1 prebaked 12-inch pizza crust
1 cup grated Parmesan cheese
1 cup mayonnaise
1 small red onion, chopped
3-1/2 teaspoons minced garlic
1 tablespoon dried oregano
Alfredo sauce, optional

Steps:

  • Place the crust on an ungreased 14-in. pizza pan. In a small bowl, combine the Parmesan cheese, mayonnaise, onion, garlic and oregano; spread over crust. Bake at 450° until edges are lightly browned, 8-10 minutes. Cut into wedges. If desired, serve with Alfredo sauce.

  • Combine first 4 ingredients. Stir in half the garlic.

1 tbsp olive oil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.
  • Spread the wedges out on a large baking sheet or two smaller ones. Toss with the oil and 1 tsp salt (preferably sea salt) and spread out so that they aren't overlapping. Roast for 30 mins, turning halfway until golden and crisp.

I am posting some freezer friendly recipes from the Company's Coming "school days lunches" cookbook for anyone who needs some great make ahead recipes for the lunch box, Enjoy! 1 tablespoon oil
1 onion, chopped
1 garlic clove, crushed
2 teaspoons paprika
1/2 teaspoon pepper
1 teaspoon oregano
3/4 cup pepperoni slice, diced
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
4 large eggs
3/4 cup parmesan cheese
1/3 cup butter, melted

Steps:

  • Cook onion in oil until soft. Add garlic, and spices and cook an additional 2 minutes.
  • Add pepperoni and cook until lightly browned. Remove from heat and cool.
  • Combine flour, baking powder, and salt in a large bowl. Make a well in the center of the mixture. Add pepperoni, and remaining ingredients and stir until just moistened.
  • Spread evenly into a 9 inch round pan.
  • Bake 20-25 minutes at 375 or until golden. Let stand for 5 minutes before removing and cutting into 8 wedges.
  • Freezes Great!
  • Other ideas:.
  • For Wedges: Spread evenly in greased 9" (22cm) round pan. Bake in 375°F (190°C)oven for about 20 minutes until golden and wooden pick inserted in center comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool. Cut into 8 wedges to serve.
  • For Muffins: Grease 8 muffin cups with cooking spray. Fill cups almost full. Bake in 350°F (175°C) oven for about 20 minutes until wooden pick inserted in center of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool.
  • For Mini-Muffins: Grease 48 (or 36) mini muffin cups with cooking spray. Fill cups evenly. If you only use 36 muffins, they will be quite full but it will still work. I only have a large pan and a half pan so I had to make 36 and it worked great. Bake in 350°F (175°C) oven for about 10 minutes or until wooden pick inserted in center of a muffin comes out clean. Let stand in pan before removing to wire rack to cool.
  • FOr a Loaf: I have never made it into a loaf but if I were to, I would bake it in a cooking spray greased loaf pan at 350°F (175°C) for about 15 minutes. And keep checking every 2-5 minutes there after until a wooden pick inserted in the center comes out clean. Let stand in the pan for 5 minutes before removing to cool on a rack. You could slice the loaf and use it instead of bread for a spicy sandwich!

1 cup warm water

  • Dissolve yeast and sugar in warm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes.

Stir in remaining flour, 1/2 cup at a time, mixing well after each addition. This recipe was submitted by Lisa Keesee and it is so simple to make with ingredients you most likely have on hand. These soft cheesy wedges would be great as an appetizer or as an addition to your next meal. For my kids, this and some carrots with ranch was their lunch and they loved it! If you love extra cheesy things and like the sweet flavor of crescents, then you'll love this recipe! UPDATED 2/15/2005 Thanks to the tips of some wonderful reviewers, I tried this a different way. 1 (15 ounce) package pillsbury refrigerated pie crusts (any brand will work, Pillsbury has 2 crusts per package)
2 tablespoons asiago cheese, fine grated (1 tablespoon per pizza crust)
2 tablespoons shallots, minced fine (1 tablespoon per pizza crust)
1 teaspoon garlic, minced (1/2 teaspoon per pizza crust)
2 teaspoons fresh thyme, minced fine (1 teaspoon per pizza crust)
1 teaspoon fresh rosemary, minced fine (1/2 teaspoon per pizza crust)
1/2 teaspoon pepper (1/4 teaspoon per pizza crust)
1/4 teaspoon red pepper flakes (more or less to taste)
2 teaspoons olive oil (1 teaspoon per pizza crust)
1/4 cup flour

Steps:

  • Pizza Crust -- Remove from the refrigerator and then let them come to more of a room temperature. Un-roll or un-wrap the crust and lay out flat. I prefer to lay mine on a cutting board lightly dusted with flour so it doesn't stick. Then I sprinkle a bit more flour over the crust and lightly roll out the crust, just to seal the seams and make sure it is nice and flat.
  • Transfer to a baking sheet lined with parchment paper or a sil pad or they can be baked on a pizza stone too. I prefer a baking sheet with parchment for easy clean up.
  • Crust -- Using a fork, poke several holes all over the crust. This will prevent it from puffing up during cooking.
  • Season -- Mix the olive oil, pepper, and red pepper flakes (more or less to taste) and brush over the pizza crust.
  • Toppings -- Top the pizza with the garlic, shallots, herbs and cheese. It is a light topping, not too heavy.
  • Cutting Slices -- I use a pizza cutter, but a sharp knife or pastry wheel will work too. I cut 8 slices, just like a pizza - that way, after it is cooked, you can easily break or pull apart the slices easily.
  • Bake -- Oven to 450 on the middle shelf, until the crust is golden brown and the cheese is melted. Ten (10 minutes or less, depending on your oven).
  • Serve -- Enjoy with anything, it is just a nice change to a loaf of bread or dinner rolls. And again -- feel free to add any of your fresh herbs and different cheeses.

This recipe for a crisp, cheesy pan pizza was developed by Charlotte Rutledge, along with her team of test cooks at King Arthur Flour's rigorous test kitchen in Vermont. It uses a number of simple techniques to achieve maximum texture and flavor. The dough is folded a few times before it goes in the fridge for a long rest, which develops its flavor and airiness. Cooking the pizza in cast iron gets the edges brown and crackling, and layering the cheese and sauce creates an extra cheesy top with no soggy layer. Make it once in its simplest form, then use the model to play around with the fermentation time and toppings.

1 3/4 cups plus 2 tablespoons/240 grams all-purpose flour
3/4 cup/180 milliliters lukewarm water
1 tablespoon olive oil
3/4 teaspoon kosher salt
1/2 teaspoon instant or active dry yeast
1 1/2 tablespoons olive oil
6 ounces mozzarella, grated (about 1 1/4 loosely packed cups)
1/2 cup/120 grams tomato sauce or pizza sauce
Freshly grated hard cheese, such as Parmesan or pecorino, for garnish (optional)
Fresh herbs, such as basil, marjoram or oregano, for garnish (optional)

Steps:

  • Prepare the dough: Measure the flour, water, olive oil, salt and yeast into a large mixing bowl. Mix together with your hand or a dough scraper until it forms a shaggy, sticky ball with no dry patches. Cover the bowl using a damp towel or plastic wrap, and let the dough rest for 5 minutes.
  • Wet your hand, and reach down between the side of the bowl and the dough, as though you were going to lift the dough out, but instead of lifting, stretch the bottom of the dough up, and fold it over the top. Repeat three more times, turning the bowl 90 degrees each time. Cover the bowl again for 5 minutes, then repeat the folding-and-resting process three more times. After the fourth time, cover the bowl, and let the dough rest, undisturbed, for 40 minutes, then transfer the bowl to the fridge for at least 12 hours or up to 72 hours.
  • About 3 hours before you want to eat the pizza, get ready for assembly: Pour the olive oil into a well-seasoned 9- or 10-inch cast-iron skillet, and use your fingers to coat the inside of the pan, including the sides. Transfer the dough to the pan, and turn it once to coat both sides with the oil. After coating the dough in oil, press the dough to the edges of the pan, dimpling it with your fingertips. If the dough shrinks back, cover it and let it rest for about 15 minutes, then repeat the pressing and dimpling. At this point, you should be able to smush the dough out and into the edges of the pan, but if not, give it one more 15-minute rest before trying again. Cover the dough, and let it rise for 2 hours at room temperature. It will look soft and jiggle when you gently shake the pan.
  • Place one rack at the bottom of the oven and one toward the top (about 4 to 5 inches from the top heating element), then heat the oven to 450 degrees. Sprinkle the remaining mozzarella on top, and bake on the bottom rack of the oven for 18 to 20 minutes, until the cheese is bubbling and the bottom and edges of the crust are a rich golden brown. (Use a spatula to check the bottom.) If the bottom is brown but the top still seems pale, transfer the pizza to the top rack, and bake for 2 to 4 minutes longer. On the other hand, if the top seems fine but the bottom's not browned to your liking, leave the pizza on the bottom rack for another 2 to 4 minutes.
  • Remove the pizza from the oven, and place the pan on a heatproof surface. Carefully run a table knife or spatula between the edge of the pizza and side of the pan to prevent the cheese from sticking as it cools. Let the pizza cool very briefly; as soon as you feel comfortable doing so, carefully transfer it from the pan to a cooling rack or cutting surface. If garnishing with hard cheese and herbs, add those now. Serve the pizza anywhere from medium-hot to warm, and use kitchen shears or a large pair of scissors to cut it into wedges.
