No need to head to the store when you're craving a little jam with your weekend morning breakfast. If you have a few ingredients in your pantry and nutrient-packed goji berries, you can make your own homemade, healthier goji berry jam. Goji berry jam is a wonderful accompaniment to any healthy bread, fruit, pancakes or on any homemade crackers. Goji berries are showing incredible promise in reducing premature aging, improving eye health, immune function, liver function, reducing the risk of cancer and improving brain health. Here is more on the benefits of this wonderful goji berry.

Ingredients ½ cup (55 g) goji berries ½ cup (125 ml) water 2 tsp honey, or to taste 2 tsp lemon juice 2 tsp agar agar

Steps:

  • Directions Soak goji berries in water in a small saucepan for 1 hour without heat. Add the lemon juice and honey into the saucepan then gently bring it up to boil. Once it comes to the boil, add the agar agar then simmer it for 10 minutes gently, stirring often. You can mash it up or mix it with a blender for a smoother consistency. Store it into a small, air tight container in the fridge for up to 1 week. It will spread easily with a knife. If you wish to soften it further, warm it up.

Combine gooseberry juice, sugar and fruit pectin to produce SURE JELL Gooseberry Jelly. Gooseberry jelly may sound silly, but it tastes delicious.

Yield Makes about 8 (1-cup) jars or 128 servings, 1 Tbsp. each.

5-1/2 cups prepared juice (buy about 4-1/2 lb. fully ripe gooseberries)
1 cup water
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
7 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Crush gooseberries thoroughly, one layer at a time, or grind gooseberries. Place in saucepan; add water. Bring to a boil. Reduce heat to low; cover and simmer 10 min. Place three layers of damp cheesecloth or a jelly bag in large bowl. Pour prepared fruit into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 5-1/2 cups juice into 6- or 8-qt. saucepot.
  • Stir pectin into juice in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)
