the rest of the flour until the dough holds together and is only a bit sticky. Cover with a damp towel and let it rise for an hour.
- Shape your savory dough into a loaf or two small loaves and put into a loaf pan or on to a baking tray. Let it rise until double, about 45 minutes.
