GRILLED CHILES RELLENOS WITH CORN, GOAT CHEESE, AND CILANTRO SAU

Grilled Chiles Rellenos With Corn, Goat Cheese, and Cilantro Sau image

From New Mexico Magazine, June 2013. Vegetarian Southwest grilling. Make sure you get fat chiles, preferably poblanos, as fat ones are easier to stuff.

Provided by zeldaz51

Categories     Corn

Time 40m

Yield 4 serving(s)

Number Of Ingredients 13

3/4 cup chopped cilantro
1/2-1 fresh jalapenos or 1/2-1 serrano chili
3/4 cup creme fraiche (crema preferred) or 3/4 cup sour cream (crema preferred)
1/8 teaspoon salt
8 ounces chihuahua cheese, grated (or Muenster)
6 ounces fresh goat cheese (or a combination) or 6 ounces cream cheese, softened (or a combination)
1/2 cup corn kernel (fresh or thawed frozen)
1/4 cup pine nuts, toasted in dry skillet
2 tablespoons minced onions
1/2 teaspoon minced fresh epazote (optional)
8 poblano chiles
vegetable oil cooking spray
chopped tomato (optional)

Steps:

  • Prepare cilantro sauce. In food processor, mince cilantro and jalapeño very fine. Spoon in crema and salt, process again until well blended. Refrigerate until needed. (Sauce can be made 1 to 2 hours ahead, but after that the cilantro's vibrancy begins to fade.).
  • Prepare filling, mixing together all ingredients in medium bowl. Cover and chill until needed. (Filling can be combined 1 day in advance, covered, and refrigerated.).
  • Fire up grill, bring temperature to medium heat (4 to 5 seconds with hand test).
  • Grill chiles uncovered 8 to 10 minutes, turning occasionally so that skin blackens and blisters all over. Place chiles briefly in plastic bag to steam as they cool.
  • When chiles are cool enough to handle, peel them, wearing rubber gloves if your skin is sensitive. Slit each chile from end to end and remove any loose seeds. Don't remove seed pod or it will weaken chile walls. (Chiles can be prepared to this point a day ahead, covered, and refrigerated. Bring them back to room temperature before proceeding.).
  • Stuff chiles with filling, bringing slit edges of each chile tightly back together. Spritz chiles with oil. Return chiles to grill, slit side down. Grill uncovered 5 to 7 minutes, turning once, until filling feels quite soft. Serve chiles hot with drizzle of sauce and garnish of chopped tomato.

CHEESE-STUFFED PEPPERS: CHILE RELLENOS

Cheese-Stuffed Peppers: Chile Rellenos image

Provided by Robert Irvine : Food Network

Categories     appetizer

Time 58m

Yield 8 servings of 2 peppers each

Number Of Ingredients 8

16 (8-inch) Anaheim peppers, stems and seeds removed
4 tablespoons grapeseed oil (2 tablespoons to brush on peppers and 2 to saute)
1 cup grated Monterey Jack cheese (from about a 6-ounce piece before grating)
1 cup crumbled goat cheese (about 4 to 6 ounces)
1 tablespoon minced fresh thyme leaves (stripped from about 4 or 5 sprigs)
1 teaspoon minced fresh rosemary leaves (stripped from 1 or 2 large sprigs)
3 large fresh sage leaves, minced
1 cup blue cornmeal

Steps:

  • Preheat oven to 450 degrees F. Brush peppers with 2 tablespoons of the oil (reserving the balance of the oil) and roast until blackened, about 10 minutes. Remove and cover roasting pan with foil or use tongs to transfer peppers to a plastic bag. Let "sweat" for 15 minutes. This will help you remove the skin from the pepper.
  • In a small bowl, mix jack cheese, goat cheese, thyme, rosemary, and sage, and mash together.
  • Peel charred skin from peppers and stuff each pepper with about 2 tablespoons of the cheese/herb mixture. Heat the remaining 2 tablespoons of the oil over medium heat in a large skillet. Spread blue cornmeal on a piece of waxed paper and roll stuffed peppers to coat with cornmeal. Sear coated peppers on all sides, leaving undisturbed for the first 2 minutes to allow the cornmeal to integrate into the surface of the peppers and to allow the caramelization process to begin to prevent crusting off of the cornmeal.
  • Transfer to a platter and let rest for 5 minutes before serving.

