BAKED GOAT CHEESE DIP

1 10-ounce log goat cheese, at room temperature
4 ounces cream cheese, at room temperature
1/4 cup grated parmesan cheese
1/4 cup extra-virgin olive oil, plus more for brushing
Freshly ground pepper
8 small cocktail tomatoes (about 10 ounces), quartered
2 tablespoons chopped fresh chives
2 teaspoons balsamic vinegar
1 clove garlic, finely chopped
Kosher salt
Toasted baguette slices, for serving

Steps:

  • Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
  • Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

4 tablespoons plain yogurt
3 tablespoons chopped fresh chives

1 teaspoon chopped fresh thyme
1/2 teaspoon chopped fresh rosemary
Toasted baguette slices
Assorted raw vegetables: carrots, red bell peppers, cauliflower, English cucumber, zucchini etc.

Steps:

  • Blend goat cheese, oil and yogurt in processor until smooth. Add herbs and season dip to taste with salt and pepper. Cover and refrigerate about 4 hours. Serve dip with toasted baguette slices and raw vegetables.

2 teaspoons fresh rosemary
2 teaspoons minced fresh oregano
2 cups fresh tomato sauce
24 black olives, pitted

Steps:

  • Preheate the broiler.
  • Scatter the cheese on the bottom of the baking dish or dishes.
  • Sprinkle with half of the herbs.
  • Spoon on just enough tomato sauce to evenly coat the cheese.
  • Sprinkle with olives and the remaining herbs.
  • Place the baking dish or dishes under the broiler about 3 inches (8 cm) from the heat.
  • Broil until the cheese is melted and fragrant, and the tomato sauce is sizzling, 2 to 3 minutes.

3 cloves garlic, peeled and thinly sliced
1 teaspoon chopped fresh rosemary
3 long strips orange zest
1/8 teaspoon crushed red pepper
1 log (11 oz.) fresh goat cheese
1/4 cup dried cranberries

Steps:

  • 1. In small saucepan heat oil over medium-high heat. Reduce heat to medium. Add garlic, rosemary, orange zest and red pepper. Cook, uncovered, for 3 to 5 minutes or until garlic is golden, stirring frequently.
