- Preheat the oven to 400°F. Rinse the sweet potatoes to remove any dirt, pat them dry with paper towels, and poke several holes in them with a fork for the steam to escape. Put the potatoes in a baking dish or on a baking sheet lined with aluminum foil. Roast until completely tender, 35-45 minutes. Cool completely before handling. Peel the sweet potatoes, discard the skins, and puree the flesh in a food processor. Measure out 1 2/3 cups and set aside, saving the rest for another purpose. (The sweet potatoes may be roasted 1 day ahead and stored in an airtight container in the refrigerator.) Reduce the oven temperature to 350°F.
- Line the bottom of a 9-inch round baking pan with 2-inch sides with parchment paper and grease lightly with butter. Put the pan on a baking sheet.
- In a large bowl, whisk together the cooled roasted sweet potato purée, eggs, jaggery, maple syrup, 6 tablespoons butter, nutmeg, turmeric, and salt until smooth. Add the coconut milk and flour and whisk until the mixture is smooth, with no visible streaks of flour.
- Pour the batter into the prepared pan and put the pan, still on the baking sheet, in the oven. Bake for 55-60 minutes, rotating the baking sheet halfway through. The pudding should be firm to the touch in the center and light golden brown around the edges. Remove from the oven, and cool completely in the pan on a wire rack. Wrap the pan with plastic wrap and refrigerate for at least 6 hours, and preferably overnight, to set.

- First extract the coconut milk.Put the grated coconut in a blender and add 1 cup hot water. Run the blender until the coconut has become as smooth a paste as possible. Take the ground coconut out and press it through a fine sieve, into a bowl, so that you can extract as much of the coconut milk as possible. This is thick coconut milk, also called the 1st milk.
- Now put the pressed coconut back into the blender, add the other cup of hot water and process again till it is as smooth as possible. This time the ground coconut will be a bit more watery. Again put everything into a sieve and press out the coconut milk into another bowl. This is thin coconut milk and also called the 2nd milk. Discard the coconut. Keep both coconut milks separate. - Now make the batter for the Bebinca.Put the sugar and the thick coconut milk in a large bowl. Using a wooden spoon or whisk, stir them together until the sugar dissolves. Now very lightly beat the eggs and add to the coconut milk and sugar and mix well.
- Add the nutmeg and the flour and mix well, making sure there are no lumps at all and the batter is very smooth. If the batter is a bit thick use a bit of the 2nd coconut milk to thin it out. The batter should be like pancake batter in consistency. Divide the batter equally between two bowls. You might have some 2nd milk left over.

- Add some sugar and water to a saucepan over medium heat. When the sugar starts to brown, add cream, reduce heat, and whisk vigorously. Transfer to a small bowl and set aside.
- Add egg yolks and remaining sugar to a large bowl. Use a hand mixer fitted with whisks to combine. Then whisk in coconut milk. Gradually add flour, ground nutmeg, salt, and cinnamon, and mix well. Split the mixture between two bowls and add the caramel to one of the bowls and mix well to combine.
- Preheat the oven to 180°C/350°F. Ladle in some of the light colored batter to a parchment-lined baking form, making sure the bottom of the form is completely covered. Let bake for approx. 15 min. Remove from the oven, brush with butter, and add a layer of caramel batter. Turn on the broiler/grill function and let broil for approx. 15 min. Repeat this process until there’s no more batter.
- Top with butter and let cool completely before serving. Use a knife to loosen the edges of the cake and invert onto a plate. Serve with vanilla ice cream, if desired. Enjoy!