AUTHENTIC MEXICAN CHILI RELLENOS

Authentic Mexican Chili Rellenos image

This is an authentic Mexican recipe that has been handed down for generations in my family.

Provided by Kentucky Guera

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h

Yield 6

Number Of Ingredients 6

6 fresh Anaheim chile peppers
1 (8 ounce) package queso asadero (white Mexican cheese), cut into 3/4-inch thick strips
2 eggs, separated
1 teaspoon baking powder
¾ cup all-purpose flour
1 cup vegetable shortening for frying

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Place peppers onto the prepared baking sheet, and cook under the preheated broiler until the skin of the peppers has blackened and blistered, about 10 minutes. Turn the peppers often to blacken all sides. Place the blackened peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 15 minutes.
  • Rinse cooled peppers under cold water to peel off the skins, and cut a slit along the long side of each pepper to remove the seeds and core. Rinse the peppers inside and out, and pat dry with paper towels. Stuff the peppers with strips of the cheese.
  • Whisk the egg yolks in a bowl with the baking powder. In a second metal bowl, beat the egg whites with an electric mixer until the whites form stiff peaks. Gently fold the beaten egg whites into the yolk mixture. Place flour into a shallow bowl.
  • Heat the vegetable shortening in a skillet over medium heat. Roll each stuffed pepper in flour, tap off excess flour, and dip the peppers into the egg mixture to coat both sides. Gently lay the coated peppers into the hot shortening. Fry peppers until lightly golden brown and the cheese has melted, about 5 minutes per side.

MIL'S SKILLET CHILE RELLENOS

MIL's Skillet Chile Rellenos image

My mother-in-law grew up in SoCal, so when I received poblano peppers in my CSA share I asked for her chile rellenos recipe. DH advised that I use two eggs per pepper, but it would also work as three eggs per two peppers. If using canned peppers, skip the first step. Prep time includes step one for fresh peppers.

Provided by O-mama

Categories     Cheese

Time 45m

Yield 2-4 serving(s)

Number Of Ingredients 5

1 tablespoon oil
4 poblano chiles or 4 anaheim chilies
8 eggs, separated
4 slices monterey jack cheese, 1/4-inch thick
1 tablespoon flour

Steps:

  • When using fresh peppers fry whole in hot oil until almost burned. Remove from pan. Slice lengthwise on one side and cut off top, removing seed pod. Peel off skin. (Skip this step if using canned, MIL recommends Ortega).
  • While peppers are frying in step 1, separate the egg yolks from whites. Beat whites until stiff (I do firm peaks), then put in freezer to get cold. Beat yolks until thick (not quite soft peaks), chill in fridge.
  • Slice jack cheese about 1/4" thick and trim to fit peppers.
  • Stuff peeled and seeded peppers with cheese and roll in flour.
  • Combine egg yolks and whites.
  • Dip peppers in egg mixture and cook in hot skillet, turn once when golden. Spoon remaining egg mixture over top of peppers to make a thick crust. Cook until light brown and eggs are cooked through.
  • Notes: We top with additional cheese (like aged goat cheese) upon serving. Others serve with enchilada sauce and sour cream.

  • Toss clean tomatoes with about 1/2 teaspoon oil to coat. Broil on a rimmed baking sheet close to heat for about 15 minutes, turning a few times and rotating the pan once, until blistered and charred in spots. Cool slightly, cut off tops, chop roughly, and transfer to a blender. While tomatoes roast, heat just enough oil to coat the bottom of a medium saucepan over medium heat. Add garlic (with skins on) and toss to coat. Cover the pan and toast 10 to 15 minutes, shaking or stirring frequently, being careful of splatters when removing the lid. Once golden and soft, turn off heat, cool slightly, and remove peels. Add peeled garlic to blender with tomatoes and blend until very smooth.
